2 packages (12 ounces each) Hawaiian sweet rolls
1-1/4 pounds thinly sliced deli ham
9 slices Swiss cheese (about 6 ounces)
24 dill pickle slices
TOPPING:
1/2 cup butter, cubed
2 tablespoons finely chopped onion
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 350°. Without separating rolls, cut each package of rolls in half horizontally; arrange bottom halves in a greased 13x9-in. baking pan. Layer with ham, cheese and pickles; replace top halves of rolls. , In a microwave, melt butter; stir in onion and mustard. Drizzle over rolls. Bake, covered, 10 minutes. Uncover; bake until golden brown and heated through, 5-10 minutes longer.

These Cuban Sliders are a fun appetizer version of the classic Cuban sandwich!

Number Of Ingredients 10

12 count package Hawaiian rolls
3 Tbsp Dijon mustard
2 tsp Worcestershire sauce
1/2 - 1 lb sliced deli ham (depending on how much ham you want to use)
1 lb pulled pork
12 slices Swiss cheese
1 small jar dill pickle slices (or dill pickle chips)
1/2 cup melted unsalted butter (divided)
1 Tbsp minced garlic
2 Tbsp everything bagel seasoning

Steps:

  • Preheat oven to 400°F and lightly grease a 9x13" baking pan. Set aside.
  • Add package of rolls to your cutting board and using a serrated knife (like a bread knife), carefully slice across the rolls, horizontally, keeping one hand on top of the rolls to steady them.
  • Once sliced, keep the rolls connected to each other and lift the entire top section off of the bottom section. Add the bottom section of the rolls to the prepared baking pan.
  • In a small mixing bowl, combine mustard, Worcestershire sauce, and 3 Tbsp of the melted butter. Spread half of the mustard mixture over the bottom half of the rolls in the baking pan.
  • Add ham slices on top of the mustard, then add the pulled pork on top of the ham. Top that with the cheese slices and pickles.
  • Spread remaining mustard mixture over the cut side of the top half of the rolls, then add top half of rolls, cut side down, on top of the pickles.
  • In another small mixing bowl, add remaining 5 Tbsp melted butter and minced garlic. Brush mixture over the top of the rolls. Sprinkle with everything seasoning.
  • Cover loosely with foil and bake in preheated oven for 20 minutes. Uncover and bake another 5 minutes, or until hot and golden.

I can never find Cubano Bread like you get in Miami with the famous Cuban Sandwich. It's virtually impossible to find outside of Southern Florida. You have not lived until you've had one of those babies! I have included three methods below- Manual, Mixer, and Bread Machine methods. Number Of Ingredients 6

4 cups unbleached all-purpose flour (17 ounces)
4 teaspoons sugar
2 teaspoons salt
2 1/4 teaspoons yeast (instant or active dry)
4 tablespoons butter (can substitute 3 tablespoons fresh lard, cut into small pieces)
1 1/4 cups water

Steps:

  • MANUAL METHOD: In a large bowl, combine all of the ingredients and stir till the dough starts to leave the sides of the bowl. Transfer the dough to a lightly greased surface, oil your hands, and knead it for 6 to 8 minutes, or until it begins to become smooth and supple. Transfer the dough to a lightly greased bowl or dough-rising bucket, cover the bowl or bucket, and allow the dough to rise till puffy though not necessarily doubled in bulk, about 1 hour, depending on the warmth of your kitchen. Gently fold the dough in upon itself and turn it upside-down after 30 minutes; this "turn" helps eliminate some of the excess carbon dioxide and redistributes the yeast's food, both imperative for optimum yeast growth.
  • MIXER METHOD: Combine the ingredients as directed at left, using a flat beater paddle or beaters, then switch to the dough hook(s) and knead for 5 to 8 minutes. Transfer the dough to a lightly greased bowl or dough-rising bucket, cover the bowl or bucket, and allow the dough to rise, with a turn, as directed above.
  • BREAD MACHINE METHOD: Place all of the ingredients into the pan of your machine, program the machine for Manual or Dough, and press Start. Examine the dough about 10 minutes before the end of the final kneading cycle, and adjust its consistency with additional water or flour as needed, to produce a smooth, supple dough. Allow the machine to complete its cycle.
  • Divide the dough into six pieces, and shape each piece into a rough log. Let the logs rest for 15 minutes, covered, then shape each piece into a smooth batard shape (a log about 8 inches long, slightly tapered at each end). Place the loaves on a parchment-lined or lightly greased baking sheet.
  • Let the loaves rise, covered, for 1 hour. Brush or spray them with water, and slash one long lengthwise slit down the middle of each loaf. Preheat the oven to 375°F while the loaves are rising. Bake the bread for about 30 minutes, or until it's golden brown. Remove it from the oven, and cool it on a rack. The loaves may be made one day in advance and stored at room temperature, or several weeks in advance and frozen. Yield: 6 sandwich loaves.

