Steps:
- For the potatoes: Spiralize the potatoes into fries and soak in water in a container for 1 hour in the refrigerator.
- For the batter: Combine the flour, paprika, seasoned salt, cayenne, some salt and pepper and 1 cup water in a large pitcher and pour into a large resealable plastic bag.
- Drain the fries and pat dry. Put them in the bag with the batter and massage to make sure they are coated thoroughly with it. Set aside for 30 minutes so the fries can absorb all the flavors.
- Heat about 3 inches of oil in a heavy-bottomed pot over medium heat to 365 degrees F.
- Cook the fries in batches until golden and crispy, about 2 minutes per batch. Drain on a paper towel-lined plate, sprinkle with salt and serve immediately.
OVEN-BAKED CURLY FRIES
These oven fries crisp up without the greasy mess of deep-frying. Plus they're a bit easier and faster to make than traditional hand-cut fries thanks to the quick work of the spiralizer. Just watch the thickness: cut too thin, the fries will burn easily.

- Clean potatoes and peel, if desired. Using a medium spiralizer blade, spiralize the potatoes. Cut the spirals into 3-inch lengths. Place in a bowl of cool water and let soak for 20 minutes.
- Preheat oven to 425 degrees F. Line 2 rimmed baking sheets with parchment paper.
- Drain the potatoes and pat dry. Place the potatoes back in the dried-out bowl and add oil, garlic powder, smoked paprika, onion powder, pepper and salt; toss until the potatoes are well coated.
- Divide the potatoes between the baking sheets, spreading into as single a layer as possible. Place both pans in the oven and bake for 20 minutes. Stir the fries and remove any that are golden and crisp. Continue baking the remaining fries, stirring and removing any fries that are done every 5 minutes, until all the fries are crisp, 10 to 15 minutes longer. Baking time will depend on the thickness of your spiralized potatoes.

- Fill a large, high-walled skillet with canola oil to a depth of about ½ inch. Heat over medium-high heat until the oil temperature reaches 300°F (150°C).
- Peel the potato and cut into ½-inch (1-cm) batons. Dry the potato thoroughly with paper towels.
- Working in batches to avoid overcrowding the pan, par-fry the fries in the hot oil for about 5 minutes, or until lightly browned and tender. Use a slotted spoon to transfer the fries to a paper-towel lined baking sheet to drain. Season with salt.
- Increase the oil temperature to 375°F (190˚C).

- Cut the potatoes into wedges. In a large bowl, combine the potatoes, olive oil, salt, garlic powder, and paprika until each fry is fully coated.

- Slice chicken breast into strips.
- Add the curry powder, oil, pepper, and salt to the prepared chicken. Rub in the dry ingredients and make sure the chicken is evenly coated.
