CRUNCHY FARMHOUSE BREAD (BREADMAKER)

Crunchy Farmhouse Bread (Breadmaker) image

This is a big, beautiful, delicious loaf. Don't let the list of ingredients put you off. I also make this bread using a couple of loaf pans. They are not as pretty, but they are easier to slice for sandwiches and toast. All purpose flour is different in the U.S. than Canada. Canadian all-purpose flour has more protein than the...

Time 4h10m

Number Of Ingredients 12

1 c slightly warm water
2 tsp active dry yeast
2 Tbsp liquid honey
2 Tbsp butter, melted
1 egg
2 1/4 c all-purpose flour in canada - in usa use bread flour
3/4 c whole wheat flour
1/4 c quick cooking rolled oats (not instant)
1/4 c cornmeal
1/4 c natural bran
1/4 c millet or sesame seeds or flax seeds
1 tsp salt

Steps:

  • 1. Choose whole grain setting or the dough setting. Put ingredients in pan according to your machines' instructions. - I prefer to use the dough method and finish it in the oven because the loaf is prettier and because the amount of dough is a bit too big for my bread machine at 2-lb. setting.
  • 2. If using the dough method, when the dough is ready punch it down and turn onto a lightly floured surface. Shape into a round loaf, stretching dough all around and pinching underneath to shape. Dust top with flour; place on greased baking sheet. Cover with clean towel and let rise until doubled in bulk (45 to 60 minutes).
  • 3. Using a serrated knife slice shallow grid pattern on top of loaf. Bake in center of 350 degree F. oven for 45 minutes or until golden brown and loaf sounds hollow when tapped on bottom. (You can also check using an instant-read thermometer - 190-200 degrees.)
  • 4. Remove from pan and let cool on rack before slicing. Makes one big loaf, 24 slices.

Time 3h45m

Yield 24 serving(s)

Number Of Ingredients 13

1/2 teaspoon granulated sugar
1 cup warm water
2 teaspoons active dry yeast
2 tablespoons liquid honey
2 tablespoons butter, melted
1 egg, beaten
2 1/2 cups all-purpose flour (approx)
3/4 cup whole wheat flour
1/4 cup quick-cooking rolled oats
1/4 cup cornmeal
1/4 cup natural bran
1/4 cup millet or 1/4 cup sesame seeds
1 teaspoon salt

Steps:

  • In large bowl, dissolve sugar in warm water. Sprinkle in yeast; let stand for 10 minutes or until frothy. Whisk in honey, butter and egg. With wooden spoon, stir in 2 cups (500 mL) of the all-purpose flour, whole wheat flour, oats, cornmeal, bran, millet and salt until smooth. Gradually stir in enough of the remaining flour to form slightly sticky dough.
  • Turn out onto floured surface; knead for 8 to 10 minutes or until smooth and elastic, dusting with as much of the remaining flour as necessary to prevent sticking. Place in greased bowl, turning to grease all over. Cover with plastic wrap; let rise in warm draft-free place until doubled in bulk, 1-1/2 hours.
  • Punch down dough; turn out onto lightly floured surface. Knead into round loaf, stretching dough down all around and pinching underneath to shape. Dust top with flour; place on greased baking sheet. Cover with clean towel; let rise until doubled in bulk, 45 to 60 minutes.
  • Using serrated knife, slash shallow grid pattern on top of loaf. Bake in centre of 375°F (190°C) oven for 45 minutes or until golden brown and loaf sounds hollow when tapped on bottom. Remove from pan; let cool on rack.
  • Additional Information.
  • Bread Machine Crunchy Farmhouse Bread: Choose whole grain setting; let baked loaf cool on rack.
  • Bread Machine Fill-Up.
  • The order of ingredients going into the bread machine differs from the handmade method. Generally, the machine should be filled as follows, unless, of course, the manufacturer's instructions say otherwise.
  • Into pan of 2-lb (1 kg) bread machine, add (in order) wet ingredients such as water, milk, buttermilk, oil, butter, egg, yogurt, honey and syrup. Then add any sugar and salt. Next add dry ingredients such as flour, bran, oats, seeds, cornmeal and millet. Sprinkle yeast over top, without letting yeast touch liquid. Choose appropriate setting.

SIMPLE CRUSTY BREAD

Simple Crusty Bread image

We thought we'd landed upon the simplest yeast bread recipe in 2007, when Mark Bittman wrote about the no-knead approach of Jim Lahey, owner of Sullivan Street Bakery. It quickly became (and remains) one of our most popular recipes because it made bakery-quality bread a real possibility for home cooks. But then we heard about Jeff Hertzberg, a physician from Minneapolis, who devised a streamlined technique for a crusty loaf of bread. Mix flour, salt, yeast and water. Let it sit a bit, refrigerate it, take some out and let it rise, then bake it. The crusty, full-flavored loaf that results may be the world's easiest yeast bread.

Categories     breads, side dish

Time 3h45m

Yield 4 loaves

Number Of Ingredients 4

1 1/2 tablespoons yeast
1 1/2 tablespoons kosher salt
6 1/2 cups unbleached, all-purpose flour, more for dusting dough
Cornmeal

Steps:

  • In a large bowl or plastic container, mix yeast and salt into 3 cups lukewarm water (about 100 degrees). Stir in flour, mixing until there are no dry patches. Dough will be quite loose. Cover, but not with an airtight lid. Let dough rise at room temperature 2 hours (or up to 5 hours).
  • Bake at this point or refrigerate, covered, for as long as two weeks. When ready to bake, sprinkle a little flour on dough and cut off a grapefruit-size piece with serrated knife. Turn dough in hands to lightly stretch surface, creating a rounded top and a lumpy bottom. Put dough on pizza peel sprinkled with cornmeal; let rest 40 minutes. Repeat with remaining dough or refrigerate it.
  • Place broiler pan on bottom of oven. Place baking stone on middle rack and turn oven to 450 degrees; heat stone at that temperature for 20 minutes.
  • Dust dough with flour, slash top with serrated or very sharp knife three times. Slide onto stone. Pour one cup hot water into broiler pan and shut oven quickly to trap steam. Bake until well browned, about 30 minutes. Cool completely.
