CROATIAN DALMATIAN RED RISOTTO (FISHERMAN'S RISOTTO)



Croatian Dalmatian Red Risotto (Fisherman's Risotto) image

This is one of the simple meals, but also rich with flavour, spices and satisfactory for your stomach. You can use any kind of "frutty di mare", or pieces of fish.

400 g rice (Arborio preferably)
250 g shrimp, tails
250 g squid, pieces (round shaped or arms)
100 g mussels (various, only meat)
300 g tomatoes (strained juice)
1 cup white wine
2 cups water
3 tablespoons olive oil
5 g garlic (or one clove, finely minced)
1/2 teaspoon oregano
20 g cheese, hard (parmesan or similar)
40 g parmesan cheese (grated)

Steps:

  • Put olive oil in a pan, add garlic and sauté it for 30 sec, than add shrimps, squid and mussels and sauté it for 3 minute
  • Add rice and let it be covered with oil and than add wine and cook it 2 minute until alcohol evaporates.
  • Add tomato juice, salt, pepper, oregano and water. Mix everything and leave it cook for 15 minutes.
  • If there is not enough water add only hot water. Before end (that's on you to decide) add hard cheese to melt in risotto.
  • Serve hot and sprinkle with parmesan. Risotto must be creamy and resemble to sea during strong south-east wind in Adriatic: "jugo".

BLACK RICE WITH SQUID

1 lb 5 oz fresh squid, cleaned
8 cups fish stock
1/3 cup olive oil
1/2 cup sofrito
3 cups paella rice
3/4 oz squid ink (optional)
2 tbsp picada

Steps:

  • If the squid has tentacles, pull them away from the body. Cut the squid into 1-inch strips. Then cut into 1-inch cubes. Pour the fish stock into a saucepan, cover, and bring to a simmer. Put a large pan over high heat and add the oil. Add the squid. Fry for 2 minutes, until golden in places. Add the sofrito and continue to cook over medium heat for 10 minutes. Add a teaspoon of water if the sofrito starts to stick to the bottom of the pan. Add the rice, stirring it into the squid. Fry for 10 minutes, stirring often. Turn the heat to high and add a ladle of stock, stirring continuously. Once the stock has been absorbed, add another ladle and repeat until 5 minutes have passed. Dissolve the squid ink in a little of the remaining stock. Add this to the rice, and then continue adding the rest of the stock. Cook the rice for another 12 minutes, stirring frequently. Add the picada and continue to cook for another 2 minutes, or until the rice has absorbed most of the liquid and is just tender to the bite. Season with salt, then serve.

This is something special. You can also make it out of squid, but octopus or cuttlefish is much better. Although it is only a risotto, it is a heavy meal which requires red wine to support it. It is also better to use frozen octopus because it is softer than fresh.

500 g rice
1500 g octopus (better 4-5 small ones)
1 cup olive oil
100 g onions
2 garlic cloves
200 g passata (or Italian-style sieved tomatoes)
100 g parmesan cheese (grated)
30 g hard sheep's milk cheese (Grana Padano cheese)
1 bay leaf
2 cups white wine
salt
pepper
70 g fresh parsley leaves

Steps:

  • Wash octopuses carefully and thoroughly, take out the bone, and ink-bags put aside. Cut octopus into stripes.
  • Finely mince garlic and parsley leaves.
  • Mince onion and sauté it on olive oil. When onion becomes soft, add octopus, garlic, parsley, bay leaf, tomato, salt pepper and sauté it 30 minutes.
  • After 30 minutes add 1 cup of wine and continue to sauté it. When octopus become soft, add what has left of wine.
  • Wash rice in two (cold) waters and add to octopus. Cook rice according to manual time necessary (add water but count in the liquid you have already in a pot).
  • Five minutes before ready add ink-bags. Put ink-bags one by one to decide how black you want your risotto. Cut hard sheep cheese into small cubes and add with ink-bags. This cheese will give the risotto rich and creamy taste.
  • Cook for 2-3 minutes more and serve with grated parmesan cheese.

