1 1/2 pounds boneless skinless chicken thighs
2 teaspoons jarred minced garlic
14.5 oz can diced tomatoes
15 oz can white navy beans (drained and rinsed)
15 oz can dark red kidney beans (drained and rinsed)
2 teaspoons cajun seasoning blend
1 teaspoon hot sauce
2 cups chicken broth

Steps:

  • Add all ingredients to slow cooker
  • Cover and cook on low for 6-8 hours or high for 3-4
  • Serve with toasted bread or as desired

2 baking potatoes (about 1 1/2 lb), peeled, cut into chunks (3 1/3 cups)
1 box (9 oz) frozen corn, thawed
2 medium carrots, cut into chunks (1 cup)
2 stalks celery, chopped (2/3 cup)
1 medium onion, cut into 1/2-inch-thick slices
2 cloves garlic, finely chopped
1 cup Old El Paso™ Thick 'n Chunky salsa
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon freshly ground pepper
1 lb boneless skinless chicken breasts
1/2 lb boneless skinless chicken thighs
2 1/2 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
4 soft corn tortillas (6 inch), cut into strips
Chopped fresh cilantro, if desired

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. In slow cooker, mix potatoes, corn, carrots, celery, onion and garlic. Stir in salsa, cumin, chili powder and pepper. Place chicken on top of vegetable mixture. Pour broth over ingredients.
  • Cover; cook on High heat setting 4 hours.
  • Remove chicken from slow cooker to plate. Shred using 2 forks. Return chicken to slow cooker. Stir tortilla strips into stew. Garnish with cilantro.

3 skinless, boneless chicken breast halves
½ (8 ounce) jar medium salsa
¼ cup tomato sauce
2 cloves garlic, minced
1 small red onion, chopped
1 teaspoon ground cumin
1 teaspoon chili powder
1 pinch salt and fresh ground pepper to taste

Steps:

  • Arrange the chicken breasts in the bottom of a slow cooker, and pour in the salsa and tomato sauce. Add the garlic and onion, and sprinkle in the cumin, chili powder, salt, and pepper. Set the cooker on Low, and cook until the chicken is very tender, 4 to 5 hours. Shred the chicken with two forks for serving.

1 1/2 cups russet potatoes, peeled cut into bite-size pieces, and washed
1 1/2 cups carrots, peeled, cut into bite-size pieces, and washed
1/2 cup finely chopped onion
1/4 teaspoon garlic powder (to taste)
1/2 teaspoon salt (to taste)
3/4 teaspoon ground black pepper (to taste)
1/2 teaspoon sage (to taste)
1/4 teaspoon thyme (to taste)
2 boneless skinless chicken breast halves
1 (10 3/4 ounce) can cream of chicken soup

Steps:

  • Place veggies in the bottom of a 2 1/2 quart crockpot ( you know, the small one ).

3 ⅓ cups potatoes (peeled and cubed)
10 ounces sweet corn (frozen)
2 stalks celery (chopped)
2 carrots (peeled and diced)
1 onion (sliced)
2 cloves garlic (minced)
12.5 ounces salsa
2 teaspoons kosher salt
1 ½ teaspoons cumin
1 teaspoon chile powder
½ teaspoon black pepper
1 boneless chicken breast
4 boneless chicken thighs
2 ½ cups chicken broth
4 (6 inch) corn tortillas (cut into strips)

Steps:

  • Place potatoes, corn, celery, carrots, onion and garlic in slow cooker. Stir in salsa, salt, cumin, chile powder and pepper. Distribute chicken evenly on top of vegetables and pour chicken broth over chicken.
  • Place lid on slow cooker and cook on high for 4 hours.
  • Transfer chicken to a plate and shred with 2 forks into bite-sized chunks. Return to slow cooker.
  • Mix in tortilla strips into stew and serve warm.
