There are very few dishes that taste equally as good, if not better, on the second day as they do on the first. Lasagna is one of them. It takes a bit of effort to make, but with your help we've created a great recipe for this layered dish. In my first question to you about this recipe, I asked what direction we were going for the noodles. When 64% of you said you wanted to use OG (dried) lasagna noodles, I knew we were in for a classic version. Make no mistake, this is a meat lasagna, because 84% of you wanted to push the veggies aside. Which brings me to the cheese: This lasagna is loaded with so much of it, I expect to see plenty of cheese pulls on social media (tag me)! Mozzarella and ricotta were the top picks, so we piled them on - along with a dusting of Parmesan. Once you bake your lasagna, try this tip: Use the tines of a fork to perforate the cheesy top into squares so you don't drag your cheese along with the knife when you're serving it. 2 tablespoons extra-virgin olive oil, plus more for the dish
1 onion, chopped
3 cloves garlic, chopped
2 teaspoons dried oregano
Kosher salt and freshly ground pepper
1 pound ground beef
8 ounces sweet Italian sausage, casings removed if links
1/4 cup tomato paste
1/4 cup dry vermouth or white wine
1 28-ounce can crushed tomatoes
Pinch of sugar, as needed
Kosher salt
12 lasagna noodles (about 10 ounces; not oven-ready or no-boil)
2 large eggs
1 32-ounce container whole-milk ricotta cheese
2/3 cup plus 1/4 cup grated Parmesan cheese
1/4 cup finely chopped fresh parsley
Freshly ground pepper
2 8-ounce bags shredded mozzarella cheese (about 4 cups)

Steps:

  • Preheat the oven to 400˚ F. Rub the bottom and sides of a deep 9-by-13-inch baking dish (about 5 quarts) with olive oil. Set aside.
  • Make the sauce: Heat the olive oil in a large pot over medium-high heat. Add the onion, garlic, 1 teaspoon oregano and a pinch each of salt and pepper. Cook, stirring, until golden, 4 to 5 minutes. Add the beef and sausage and cook, breaking up the meat into crumbles with a spoon, until no longer pink, about 5 minutes. Stir in the tomato paste and cook until everything is well coated and the tomato paste is a shade darker, about 2 minutes. Add the vermouth and cook, scraping up any browned bits from the bottom of the pot, until almost dry. Add the crushed tomatoes, 1 1/2 cups water, the remaining 1 teaspoon oregano, 1 teaspoon salt and a generous amount of pepper. Bring to a simmer, reduce the heat to low and simmer gently until the sauce reduces slightly, 20 to 25 minutes. Season with salt and pepper; add a pinch of sugar if the tomatoes taste sharp.
  • Meanwhile, cook the noodles: Bring a large pot of salted water to a boil. Add the noodles and cook, stirring, until just al dente and pliable, about 6 minutes. Transfer to a colander; run cool water over the noodles and separate them.
  • Make the filling: Lightly beat the eggs in a medium bowl. Add the ricotta, 2/3 cup Parmesan, the parsley, 3/4 teaspoon salt and a few grinds of pepper and stir until combined.
  • Assemble the lasagna: Spread a thin layer of sauce (about 1 cup) in the bottom of the baking dish. Top with 3 noodles, laying them lengthwise. Top the noodles with one-quarter of the remaining sauce (about 2 cups). Dollop one-third of the ricotta mixture (about 1 1/2 cups) on top and spread in an even layer. Top with 3/4 cup mozzarella and 1 tablespoon Parmesan. Repeat these layers two more times (noodles, sauce, ricotta mixture, mozzarella and parmesan). For the last layer, add the remaining 3 noodles, sauce, mozzarella and Parmesan.
  • Cover the baking dish with foil, sealing the edges (do not press the foil into the cheese). Bake until the lasagna is hot and bubbly, 35 to 40 minutes. Uncover and continue baking until golden brown, 20 to 30 more minutes. Let cool at least 20 minutes before slicing.

2 1/4cups (about 6 ounces) panko bread crumbs
1 1/2c buttermilk (see note)
3 large eggs , lightly beaten
2lbs. 85 percent lean ground beef
1lbs. ground pork
6oz. thinly sliced prosciutto , chopped fine
3oz. Parmesan cheese , grated (about 1 1/2 cups)
6Tbls minced fresh parsley leaves
3 medium garlic cloves , minced or pressed through garlic press (about 1 tablespoon)
1 1/2t powdered gelatin , dissolved in 3 tablespoons cold water
Table salt and ground black pepper
Sauce
3Tbls extra-virgin olive oil
1 1/2c grated onion from 1 to 2 onions (see note)
6 medium garlic cloves , minced or pressed through garlic press (about 2 tablespoons)
1/2t red pepper flakes
1t dried oregano
6c tomato juice (bottled)
3(28-oz.) cans crushed tomatoes
6Tbls. dry white wine
Table salt and ground black pepper
3pounds spaghetti
1/2c minced fresh basil leaves
3Tbls. minced fresh parsley leaves
Granulated sugar
Parmesan cheese , grated, for serving

