This easy 7-Ingredient Crock-Pot Black Bean Soup is made with, as the name describes, just seven real food ingredients.

3 cups dried black beans (soaked*)
1 TB extra virgin olive oil
1 yellow onion (medium, chopped)
1 red bell pepper (chopped)
4 garlic cloves (minced)
1 TB salt (reduce this amount if you plan to use broth and your broth includes salt)
8 cups chicken broth (or vegetable broth, or a combo of water and broth)
1/2 cup chopped fresh cilantro
1 lime (juiced (optional))

Steps:

  • In a large skillet, over medium-high heat, heat the olive oil. Add the chopped onion and red pepper. Saute the vegetables for 4-5 minutes, just until the onions are translucent. Add the minced garlic and stir for 1 minute, until the garlic is fragrant.
  • Pour the black beans into the crock-pot, followed by the the pepper and onion mixture. Add the salt and broth. Stir the soup ingredients to combine. Cook the soup in the crock-pot for 8 hours on low or 4 hours on high.
  • Once the soup is done (the beans are soft), stir in the 1/2 cup of cilantro. Originally, the recipe called for adding the cilantro before cooking the soup, but I've found the best flavor comes from adding the cilantro after cooking the soup. If you'd like, stir in the juice from one lime, too.
  • Serve warm with fresh cilantro, sour cream, rice, tomatoes, cheese, avocado, or salsa--this is where lots of additional flavor will come from. The soup alone is very basic and meant to be served with toppings. You can also drain a portion of the beans to use for nachos, quesadillas, or tacos.

2, 15oz can Mrs. Grimes Black Beans, drained and rinsed
2 bell peppers, seeded and chopped (I use a green and red)
1 - 2 jalapeno peppers, seeded and minced
1/2 yellow onion, chopped
3 garlic cloves, minced
1 Tablespoon chili powder
1-1/2 teaspoons cumin
1 teaspoon salt
1/2 teaspoon dried oregano
1 cup salsa (see notes)
3-3/4 cups gluten-free chicken or vegetable broth, divided
3/4 cup long grain white rice
juice of 1/2 lime
Toppings: tortilla chips, corn chips, chopped cilantro, guacamole, chopped avocado, sour cream

Steps:

  • Add black beans through salsa to a 6-quart slow cooker then add 2-1/2 cups broth and stir to combine. Cover then cook on HIGH for 3-4 hours or LOW for 5-6 hours (depending on how big the peppers were chopped.) Scoop approximately 1/3 or 1/2 of the soup into a blender then blend until very smooth. NOTE: you may need to do this in batches as hot liquid expands while being blended! Add blended soup back into the slow cooker then stir to combine.
  • Meanwhile, when soup has 20 minutes left to cook, bring rice and remaining 1-1/4 cups broth to a boil in a small saucepan. Place a lid on top then turn the heat down to low and simmer rice for 10 minutes. Remove pan from the heat then let sit and steam with the lid on for 5 minutes. Stir cooked rice into the soup then add a little bit of lime juice at a time until desired taste is reached. Add more salt if necessary then let soup sit and thicken for 15 minute before serving with toppings.

  • Combine all ingredients except rice in crockpot.
  • Cover and cook on low 8 to 10 hours (high 3 to 4 hours).

1/4 cup lard or butter
5 cloves garlic, minced
1 yellow onion, diced
1 red bell pepper, diced
1 jalapeno, thinly sliced
2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons kosher salt
2 cup dried black beans
5 cups chicken or vegetable broth, plus more to thin as needed
2 limes, juiced, plus lime wedges, for serving
1/2 cup diced red onion, for garnish
1/2 cup fresh cilantro leaves, for garnish
1/2 cup diced tomato, for garnish
1/2 cup sour cream, for garnish
2 avocados, diced, for garnish

Steps:

  • Set a multi-cooker to the saute function. Add the lard or butter and melt. Add the garlic, onion, bell pepper and jalapeno. Cook until the vegetables are softened, about 3 minutes. Sprinkle over the chili powder, cumin and salt. Stir and cook for about a minute. Add the beans and pour in the broth.
  • Put on the lid and set the valve to sealing. Set to pressure cook on manual for 50 minutes.
  • Once the pressure-cook cycle is complete, allow the pressure to release naturally for 10 minutes, then release the rest of the steam using quick release.
  • Remove the lid and add the lime juice. Using an immersion blender, puree the soup until it is a good mix of smooth and textured. Taste and adjust the seasoning if needed. If the soup is too thick, add some additional broth to thin it.
  • Ladle into bowls and garnish with the red onion, cilantro, tomato, sour cream, avocado and lime wedges.

1 lb dried black beans
1/2 lb diced ham
5 cups chicken broth
1/2 teaspoon garlic powder
1/2 tablespoon chili powder
1 teaspoon ground cumin
3/4 teaspoon black pepper

Steps:

  • Soak beans overnight.
  • Drain and rinse.
  • Place in a pan, cover with water, and simmer on low for an hour.
  • Drain beans.
  • Place all ingredients except cornstarch in the crock pot.
  • Cook on high for 4 hours.
  • Use a slotted spoon to remove about 1 cup of cooked beans and ham.
  • Place them in a blender with a little bit of the broth and puree.
  • Return to crock pot.
  • Combine cornstarch with cold water in a bowl and mix.
  • Add to crock pot and mix.
  • Cook for an another 30 minutes or until broth thickens.

When I had my liver transplant in Denver, CO there was a Gunther Toody's Diner across the street from the hotel where I stayed. There was a Black Bean Soup on the menu that I just loved. After coming home to Oklahoma, I have searched, in vain, for a Black Bean Soup that came even close to what the diner served. I finally searched recipes and have come up with my version that best copies Gunther Toody's.

1 large onion, chopped finely
2 celery ribs, diced
2 carrots, diced
1 -2 jalapeno pepper, diced
1 red bell pepper, diced
3 -4 garlic cloves, minced
2 tablespoons olive oil
3 (15 ounce) cans black beans, drained
2 (14 1/2 ounce) cans diced tomatoes with green chilies, like Hunts
1 (11 ounce) can mexicorn, drained
1 cup instant rice
1 teaspoon Mexican oregano
1 teaspoon cayenne pepper
1 teaspoon cumin
2 cups water
2 chicken bouillon cubes
32 ounces low sodium chicken broth
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon fresh cilantro

Steps:

  • In Dutch Kettle, saute onion, celery, carrot, garlic, red pepper and jalepeno pepper in olive oil until soft.
  • Add beans, tomatoes, corn, water, boullion broth and spices. Simmer for 30-40 minutes.
  • Add instant rice to mixture. Mix well. Continue cooking 5 minutes or until rice is tender.
  • Chop fresh cilantro and stir into mixture before serving. Could top with a dollop of sour cream on top and a squeeze of lime.
  • Use Hunts diced tomatoes with green chilies or a similar brand. Rotel comes in a 10.5 oz can and is much spicer than Hunts. So if you use Rotel, pair it with a can of regular diced tomatoes.

5 cups water

Steps:

  • In 3 1/2- to 6-quart slow cooker, mix all ingredients except rice.
