CALIFORNIA PIZZA KITCHEN BBQ CHICKEN PIZZA

You can make this special barbecue chicken pizza at home, our copycat recipe is no secret.

8 ounces boneless and skinless chicken breasts
1 tablespoon olive oil
2 tablespoons barbecue sauce
16 ounces pizza dough
2 tablespoons semolina (or cornmeal)
½ cup barbecue sauce
2 tablespoons Gouda cheese (shredded)
2 cups mozzarella cheese ( shredded )
¼ cup red onion (sliced)
2 tablespoons chopped fresh cilantro

Steps:

  • In a large frying pan, cook the chicken in olive oil over medium-high heat until just cooked, 5 to 6 minutes. Do not overcook.
  • Set cooked chicken aside in the refrigerator until chilled through.
  • Once chilled, coat the chicken with two tablespoons BBQ sauce. Place it back in the refrigerator.
  • Place a pizza stone in the center of the oven and preheat to 500 degrees for one hour before cooking pizzas.
  • Sprinkle semolina on a work surface.
  • Place half of the pizza dough on the semolina and roll out the dough.
  • Use a large spoon to spread ¼ cup BBQ sauce evenly over the surface of the prepared dough within the rim.
  • Sprinkle 1 tablespoon Gouda cheese over the sauce.
  • Cover with ¾ cup shredded mozzarella.
  • Distribute half the chicken pieces evenly over the cheese (approximately 18 pieces).
  • Place approximately 18 to 20 pieces of red onion over the surface.
  • Sprinkle an additional ¼ cup mozzarella over the top of the pizza.
  • Transfer the pizza to the oven and bake until the crust is crisp and golden and the cheese in the center is bubbly, about 8 to 10 minutes.
  • When the pizza is cooked, carefully remove it from the oven and sprinkle 1 tablespoon cilantro over the hot pizza. Slice and serve.
  • Repeat with the remaining ingredients for a second pizza. The two pizzas may be prepared simultaneously if you are careful in placing the pizzas at opposite corners of your pizza stone.

This pizza is easy to replicate at home. Using ready made dough, store bought barbecue sauce and rotisserie or leftover cooked chicken, it comes together in no time.

1 lb pizza dough
8 ounces cooked chicken, chopped
1/3 cup barbecue sauce, divided
1/2 cup smoked gouda cheese, shredded
3/4 cup mozzarella cheese, shredded
1/2 small red onion, thinly sliced
2 tablespoons fresh cilantro, chopped

Steps:

  • Position an oven rack in the lowest position and place a pizza stone on it. Preheat the oven to its highest setting, 500°F or higher, for 30 minutes to 1 hour.
  • While the oven is preheating, allow the dough to come to room temperature on the counter. Toss the chicken with 2 tablespoons of the barbecue sauce and set aside.
  • Cut a piece of parchment to fit your pizza stone and place the dough on it. Use your fingers to gently press and stretch the dough into a large circle. Spread with the remaining barbecue sauce, then scatter the chicken on top. Sprinkle the pizza with the Gouda and mozzarella cheese, then top with the onion.
  • Carefully transfer the parchment with pizza onto the pizza stone. Bake for 10 to 12 minutes, until crust is browned and cheese is bubbly. Sprinkle the cilantro on top just before serving.

10 ounces boneless skinless chicken breasts, cubes
2 tablespoons low-calorie barbecue sauce (I used Walden Farms Calorie Free BBQ Sauce)
1 lb pizza dough (double par baked recipe of Marsha's Whole Wheat Pizza worked for me)
1/2 cup low-calorie barbecue sauce
2 cups shredded lowfat mozzarella cheese
1/4 small red onion, sliced into 1/8-inch pieces
2 tablespoons chopped fresh cilantro

Steps:

  • Pre heat broiler and spray a cookie sheet with PAM and scatter chicken cubes on the greased sheet and broil until cooked fully. Place chicken in fridge until chilled then toss in 2 tbs BBQ sauce.
  • To make the pizzas place a pizza stone in the center of the oven and preheat to 500 degrees F for one hour before cooking pizzas.
  • spoon 1/4 cup low cal BBQ sauce evenly over each prepared dough.
  • Sprinkle the dough with 3/4 cup shredded Mozzarella. Distribute half the chicken pieces evenly over the cheese (approximately 18 pieces). Place approximately 18 to 20 pieces of red onion over the surface. Sprinkle an additional 1/4 cup Mozzarella over the top of the pizza.

I love making copycat restaurant recipes in my home, including this California Pizza Kitchen BBQ Chicken Pizza. It tastes just like the restaurant!

1 teaspoon active dry yeast
1 ½ cups warm water
4 cups flour
1 teaspoon salt
⅓ cup olive oil
4 boneless skinless chicken breasts (cooked and cubed)
20 ounces barbecue sauce
olive oil (for drizzling)
salt (to taste)
16 ounces mozzarella cheese (sliced)
½ red onion (thinly sliced)
½ cup cilantro (chopped)

Steps:

  • Sprinkle yeast over warm water in a small bowl and let stand for 5 minutes
  • In a mixer, combine flour and salt.
  • Drizzle olive oil into the mixer and mix until combined.
  • Pour in yeast/water mixture after it has proofed and mix until dough is formed.
  • Coat a large mixing bowl with olive oil and form dough into a ball and place inside. Cover bowl tightly with plastic wrap and set aside for 1-2 hours or in the fridge for 2+ hours.
  • Preheat oven to 500 degrees F.
  • Drizzle and spread olive oil over two baking sheets.
  • Split dough in half and roll out onto each pan.
  • Lightly brush a little olive oil onto each crust and sprinkle with salt.
  • Spread 1/4 cup bbq sauce on each crust.
  • Combine cooked chicken with remaining bbq sauce until chicken is coated in sauce.
  • Top pizzas with mozzarella, chicken and sliced onion.
  • Bake for 12-15 minutes, or until crust is golden brown and cheese is melted.
  • Remove from the oven and garnish with cilantro.
  • Cut into squares and serve.
