Steps:
- Preheat oven to 350 degrees.
- Combine soup,mayonnaise,garlic and pepper in a medium bowl;mix well.
- Stir in cheese.
- Place vegetables in a 9x13 inch baking dish.
- Pour soup mixture over vegetables.
- Mix to coat vegetables well.
- Bake for 35-40 minutes.
- Remove from oven.
- Sprinkle with fried onions.
- Bake another 5 minutes.
- Serve immediately.

CHEESY VEGETABLE CASSEROLE
Steps:
- Preheat oven to 350°F.
- Cook green beans and broccoli and cauliflower until tender crisp, per package directions.
- In a medium sized bowl, mix green beans, broccoli and cauliflower, soup, garlic powder, milk, 1 ½ cups cheese, and half of the crispy onions. Pour into a casserole dish. Sprinkle remaining cheese on top.
- Bake for 30 minutes. Top with remaining crispy onions and bake an additional 10 minutes.

Steps:
- Preheat oven to 350°F.
- Grease large casserole dish.
- Combine vegetables, half the pimiento's, soup, sour cream, pepper, half of the onions and half of the cheese in a bowl.
- Mix.
- Spoon mixture into casserole dish.
- Bake for 20 minutes.
- Sprinkle remaining onions and cheese on top and bake for another five minutes or until melted.
- Remove casserole from oven and sprinkle with remaining pimiento's.
- Let stand 5 minutes before serving.

- Preheat oven to 350 degrees F, then grease a 13"x9" baking dish.
- In a large skillet, saute celery & onions in oil until tender, about 2-3 minutes, then stir in soup, sour cream, salt & pepper.
- Stir in beans, corn & water chestnuts, then transfer to prepared baking dish.
- In a bowl, combine crushed crackers, nuts & butter, then sprinkle this mixture over the vegetable mixture.

- Heat the oil in a large frying pan, and add all the vegetables. Cook over a medium heat for 5-10 minutes, until almost entirely cooked. You can use different vegetables if you like, just bear in mind that vegetables that are particularly hard (e.g. carrots or potatoes) will need parboiling before adding to the frying pan.
- In a small saucepan, melt the butter over a medium-low heat. Add the flour, and mix well to form a paste. Cook for a minute or so, stirring constantly, then add the milk a little at a time, stirring until smooth each time before adding more. Then add the vegetable stock (again, it may help to add it a little at a time). You can see more detailed instructions for how to cook a simple white sauce here.
- Add the white sauce to the cooked vegetables, and mix well. Season with black pepper, and some salt if needed (you may find the salty stock is enough). Transfer to a suitably sized baking dish (mine measured 9 x 7 inches).
- Sprinkle some grated cheese and fine breadcrumbs over the creamy vegetables, and spray lightly with oil to help the topping crisp up. Bake at 190°C (Gas Mark 5 / 375°F) for around 25 minutes, or until the vegetables are piping hot, and the topping is crisped up to your liking.
