Cucumbers and Onions in Vinegar image

Cucumbers and onions in vinegar is a combination of crispy cucumbers and onions in a tangy yet slightly sweet vinegar. It's a classic summer side dish that can be made in minutes.

3 medium cucumbers
1 medium onion
1 tablespoon sea salt
1 tablespoon coconut sugar
1/2 cup apple cider vinegar or white wine vinegar
2 tablespoons fresh chopped dill
pepper to taste

Steps:

  • With a sharp knife or mandolin, slice the cucumbers and onions very thin
  • Place the onions and cucumbers into a bowl; sprinkle with sea salt and sugar and mix well.
  • Set the mixture aside for at least one hour to allow the cucumbers to release water
  • Add the vinegar and dill; stir - adjust the salad with salt, pepper and sugar and water to taste

Wonderful snack for anyone who likes vinegar, onions and garlic! This recipe is only for one cucumber, adjust quantity as desired.

white vinegar
1 cucumber, sliced
water
1 small sliced onion
1 -2 diced garlic clove

Steps:

  • Put cucumbers, garlic, and onion in a bowl.
  • Pour in vinegar and water until covering cucumbers, at a 3-1 ratio between vinegar and water.
  • (3parts vinegar for every part water).
  • Allow to marinate overnight before serving.

My mom always had a bowl of this in the fridge during the summer, and now I do too! My mom sliced her cucumbers and onions in cold salt water for a few hours first, but I usually do not. I do not notice difference when they are not soaked. Instead of peeling the cucumbers completely, I leave a few stripes of green to add color to the salad. Note: Cooking time includes time to chill salad before serving.

2 -3 medium cucumbers, sliced very thin
1 medium onion, cut in half and thinly sliced
1/3 cup vegetable oil
1/3 cup vinegar
1/2 cup sugar

Steps:

  • Combine oil, vinegar, and sugar in a medium to large bowl (big enough to hold all completed salad). Stir until sugar is dissolved (Note: You can heat the dressing to help keep it from separating. It is not necessary, but I do if I have time. If you heat the dressing, be sure to cool it before adding to cucumbers).
  • Add cucumbers and onions to dressing. Toss to coat veggies.
  • Cover and chill at least 2 hours before serving. The longer it chills, the better it gets!

1 cup sugar
1 cup white vinegar
1 cup water
4 cucumbers, peeled and sliced
1 medium red onion, sliced

Steps:

  • In a large bowl mix first 3 ingredients.
  • Peel and slice cucumbers and onion and add to vinegar/water/sugar mix.
  • Cover and refrigerate for 1 hour before serving.
  • If all the cucumbers and onions are eaten reserve the vinegar/water/sugar mix and add fresh cucumbers and onion.
  • My servings are an estimate, as I can eat the whole bowl myself :) The cooking time is actually the refrigeration time.
