SLOW COOKER PORK AND BEEF ROAST



Slow Cooker Pork and Beef Roast image

Loved this recipe! Every bite reminds me of Sunday dinners long ago... what a wonderful feeling.

3 lb beef roast
3 lb pork roast
1 lb carrots, peeled and cut into chunks (or use baby carrots)
4 stalks celery, cut into chunks
4 potatoes, washed, cut into chunks (peel if you wish)
8 oz fresh mushrooms (I used baby bellas)
3 medium onions, peeled, cut into chunks
1 pkg onion soup mix
1 pkg brown gravy mix
1 Tbsp olive oil
3 Tbsp butter
salt
pepper

Steps:

  • 1. Melt butter in the olive oil in a frying pan over medium to medium-high heat. Cut your roasts in half so you have four chunks of meat. Salt and pepper each chunk as you wish. When the frying pan is hot, brown the meat on all sides. Set aside.
  • 2. Put your prepared vegetables in your slow cooker. Lay the browned meat on top. You DO NOT need to add water, as the meat and the vegetables create their own wonderful juice. I used a 6-quart cooker, and it was quite full. If you have a smaller one, adjust your ingredients so it all fits. Cook on high for 4-6 hours. If you are going to be gone much longer, you may want to use a lower setting--use what works for your slow cooker.
  • 3. When done to your liking, remove the meat and vegetables to a platter or bowl. Put the onion soup mix and brown gravy mix in a medium saucepan. Whisk in the juices from the slow cooker, and warm on medium heat, stirring occasionally, until it comes to a boil. Lower to a simmer and cook, stirring constantly, for at least one minute. Depending how soon you plan to eat, you may want to cook the juices a bit longer in order to hydrate the onions from the onion soup mix. If you aren't eating right away, they will hydrate when you put them back in the slow cooker. Return your meat and veggies to the slow cooker and pour the gravy over it.
  • 4. You have a wonderful-smelling and wonderful-tasting meal ready for your enjoyment!

Created for my crock pot and very easy to make! Indonesian food is very much part of the Dutch cuisine and food culture and goes back to colonial days, it is very popular in The Netherlands. This is good when just made but even better the day after or after freezing. Add as many chilies or sambal to bring it up to your own desired spiciness. If you cannot get lime leaves sub with some lime zest, it's not the same but it's the best substitute.

2 lbs stewing beef or 2 lbs pork, 1 inch cubes
2 tablespoons vegetable oil or 2 tablespoons peanut oil
6 large garlic cloves
2 large onions, roughly chopped
1 tablespoon ground coriander
1 tablespoon ground cumin
1 piece peeled gingerroot, approx 2 inches
1/2 cup ketjap manis (sweet soy)
1/2 cup chicken stock or 1/2 cup beef stock
2 green chilies, deseeded and roughly chopped
1 tablespoon sambal oelek
2 kaffir lime leaves (fresh or dried)

Steps:

  • Put all ingredients in your food-processor except the meat, oil and the lime leaves.
  • Process until almost like a paste.
  • Heat the oil in a large frying pan and fry the onion mixture on medium heat for approx 5 minutes.
  • Turn up the heat and add the meat, stir and fry for another 5 minutes.
  • Transfer to the crock pot, add the lime leaves and cook on low for 6 to 8 hours, depending on your crock pot.
  • When done taste and add more sambal if desired.

  • Transfer the spice paste ingredients to a food processor or blender and combine until finely chopped.
  • Heat 1 tbsp vegetable oil in a large, heavy pot over a low-to-medium heat and cook the spice paste for five minutes or so, allowing the spices to 'bloom'; once complete, the paste should darken in colour slightly.
  • Increase the heat slightly and add the cubed beef to the pan. Cook for a further five minutes or so, until browned.
  • Remove the pan from the heat and add the beef and spice paste to the slow cooker along with the remaining curry ingredients, stirring to combine. You might want to add a little water too, but be mindful that you don't need to use as much liquid when cooking in a slow-cooker. Set the temperature on the slow cooker to auto or high, pop the lid on and allow to bubble away for six hours. It's best to cook red meat on high when using a slow cooker but you'll probably need to give it an occasional stir so if you'll be leaving the house, consider switching to auto.
