CRAB CROSTINI WITH LEMON AND HERBS



Crab Crostini with Lemon and Herbs image

3 tablespoons creme fraiche
2 tablespoons chopped basil
2 tablespoons chopped chives
2 tablespoons chopped tarragon
2 teaspoons extra-virgin olive oil
1 teaspoon lemon zest (1 lemon)
1 teaspoon lemon juice
1/4 teaspoon kosher salt
1 cup lump crabmeat, picked through for shells
16 crostini

Steps:

  • With a rubber spatula, mix together the creme fraiche, basil, chives, tarragon, olive oil, lemon zest, lemon juice and salt in a medium bowl. Add the crabmeat and gently fold it into the herb dressing until the crab is coated and the herbs are evenly distributed. Top each crostini with a tablespoon of the crab mixture.

2 French baguettes or 2 Italian bread, cut into 1/4-inch thick slices
extra virgin olive oil
8 ounces seafood, chopped coarsely (crab or shrimp)
1 large red bell pepper, small dice
3 tablespoons mayonnaise
2 tablespoons fresh parsley, chopped
1 tablespoon fresh chives, chopped
1 tablespoon fresh lime juice or 1 tablespoon fresh squeezed lemon juice
1 tablespoon Dijon mustard
2 teaspoons parmigiano-reggiano cheese, grated
kosher salt
fresh coarse ground black pepper, to taste (optional)
4 -5 drops Tabasco sauce, more if needed (optional)
8 shrimp, cut lengthwise, garnish

Steps:

  • Toast baguette:.
  • Lightly brush each side of slice with oil.
  • Place in dry skillet over medium-high heat.
  • Cook on each side until golden brown, about 1-2 minutes.
  • Remove from heat and place on paper towel.

  • In a bowl, combine 8 oz of shrimp or crab (or a combination of both), red pepper, chives, lime or lemon juice, mayonnaise, Dijon mustard, cheese, & Tabasco (if using) and blend well.
  • Add kosher salt and black pepper.
  • Spread mixture on each slice of toasted baguette.
  • Lay a shrimp that you have cut in 2 lengthwise on each baguette and then add a small parsley leaf and serve.

1/2 cup bottled clam juice
10 ounces medium uncooked shrimp, peeled, deveined
2 cups thinly sliced green onions
2/3 cup mayonnaise
4 teaspoons fresh lemon juice
2 garlic cloves, finely chopped
1 teaspoon Hungarian sweet paprika
1/2 teaspoon cayenne pepper
8 ounces flaked crabmeat (about 2 cups lightly packed)
1/3 cup (about) olive oil
40 1/4-inch-thick diagonal slices sourdough baguette

Steps:

  • Bring clam juice to simmer in large skillet over medium heat. Add shrimp; cover and simmer until opaque, turning once, about 2 minutes. Using slotted spoon, transfer shrimp to cutting board; coarsely chop shrimp. Place shrimp in small bowl. Boil cooking liquid until reduced to 2 tablespoons, about 2 minutes. Cool.
  • Mix onions and next 5 ingredients in large bowl to blend. Stir in shrimp, cooking liquid and crabmeat. Season with salt and pepper. Cover and chill. Preheat oven to 375°F. Lightly brush oil over both sides of each bread slice. Arrange bread on baking sheet in single layer. Bake until bread is crisp and golden, about 4 minutes per side. Cool. (Seafood salad and toasts can be made 1 day ahead. Keep seafood salad chilled. Store toasts airtight at room temperature.)
  • Spread seafood salad evenly over toasts. Arrange on serving dish. Garnish with lemon wedges and serve.

6 green onions, thinly sliced
1/3 cup mayonnaise
1 tablespoon fresh lemon juice
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
4 ounces crabmeat, drained
1/2 baguette, cut diagonally into 1/3-inch-thick slices
3 tablespoons (about) olive oil

Steps:

  • Bring clam juice to boil in medium saucepan. Add shrimp; reduce heat to medium, cover and cook just until shrimp are opaque in center, about 2 minutes. Using slotted spoon, transfer shrimp to cutting board; cool. Coarsely chop shrimp.
  • Mix sliced green onions, mayonnaise, lemon juice, paprika, and cayenne in medium bowl. Mix in shrimp and crabmeat. Season with salt and pepper. (Can be prepared 6 hours ahead. Cover and chill.)
  • Preheat oven to 375°F. Brush both sides of baguette slices lightly with oil; arrange in single layer on baking sheet. Bake until bread is golden, about 10 minutes. Cool. Mound shrimp mixture atop bread. Place on platter and serve.
