2 -3 lbs halibut fillets (or other white fish)
johnny's seafood seasoning, to taste
1 cup plain fine breadcrumbs
1 cup sour cream
2 cups mayonnaise
1 bunch chopped green onion
7 -8 pieces crumbled cooked bacon
1/2 teaspoon garlic powder

Steps:

  • Place filets in a baking dish and sprinkle with seafood seasoning and half of the bread crumbs.
  • Mix next 5 ingredients together and completely cover the filets with the mixture.
  • Finish by covering the topping with more breadcrumbs.
  • Bake at 350 for approximately 45 minutes or until the fish is done.

We liked this recipe so much we had the caterer use it at our wedding. All the guests raved about how it was the best halibut they had ever had. It also helps to have fresh halibut.

1/4 cup butter
1 medium onion, chopped
2 lbs fresh halibut fillets (or thawed frozen)
1 1/2 cups sour cream
1 1/2 cups mayonnaise
1 cup cracker, crushed (I use Ritz)

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter; pour into bottom of 13X9-inch baking pan.
  • Spread onion over melted butter and top with halibut fillets.
  • Mix together sour cream and mayonnaise; spread over halibut.
  • Top with cracker crumbs.
  • Bake in oven until fish flakes and crumbs are lightly browned (about 20 minutes.).
  • *Note* If you can't get your hands on fresh halibut, I've learned to cut all the brown parts off the halibut and then soak it in about 1/2 gallon of water with 1/4 cup lemon juice for about an hour. This usually takes out the fishy taste.

¾ cup panko bread crumbs
⅓ cup chopped fresh parsley
¼ cup chopped fresh dill
¼ cup chopped fresh chives
1 tablespoon extra-virgin olive oil
1 teaspoon finely grated lemon zest
1 teaspoon sea salt
¼ teaspoon ground black pepper
4 (6 ounce) halibut fillets

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Line a baking sheet with foil.
  • Combine panko bread crumbs, parsley, dill, chives, extra-virgin olive oil, lemon zest, sea salt, and black pepper in a bowl. Taste and adjust with more salt if desired.
  • Rinse halibut fillets and pat dry with a paper towel.
  • Place halibut fillets onto the prepared baking sheet.
  • Generously spoon the herbed crumbs over the fish, and lightly press crumb mixture onto each fillet.
  • Bake in the preheated oven until crumb topping is lightly browned and fish flakes easily with a fork, 10 to 15 minutes.

2 tablespoons olive oil
2 cups yellow onions, julienned
salt
1/2 teaspoon black pepper, fresh ground
1 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1/4 cup parmigiano-reggiano cheese, shredded
1/4 teaspoon Tabasco sauce
2 lbs boneless skinless halibut fillets
1 cup panko breadcrumbs
1/2 cup unsalted butter, melted
1 tablespoon parsley, fresh

Steps:

  • Heat the oven to 375 degrees. In a medium sauté pan, heat the olive oil over medium heat. Add the onion and cook just until it's translucent, 3 to 5 minutes, stirring frequently. Season with a pinch each of salt and pepper. Set aside to cool completely.
  • In a small bowl, combine the mayonnaise, lemon juice, Worcestershire sauce, cheese and a few drops of Tabasco. Mix by hand until smooth. Season with one-fourth teaspoons salt and a pinch of pepper to taste.
  • Butter the bottom of a 12-inch by 8-inch casserole and cover evenly with the onion. Season the halibut with one-fourth teaspoons salt and a pinch of pepper and cut into 8 pieces. Place the halibut fillets on top of the onion and spread with the seasoned mayonnaise.
  • In a medium bowl, mix together the panko bread crumbs, butter and parsley, and season with one-eighth teaspoons salt and a pinch of pepper. Sprinkle the topping over the mayonnaise. Put the casserole in the oven and bake until the topping is golden and bubbles slightly, about 20 minutes. Serve immediately.
