INDIAN SLAPJACKS (A RECIPE FROM THE 1790'S)



Indian Slapjacks (a recipe from the 1790's) image

We made these last night at a 1700's recreation dinner. Its kind of like a crape made with cornmeal. The recipe was from the 1st cookbook published in America.

1 qt milk
2 c corn meal
4 Tbsp flour
4 eggs
pinch salt

Steps:

  • 1. beat ingredients together. Cook as you would a pancake - hot pan with some butter. Serve as is or with maple syurp

This is a very old recipe. It is not politically correct... I typed it here...just as written. My grandmother and great grandmother use to make this often. This is cornmeal pancakes.

4 c milk
2 c indian meal (corn meal)
4 eggs
4 Tbsp flour
1/2 tsp salt
3 Tbsp melted lard or butter

Steps:

  • 1. Beat all together until mixed. Let sit 5 minutes.
  • 2. Grease a pan and bake the slapjack. or cook on greased griddle or fry pan.
