CRUNCHY CELERY CASSEROLE
"I first sampled this tempting treatment for celery when a friend brought it to a 4-H covered dish dinner," recalls Michelle Garretson of Newcomerstown, Ohio. "We could not believe how good it tastes or how easy it is to prepare in the microwave."

- In a bowl, combine the celery, soup and water chestnuts. Pour into a greased microwave-safe 8-in. square dish. Cover and microwave on high for 20 minutes or until the celery is tender, stirring every 5 minutes. Sprinkle with onions. Microwave, uncovered, 3-1/2 minutes longer.

- 1. In a bowl combine the celery, soup and water chestnuts.
- 2. Pour into a greased microwave safe dish.
- 3. Cover and microwave on high for 27 minutes, or until celery is tender, stirring every 5 minutes.
- 4. Sprinkle with onions.
- 5. This is also good when some cream cheese, soy sauce and some bacon is added in.

- In a large bowl, combine the soup, mayonnaise, sour cream, onion, lemon juice, salt and pepper. Stir in the turkey, rice, celery, water chestnuts and almonds. , Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 25 minutes. Combine topping ingredients; sprinkle over turkey mixture. Return to oven; bake until bubbly and golden brown, another 10-15 minutes.

- Preheat oven to 350°. In a large skillet, heat 1/4 cup butter over medium heat. Add celery and onion; cook and stir until tender, 4-5 minutes. Stir in spinach and soup., Transfer to a 1-1/2-qt. round baking dish. In a small saucepan, melt remaining butter over medium heat. Stir in bread cubes. Sprinkle over top.
