3/4 cup coarsely crushed pretzels
1/4 cup raisins
2 tablespoons pine nuts, toasted
1-1/3 cups semisweet chocolate chips
1/2 teaspoon instant coffee granules
1/4 teaspoon ground cinnamon
1/4 cup sour cream
Coarse sea salt

Steps:

  • Place pretzels, raisins and pine nuts in a bowl. In a microwave, melt chocolate chips; stir until smooth. Stir in coffee granules, cinnamon and sour cream. To rewarm, microwave in additional 5- to 10-second intervals. Add to pretzel mixture; toss until combined., Drop mixture by heaping tablespoonfuls onto a waxed paper-lined baking sheet. Sprinkle with salt., Refrigerate until set, about 10 minutes. Store in an airtight container in the refrigerator.

4 tablespoons butter, cut into pieces
1 bag (10 ounces) mini marshmallows
8 ounces semisweet chocolate, finely chopped
6 cups rice cereal
3/4 cup peanut-butter chips

Steps:

  • In a large, deep saucepan, melt butter over low heat, about 4 minutes. Add mini marshmallows and cook, stirring, until melted, 6 to 8 minutes.
  • Add chocolate and cook, stirring, until melted, 2 to 4 minutes. Remove from heat. Quickly fold in rice cereal and peanut-butter chips until evenly distributed.
  • Coat a 1/4-cup dry measuring cup with nonstick cooking spray; scoop mixture onto waxed paper, forming clusters. Let set, about 10 minutes.

100g butter , roughly chopped
300g dark chocolate (such as Bournville), broken into squares
3 tbsp golden syrup
140g rich tea biscuit , roughly crushed
12 pink marshmallows , quartered (use scissors)
2 x 55g bars Turkish delight , halved and sliced (or use Maltesers, Milky Way or Crunchie bars)

Steps:

  • Gently melt the butter, chocolate and syrup in a pan over a low heat, stirring frequently until smooth, then cool for about 10 mins.
  • Stir the biscuits and sweets into the pan until well mixed, then pour into a 17cm square tin lined with foil and spread the mixture to roughly level it. Chill until hard, then cut into fingers.

80 g chopped butter
2 tablespoons golden syrup
1/2 cup milk chocolate melts
1/2 cup white chocolate, buttons
1/2 cup sliced almonds, toasted lightly
1 1/2-2 cups corn flakes
1/2 cup shredded coconut
coconut, for decorating top

Steps:

  • Melt butter and golden syrup and choc in the microwave and stir then gently mix in cornflakes, coconut and almonds.
  • Press into slice tray and refrigerate until set and cut. Important the mix shouldn't be too dry, but still a bit wet. Otherwise will crumble when cut. Can add more chocolate to get consistency right if necessary or slowly slowly add the cornflakes aiming for amounts above.

Nif's Crunchy Chocolate Treat image

Yummy! This is an easy and delicious treat that everyone seems to like, even me and I don't have a sweet tooth. It's been a big hit at baby or bridal showers. I like sunflower seeds on top because I like the salty with the sweet but you can use any kind of nuts if you prefer. (I've even had this with graham wafers instead of the crackers, but I thought it was waaay to sweet.) I didn't include the cooling time in the preparation time. 12 wheat thins crackers, I only use Stoned Wheat Thins (amount varies, depending on how big your cookie sheet is)
1 cup butter
1 cup brown sugar
2 cups semi-sweet chocolate chips
2/3 cup sunflower seeds, roasted and salted

Steps:

  • Preheat oven to 400°F Line a cookie sheet with tin foil (I use the nonstick kind). Arrange Stoned Wheat Thins to cover entire bottom of tray.
  • Heat butter and brown sugar in small pot on medium heat. Bring just to a boil, stirring often. Pour evenly over crackers. Bake for 5 minutes immediately after adding hot butter mixture.
  • Once removed from oven, immediately sprinkle chocolate chips on top. Wait a couple of minutes and spread melted chocolate over baked crackers. Sprinkle sunflower seeds over chocolate right away so they will stick.
  • Let cool and put tray in fridge. After about an hour or two (when solid), break into "chunks" and serve.
  • Store in fridge.

1 cup rolled oats
2/3 cup all-purpose flour
2/3 cup sugar
1/3 cup cocoa powder, sifted
1 teaspoon baking powder
1 pinch salt
2 egg whites
1/3 cup corn syrup
1 teaspoon vanilla
1 cup Rice Krispies

Steps:

  • In a big bowl, mix rolled oats, flour, sugar, cocoa, baking powder and salt. Stir well.
  • In a small bowl, whisk together the egg whites, corn syrup and vanilla.
  • Add the mixture of egg whites to the mixture in the big bowl and mix. The dough should be very dense. Incorporate the rice crispies.
  • Let drop the dough to the spoon on a non-stick baking sheet (or you can put some oil on the baking sheet).
  • Cook in a preheated oven of 350 F for 9 to 11 minutes.