2 (12 count) packages Hawaiian bread rolls (such as King's®)
½ cup butter, melted
2 tablespoons Dijon mustard
Worcestershire sauce
1 tablespoon onion powder
1 tablespoon poppy seeds
1 pound cooked pulled pork without sauce
24 slices honey-cured deli ham
½ pound sliced Swiss cheese, or more as needed
48 dill pickle chips, patted dry

Steps:

  • Grease bottom and sides of a 9x13-inch baking dish or disposable aluminum pan.
  • Cut Hawaiian rolls in half. Arrange 24 bottom halves in the baking dish.
  • Mix melted butter, Dijon mustard, Worcestershire sauce, onion powder, and poppy seeds together in a bowl. Brush 1/2 half the butter mixture over the bottom halves in the baking dish.
  • Layer pulled pork, ham, Swiss cheese, and 2 pickle chips to each roll, in this order, and cover with tops of rolls. Brush remaining butter mixture over the tops. Cover with aluminum foil and refrigerate for 20 to 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake sliders in the preheated oven, covered, for 20 minutes. Remove foil and press down the tops of the sliders with a spatula to flatten. Bake until sliders are heated through and top is crispy, about 15 minutes more.

CUBAN STYLE FRESH HAM

Number Of Ingredients 7

1 cup sour orange juice (or 4 ounces orange juice and 2 ounces each lemon and lime juices)
1 head garlic, peeled and crushed
1 tablespoon dried oregano
2 teaspoons ground cumin
1 tablespoon salt
1/2 cup water
1 (10 to 12-pound) fresh ham

Steps:

  • Mix together the juice, garlic, oregano, cumin, salt, and water. Put the ham into a large bowl or leak-proof plastic bag and pour over the marinade. Let soak in the refrigerator overnight. (Or let the marinade steep for 1 hour, strain it, and inject it directly into the ham using a marinade injector; wrap and refrigerate the ham overnight. Use any leftover marinade for basting.)
  • Preheat the oven to 325 degrees F.
  • Remove the ham from the marinade, reserving the marinade, and pat dry. Strain the marinade into a saucepan and bring it to a boil. Put the ham fat side up into a roasting pan and cook it for about 25 minutes per pound or until the internal temperature registers 155 degrees F on an instant-read thermometer. Baste the ham with the marinade every 20 minutes or so. Remove the ham, cover it with foil, and let it rest for about 15 minutes. The temperature will continue to rise to 160 degrees F. Slice and serve.

2 dill pickles, cut into strips lengthwise - divided

Steps:

  • Combine mayonnaise, sour cream, cilantro, green onions, ground chipotle peppers, lime juice, garlic basil spread, cumin, salt, and black pepper in a small bowl. Stir until combined. Cover and refrigerate for at least 1 hour.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Heat olive oil in large skillet over medium-high heat. Stir onions, red pepper flakes, and oregano in the hot oil until onions begin to soften, about 5 minutes. Season with salt and ground black pepper to taste. Add half the jalapeno pepper rings and cook until they begin to soften, 2 to 3 minutes. Reserve remaining jalapeno rings.
  • Spread each ciabatta roll with 1 tablespoon sweet hot mustard and 2 tablespoons chipotle mayonnaise. Evenly divide the Swiss cheese slices, slices of pork loin, ham, dill pickles, and remaining jalapeno rings among the four sandwiches. Top with cooked onion mixture.
  • Place sandwiches onto a baking sheet and bake in the preheated oven until cheese is melted and bread is toasted and warm, 4 to 5 minutes.

This is one of the easiest appetizer recipes EVER, yet so tasty I am asked to make them over and over! The filling can be made a day ahead, which is really helpful during the busy holiday season. They are fine served room temperature or warm, are great for breakfast the next day, or with a salad for lunch or brunch!

1 ham steak, diced
1 green pepper, finely diced
1 red pepper, finely diced
1 small onion, finely diced
2 teaspoons garlic, minced
2 tablespoons oil
3 (12 ounce) packages crescent rolls
3/4 cup apricot jam

Steps:

  • Buy the large, thick ham steak with the bone in and dice, removing the bone and fat. Finely dice the onion & peppers.
  • Heat oil in large skillet and start to saute ham. then add onions and peppers and cook till softened. Add garlic and cook 1 more minute.
  • Let filling cool, then put a spoonful on the short end of each crescent, then roll to seal. Bake according to roll pkg directions.
  • Melt jam in microwave till spreadable. Brush on rolls during the last 3-4 minutes.
  • Any laftover filling can be used in scambled eggs or tossed into hot pasta.
