This is great to make your own croutons for your salads, etc. When you make your own you know what goes into it and you are proud of your accomplishment. You can also add your own flavorings.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Remove crusts from stale bread slices. Brush bread on both sides with melted butter. Cut bread slices up into small cubes. Sprinkle with garlic salt (if desired). Arrange cubes on an ungreased cookie sheet.
- Bake at 350 degrees F (175 degrees C) for 15 minutes or until browned. Let cool. Store croutons in a covered container or plastic bag. Serve in soups or salads.

FOCACCIA CROUTONS
If you've never had freshly made croutons, you might not realize that a crouton doesn't have to just be a rock-hard bread brick that crumbles in your mouth. These from-scratch focaccia croutons are crunchy on the outside but still soft enough in the middle that you can actually chew them.

Steps:
- Crush garlic into a paste with a mortar and pestle.
- Mix crushed garlic, olive oil, Parmesan cheese, butter, salt, thyme, and onion powder together until relatively homogenous. Let sit for 10 minutes.
- Place bread cubes in a large bowl and spoon butter mixture on top. Toss well to make sure all the cubes are coated. Cover and let sit until bread soaks up the mixture, about 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Spread bread on a cookie sheet in a single layer.
- Bake in the preheated oven, flipping once halfway, until golden brown and firm to the touch, 8 to 10 minutes.

- Preheat oven to 300. Line a baking sheet with a silicone baking mat.
- Stir olive oil and garlic together in a bowl. Let sit at room temperature until flavors are infused, about 3 hours.
- Place bread cubes in a large bowl. Pour garlic oil through a strainer onto the bread; toss to coat bread with oil. Add 1/2 cup Parmigiano-Reggiano cheese, Italian seasoning, paprika, black pepper, salt, and cayenne pepper; toss to coat. Spread bread cubes out in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 15 minutes. Turn croutons and bake 15 minutes more. Push croutons together with a spatula so that they are in a compact rectangle on the baking sheet and no longer spread out; sprinkle remaining 1/4 cup cheese over the top. Bake until cheese is melted and the bread is crispy and crunchy, 10 to 15 minutes more.

- Use a serrated knife and cutting board to slice the bread into bite-sized pieces. Throw them in a bowl and toss with olive oil and your favorite herbs. Rosemary, thyme and black pepper are delicious. Then, lay out the pieces on a baking tray and put them in the oven for 10-15 minutes at 375 degrees Fahrenheit. When they're done, toss the pieces in a sealed container for optimal freshness. You can also freeze them for later use.