Steps:

  • 1. FOR THE MEATBALLS: Place wire racks in 2 foil-lined rimmed baking sheets. Adjust oven racks to lower-middle and upper-middle positions and heat oven to 450 degrees. Combine bread crumbs and buttermilk in large bowl and let sit, mashing occasionally with fork, until smooth paste forms, about 10 minutes. 2.Add eggs, beef, pork, prosciutto, Parmesan, parsley, garlic, gelatin mixture, 11/2 teaspoons salt, and 1/2 teaspoon pepper to bread-crumb mixture. Using hands, gently mix until thoroughly combined. Lightly form about ¼ cup mixture into 2-inch round meatball (about 2 ounces); repeat with remaining mixture to form approximately 40 meatballs. 3. Spray wire racks with nonstick cooking spray and place meatballs, evenly spaced, on racks; roast until browned, about 30 minutes, rotating trays from front to back and top to bottom halfway through. 4. FOR THE SAUCE: While meatballs roast, heat olive oil in large Dutch oven over medium heat until shimmering. Add onion and cook, stirring occasionally, until softened and golden around edges, 6 to 8 minutes. Add garlic, red pepper flakes, and oregano; cook, stirring frequently, until fragrant, about 30 seconds. Stir in tomato juice, crushed tomatoes, wine, 1½ teaspoons salt, and pepper to taste. Increase heat to medium-high and bring to simmer. Reduce heat to medium-low and simmer until slightly thickened, about 15 minutes. 5. Remove meatballs from oven and lower oven temperature to 300 degrees. Gently add meatballs to sauce, cover pot, and place in oven. Cook until meatballs are firm and sauce has thickened, about 1 hour. 6. Meanwhile, bring 10 quarts water to boil in 12-quart pot. Add pasta and 2 tablespoons salt to boiling water; cook until al dente. Drain pasta and return it to cooking pot. 7. TO SERVE: Stir basil and parsley into sauce and adjust seasoning with sugar, salt, and pepper. Toss pasta with 1½ cups sauce until lightly coated. Serve pasta, passing meatballs, remaining sauce.

1 tablespoon olive oil
1 pound spaghetti
1 pound extra-lean ground beef
1 teaspoon salt-free garlic and herb seasoning
Salt and pepper
2 (28-ounce) cans diced tomatoes
6-ounce can tomato paste
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
1/4 cup torn fresh basil leaves
1/4 cup grated Parmesan

Steps:

  • Heat oil in a large stock pot or Dutch oven over medium heat.
  • Cook spaghetti according to package directions. In a large bowl, combine beef and garlic and herb seasoning, 1 teaspoon each salt and pepper. Mix well and shape mixture into meatballs (about 16 meatballs). Add meatballs and cook 5 minutes, until golden brown on all sides. Add tomatoes, tomato paste, oregano, and red pepper flakes and bring to a simmer. Simmer 10 minutes, until meatballs are cooked through. Reserve 1 1/2 cups sauce for another meal. Remove from heat and stir in basil. Serve sauce over spaghetti. Top with Parmesan just before serving.

2 slices soft white bread, torn into pieces
1/2 cup milk
1 pound ground beef
8 ounces ground pork
1 egg, lightly beaten
1 teaspoon Worcestershire sauce
2 teaspoons granulated garlic
2 teaspoons granulated onion
2 tablespoons grated pecorino, plus 1/2 cup for topping
Kosher salt and ground black pepper
1/4 cup olive oil
8 ounces spaghetti
1/4 cup extra-virgin olive oil
2 cups chopped fresh tomatoes
1 cup chicken broth
1 stick (8 tablespoons) butter
1/4 cup chopped fresh basil and parsley mix, plus for garnish
1 cup grated pecorino, plus for garnish
Kosher salt and ground black pepper

Steps:

  • For the meatballs: Preheat the oven to 425 degrees F.
  • Combine the bread with the milk in a large bowl. Let soften for about 1 minute, then mash to a paste with a fork. Add the beef, pork, egg, Worcestershire, granulated garlic, granulated onion, 2 tablespoons pecorino, 2 teaspoons salt and 1/2 teaspoon pepper. Mix until well blended. Form into twelve 2-inch balls (about 1/4 cup each) and place on a plate or tray.
  • Heat the olive oil in a large skillet over medium heat. Sear the meatballs on all sides until a crust forms, about 2 minutes per side. Transfer to a baking dish.
  • Bake until cooked through, 20 to 25 minutes.
  • For the pasta and sauce: In a large pot, cook the spaghetti according to package directions. Drain and set aside.
  • To a pan over medium heat, add the olive oil, tomatoes, broth, butter, and basil and parsley. Simmer until the tomatoes are soft, 4 to 5 minutes. Add the pecorino to help thicken the sauce, and season with a pinch of salt and pepper. Stir in the cooked pasta and top with the meatballs. Garnish with some more pecorino and basil-parsley mix.
