ULTIMATE CROCKPOT BBQ BAKED BEANS
Sweet, tangy and just a little bit spicy, these baked beans are made completely from scratch and cook away for hours in the crockpot.---Their awesome flavor will knock your cookout guests socks off!

Steps:
- Place dry beans in a large pot. Pour water over top and stir in salt. Cover the pot and allow the beans to soak overnight.
- The next day, drain beans reserving 4 cups water. Rinse beans and set aside.
- Meanwhile, heat oil in a large saucepan over medium-high heat until shimmery. Add diced bacon, garlic, and onion to pan and stir frequently until bacon begins to crisp, about 8-10 minutes.
- Reduce heat to medium and whisk tomato paste, molasses, sugar, vinegar, sauce, and chili powder into mixture. Bring to a simmer, stirring constantly and then stir in rinsed beans and 4 cups reserved water.
- Cover beans and bring to a low boil over medium-high heat. Remove from heat and transfer to a 4-qt slow-cooker. Cook beans on high 4-5 hours until beans are soft and sauce begins to thicken. Keep beans in slow-cooker on "warm" until ready to serve. (beans will thicken up even more the longer they sit)

- Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid., In a 4-qt. slow cooker, combine beans, ham hocks, water, onion, 1 teaspoon garlic powder and 1 teaspoon onion powder. Cook, covered, on low 8-10 hours until beans are tender., Remove ham hocks; cool slightly. Cut meat into small cubes, discarding bones; return meat to slow cooker. Stir in barbecue sauce, brown sugar, nutmeg, cloves, remaining garlic powder, remaining onion powder and, if desired, pepper sauce. Cook, covered, on high about 30 minutes or until heated through.

Great, hearty tasting dish. Everyone enjoys this recipe. It states to cook for 4-6 hours, but I find that 4 hours is adequate and it may overcook at 6 hours, so be sure and check it at the 4 hour mark. The last hour of cooking you may want to take cover off and turn to high to thicken up a bit if it seems a little thin.

CROCK POT BARBECUED BEANS
While in Mexico over the winter we really look forward to an occasional meal of 'comfort food', and this is one of our favorites! Recipe comes from Cook's Illustrated. Time indicated does not include time required to soak the beans. This recipe requires a large crock pot (6 qt.) however it can easily be adjusted to fit smaller crock pots (like mine)!

Steps:
- Night before prepare the beans and soak overnight.
- Heat oil in skillet over medium heat until shimmering.
- Add the onions and 1/4 teaspoon salt and saute until opaque.
- Stir in garlic and continue cooking for another 15 seconds.
- Stir in 1 cup of barbecue sauce.
- Bring to a simmer; pour into the slow cooker.
- Drain the beans and add to the slow cooker.
- Add bacon and brown sugar and then the boiling water.
- Cover and cook on low for 9-10 hours, or high for 6-7 hours, until the beans are soft. (Note times will vary with the different brands of crock pots).
- Thirty minutes before serving, stir in the mustard, coffee and remaining 1/4 cup barbecue sauce, and adjust the salt and pepper as needed.
