SHREDDED PORK AND SAUERKRAUT

This is great for serving a large crowd buffet-style on New Year's Day. The longer you cook this dish, the more flavorful the kraut will be! It can also be made in a slow cooker.

¼ cup bacon grease
2 large onions, chopped
2 (32 ounce) packages sauerkraut, drained and rinsed
2 apples - peeled, cored, and chopped
1 (16 ounce) can chicken broth
½ cup brown sugar
¾ teaspoon mustard powder
1 (3 pound) bone-in pork loin roast

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat bacon grease in a large skillet over medium heat. Add onions; cook and stir until onions are translucent, about 5 minutes.
  • Arrange sauerkraut and apples in a large roasting pan. Top with cooked onions and remaining bacon grease.
  • Mix chicken broth, brown sugar, and mustard powder together in a microwave-safe bowl. Microwave on high until sugar dissolves and broth is heated through, about 2 minutes. Stir and pour over sauerkraut mixture, mixing to combine.
  • Cut several deep slits in the top of the pork loin and place in the center of the sauerkraut mixture. Cover roasting pan with aluminum foil.
  • Roast pork in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 250 degrees F (121 degrees C). Continue roasting pork until tender and pulls apart easily, 2 to 3 hours. Remove from oven and cool until easily handled, about 15 minutes.
  • Discard pork bones, shred pork using 2 forks and return to pan with sauerkraut mixture. Stir well to combine.

1 (1 pound) whole pork tenderloin
1 (24 ounce) bag baby potatoes, unpeeled
1 (20 ounce) can sauerkraut, undrained
1 cup water
¼ cup butter, cubed
salt and ground black pepper to taste

Steps:

  • Place whole pork tenderloin into a slow cooker. Arrange potatoes around the pork; pour the sauerkraut and juice over the pork and potatoes. Add butter cubes, salt, and black pepper. Cook on Low until pork is tender, 8 to 10 hours. Add more water after 8 hours if mixture seems dry.

Surprisingly tasty and the result of a mistake that left me needing to come up with a dinner with super easy prep. Freezer to table. I grabbed my crockpot, took a pork tenderloin out of the freezer stuck it in the pot & free poured apple cider I had on hand over it. Put it on & went to work. Later in the day the meat was cooking well, but for our tastes, I knew I had to kick up the flavor. I only had a few minutes to spare. That's when I came up with the other 2 ingredients. Tossed them in & turned down the heat & went back to work. How simple is that! I don't think I spent 5 minutes altogether!

1 1/2 lbs whole frozen pork tenderloin
1 1/2 cups apple cider
1/2 teaspoon salt
1/2 teaspoon peppercorn
1/3 cup brandy
8 ounces sauerkraut

Steps:

  • Place the tenderloin in crockpot with the salt & peppercorns. Pour apple cider over. Turn to 300 degrees for 3 hours.
  • Pour in brandy, add sauerkraut, test for salt, add more to taste, reduce heat to 200 degrees for another 3 to 4 hours.
  • Remove lid if necessary to boil off extra liquid before shredding with 2 forks.
  • Serve as a main dish, with beans or mashies or on a toasted roll with melted swiss cheese. Sooo good!

1/2 teaspoon caraway seed
1/2 teaspoon black pepper
1 small baking apple, peeled, cored and diced very small (can use about 1/3 c applesauce instead)
2 lbs sauerkraut, undrained
1/4 cup packed brown sugar
4 tablespoons butter, melted
salt, if needed, to taste

Steps:

  • Place pork loin in crock pot. Sprinkle with caraway seeds and black pepper.
  • Place diced apple (or applesauce) on top of pork.
  • Pour sauerkraut and juice on top.
  • Evenly sprinkle the brown sugar on top of the sauerkraut.
  • Drizzle the top with melted butter.
  • Cook on low for about 8 hours or until pork reaches internal temp of at least 160 degrees F.
  • Stir the sauerkraut around a bit before serving.

1 tablespoon oil
2 chopped onions
6 minced garlic cloves
1 tablespoon chili powder
1/2 teaspoon black pepper
12 ounces chili sauce (1 small bottle)
1/4 cup brown sugar
1/4 cup cider vinegar
1 tablespoon Worcestershire sauce
3 lbs pork shoulder

Steps:

  • Sauté the onions in the oil until soft. Add garlic, chili powder, and pepper and cook another minute or so. Add chili sauce, brown sugar, vinegar, and Worcestershire sauce. Heat till boiling stirring constantly.
  • Put the pork shoulder in the crock-pot and pour the sauce over it. Cover and cook on low 12 hours or on high 6 hours, until pork is basically falling apart. (Longer never hurts.)
  • Shred the meat with a pair of forks and return to the pot and keep warm in the sauce. Serve over buns.

PULLED PORK (CROCK POT)

I found this pulled pork recipe years ago, and it's a favorite at potlucks. Freezes well for easy quick meals.

4 lbs pork roast (shoulder or butt)
2 large onions
1 cup ginger ale
1 (18 ounce) bottle favorite barbecue sauce (I like Sweet Baby Ray's)
barbecue sauce, for serving (optional)

Steps:

  • Slice one onion and place in crock pot.
  • Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours. See Note2 below regarding amount of time needed!
  • Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away.
  • Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW.
  • Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well.
  • TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave.
  • Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid.
  • Note 2: I have an older, smaller crock pot. The above times work perfectly for me. But if you have a newer or bigger crock pot, you may need to revise times downward, esp. after the bbq sauce is added. I think you need at least a couple of hours for it all to meld, but that may be all you need. Update: I recently bought a bigger crockpot, I think 5 or 6 qts. I cooked a 6 lb pork shoulder in it for 8 hours and it was shreddable at that point. Shredded, added the sauce, and cooked for another hour or so to meld everything. So use your best judgment on timing!
  • Note3: You might want to turn your roast over after it's cooked a while, to ensure more even cooking. I think this may depend on the size and shape of your roast and the size of your slow cooker. Remember that each time you remove the lid you lose heat and be careful, as turning a large piece of meat is awkward.
  • Note4: my sister says this takes 2 hours in the Instapot. I don't have one, up to you to figure out the steps.

2 lbs boneless smoked pork shoulder (also called "sweet morsel")
2 (14 1/2 ounce) cans sauerkraut, rinsed and drained
2 medium onions, sliced
1 (8 ounce) can tomatoes, cut up
1 bay leaf
1 tablespoon paprika
1 1/2 teaspoons caraway seeds
1/4 teaspoon pepper
1/4 cup cold water
2 tablespoons cornstarch
1/2 cup sour cream (optional)

Steps:

  • Place onion in crock pot; place pork on top.
  • combine drained sauerkraut, tomatoes (undrained), bay leaf, caraway seed, paprika, and pepper; pour over pork.
  • Cover; cook on LOW heat setting 8 hours.
  • Remove bay leaf; remove pork to platter and cover to keep warm.
  • Skim fat from surface of sauerkraut mixture.
  • Transfer sauerkraut mixture to a large saucepan.
  • Combine water and cornstarch; stir into sauerkraut mixture and heat until thickened and bubbly.
  • Stir in sour cream (optional), if desired.
  • Serve with sliced pork.
  • NOTE: this can be cooked in the oven in an oven-proof covered casserole.
  • Bake@ 350F 2- 2 1/2 hours.