1/4 cup olive oil
3 cups diced ( 1/2 inch) onion (about 3/4 pound)
1 cup diced ( 1/2 inch) celery (about 3 ribs)
3/4 cup diced ( 1/2 inch) scallion (6 to 8 scallions)
2 pounds cleaned squid, cut into 1-inch pieces
2 cups Thai rice (about 14 ounces), available in some supermarkets and most Asian specialty food stores
2 cups diced ( 1/2 inch) ripe tomato
6 to 8 cloves garlic, peeled and chopped (about 1 1/2 tablespoons)
1 2-inch piece fresh ginger, peeled and chopped (about 1/4 cup)
Peel of 1 lemon, removed with a vegetable peeler
1 or 2 Thai peppers (amount depending on pepper size and desired hotness), chopped
2 teaspoons salt, plus additional to taste
Tabasco red pepper sauce (optional)

Steps:

  • In a large, sturdy saucepan, heat the oil until hot but not smoking. Add the onion, celery and scallion, and cook for 2 to 3 minutes, stirring occasionally. Add the squid and rice, and mix well.
  • Stir in the tomato, garlic, ginger, lemon peel, Thai pepper and salt, along with 2 1/2 cups warm tap water. Bring the mixture to a boil, stirring occasionally so it doesn't stick. When it comes to a full boil, reduce the heat to very low, cover, and cook for 20 minutes.
  • Let the mixture rest for 5 to 10 minutes before serving. If desired, pass additional salt and Tabasco sauce.

Also known as "Crna Riz" or "black rice", this recipe is traditionally a risotto made with squid ink, and wine. This alcohol free version is much easier to prepare, and is a great way to introduce kids to squid.

3 lbs small squid, frozen
2 lbs yellow onions, diced
5 garlic cloves, crushed
1/4 cup extra virgin olive oil
1/2 cup parsley, chopped
1 cup rice
1 3/4 cups water
1/2 cup romano cheese, grated
1 teaspoon salt
1/2 teaspoon pepper, freshly ground

Steps:

  • For the best taste, and tenderest squid, you need the freshest squid possible. Frozen squid is frozen as soon as it's caught, and will produce better results than previously thawed squid. Its also a lot less expensive.
  • Check that the box is not bulging on one end, indicating it was thawed and refrozen.
  • Thaw the squid by wrapping the box in plastic wrap, and submerging in tepid to warm water for a couple of hours. The thawed squid should smell fresh, and there should be no need to rinse. Clean the squid by separating the head and body, and pulling out the quill. On fresh squid, the quill will pull out easily, in one piece. The guts should pull out with the squid. Eggs can be left behind in the body. Cut the bodies into 3/4 inch squares.
  • Clean the tentacles by squeezing the heads to push out the beak, and cutting away the beak, guts and eyes from the tentacles. For "black" rice, remove the ink sacs from several of the larger squid, and slit open to remove the ink. Add to the skillet at the same time as the squid.
  • Traditionally this is a risotto, however this can result in overcooked squid, so we recommend pre-cooking the rice. Bring rice and water to a boil, then lid tightly and leave on low heat for 20 minutes. The rice should be added to the squid while still hot.
  • In some oil in a heavy 12" skillet, fry onions until they start to turn golden. Then add crushed garlic and cook for a minute. Then add chopped squid (and optional ink). Stir on high heat until squid turns white, and then another minute. This will take about 6-10 minutes, depending on how hot your stove is. Do not overcook! Properly cooked squid will be completely white, yet very tender.
  • Mix in parsley, remove from heat. Season with salt and pepper, and stir in hot rice. Finish with extra virgin olive oil. Check seasoning.
  • Can be served thick, as a main course or side dish, or with more liquid, as a soup. Garnish with grated Romano cheese.

  • Buying Squid. For the best taste, and tenderest squid, you need the freshest squid possible so we recommend you start with a 3 lb box of uncleaned, whole frozen squid.
