SIMPLE MACARONI AND CHEESE



Simple Macaroni and Cheese image

A very quick and easy fix to a tasty side-dish. Fancy, designer mac and cheese often costs forty or fifty dollars to prepare when you have so many exotic and expensive cheeses, but they aren't always the best tasting. This recipe is cheap and tasty.

1 (8 ounce) box elbow macaroni
¼ cup butter
¼ cup all-purpose flour
½ teaspoon salt
ground black pepper to taste
2 cups milk
2 cups shredded Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
  • Fold macaroni into cheese sauce until coated.

This macaroni and cheese recipe is so yummy. It has a nice smooth texture and the mustard added really gives it a nice taste that is not your traditional recipe but it soon will be. I got this recipe over twenty years ago from my home economics teacher. It was one of our labs and I have kept it ever since so it is very worthy to share

1 cup macaroni
5 ml cooking oil
5 ml salt
30 ml margarine
30 ml flour
1 ml salt
1 cup milk
1/2 cup of grated cheddar cheese
1 ml mustard

Steps:

  • Preheat oven to 350°F.
  • Add oil and first amount of oil to water and boil macaroni.
  • Melt margarine in sauce pan.
  • Add flour and salt.
  • Add milk and cheese and mustard and heat until cheese is melted and sauce has thickened.
  • Mix macaroni and cheese sauce and put in a small greased casserole dish.
  • You may wish to add bread crumbs or dill on top.
  • Bake for 10-15 minutes.

I am always trying to find something my entire family agrees on and I think I finally did it!! This by far is my best recipe yet! I added broccoli and salad for a main dish meal we all loved!!! I hope you enjoy it as much as we did.

2 cups small shell pasta (7oz)
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dry mustard
1 3/4 cups milk
2 cups shredded cheddar cheese (8oz)
fresh breadcrumb

Steps:

  • Heat oven to 350°F.
  • Cook pasta as directed on the box.
  • While pasta is cooking, melt butter in saucepan over low heat. Stir in flour, salt, pepper, and mustard. Cook over low heat, stirring constantly, until mixture is all smooth and bubbly;remove from heat. Add milk, and put back on heat, until boiling, stirring constantly. Boil and stir approx 1 minute. Mixture will thicken. Add cheese. Cook, stirring occasionally, until cheese is melted.
  • Drain pasta. Add pasta and cheese mixture to ungreased 2 quart casserole and top with fresh breadcrumbs if desired. (I use fresh that I make).
  • Bake uncovered for 20-25 minutes or until golden brown.

Excellent "comfort" food, that everyone loves especially on a cold evening! I have also used it as a side dish with much smaller portions.

Number Of Ingredients 11

1 (20 ounce) package macaroni
3 tablespoons butter
1 small sweet onion, chopped
2 tablespoons flour
1 1/2 cups skim milk
1/2 teaspoon Aunt Jane's Krazy Mixed Up Salt
1/4 teaspoon paprika
4 ounces processed cheese, cubed (i.e.Velveeta 2%)
6 ounces extra-sharp cheddar cheese, shredded
1/2-3/4 cup seasoned bread crumbs
olive oil flavored cooking spray

Steps:

  • Prepare macaroni using package instructions.
  • Drain and set aside.
  • In a large saucepan, melt butter and saute onion.
  • Add flour, stirring constantly.
  • When mixture thickens add milk, salt, paprika and cheese.
  • Stir constantly until the sauce thickens but is smooth, resembling an extra thick cream.
  • Mix in pasta coating with cheese mixture.
  • Spray casserole dish with olive oil spray
  • ( I use a 2.5 L pyrex pan)and pour in maccaroni.
  • Cover with breadcrumbs to taste.
  • Bake at 350 Degrees for 20 minutes or until bubbling.
  • Place under broiler for a few minutes to brown bread crumbs. Be careful not to burn!
