CROATIAN BEAN SOUP (GRAH I VARIVAH)
Steps:
- Gather the ingredients.
- Drain the soaked beans, rinse them, and drain again.
- Place in a large pot and add 12 cups fresh cold water. Bring to a boil, reduce heat to a simmer, and skim off any foam that rises to the surface.
- Add garlic, onion, smoked sausage of choice, smoked ribs or meaty smoked ham hocks, bay leaf, salt, pepper and Vegeta seasoning powder to taste.
- Return to a boil, reduce heat, and simmer, partially covered, for 2 to 3 hours or until beans and meat are tender. Add water as needed, while cooking, stirring occasionally.
- Remove bay leaf and discard. Remove bones from rib meat or hocks and return meat to the pot. If soup isn't thick enough, continue to simmer until desired consistency is achieved.

CROATIAN DILL SOUP
This soup is in my family more than 100 years. I've found the recipe in my grandmothers writings (it is in old handwriting and very hard to read), a booklet full with old recipes. I'm cooking this soup today, so I decided to share it with Zaar.

Steps:
- Sauté finely minced onion on 20 g butter until soft. Add flour and sauté it 2 minutes. Add water and make creamy liquid. Add the rest of the water making sure you don't have small flour clods.
- Mince the whole dill (including stem - but very finely) and put it into soup. Season with salt and pepper and cook it for about 30-40 minutes.
- In the meantime cut bread slices into small cubes and fry it on butter until dry and crispy. Put aside.
- When the soup is ready to serve add (in hot soup) sour cream mixed with yolk and lemon.
- If you want really full soup you can add egg-white mixing hard the moment you put it inches.
- Serve with bread cubes (put them in soup).
CROATIAN BEEF SOUP
This is also traditional, but Saturday family lunch starter. We usually eat the meat we are cooking in this soup. The best parts of the meat for this soup are ribs or belies.

- Put cold water in a pot (appropriate large pot). If you want better soup put beef in cold water, if you want better beef meat put it in hot water.
- Rind carrots, onion, parsley, celery and put all other ingredients into water. Boil and after it boils reduce heat and cook for 3 to 4 hours.
- Filter the soup.
- If you want, put into strained soup carrots, and add noodles or whatever you like in soup, sprinkle with freshly minced parsley leafs and serve.

CROATIAN SIMPLE TOMATO SOUP
I suppose all nations have their way of making tomato soup. This one I've learned from my mother, although she doesn't use olive oil.

Steps:
- Put olive oil in a pot, heat it and add flour. Fry it until brownish, add cold water and mix until become creamy.
- Add tomato sauce, water, season it with sugar, salt and pepper and cook about 30 minutes. Add rice 15 minutes after soup boils.
- When the rice is done, serve.

CROATIAN DALMATIAN VEGETABLE SOUP
This soup is very similar to Italian "Minestrone" soup. There may be some variations in ingredients, but "the basic plot" is the same. This is the way I have learned it in Dalmatia. It may be full meal because it is like stew. You may not include all ingredients I have mentioned; this is the "full house".

Steps:
- Soak beans and barley over night and cook the next day until soft.
- Slice carrots, parsley and celery roots into small cubes, and finely mince onion and garlic. Cut pancetta into small cubes.
- Cook French beans and green peas for 10-15 minutes drain and put aside.
- Put olive oil into pot, add onion, carrot, parsley root, celery root and sauté it until soft. Add pancetta and garlic and sauté for 5 minutes.
- Add some water, French beans, green peas, barley, beans and tomato. Stir and cook 5 minutes, add whole water. It may be more than 1 liter, depends how much soup you want and how dense you want it to be.
- Season with salt and pepper and half amount of oregano. Cook about 45 minutes or until all vegetables are soft.
- Twenty minutes before end add penne and cook until pasta is done. Before serving add majoran and oregano, taste and add salt if necessary. Serve with grated parmesan over the soup.

CROATIAN CHICKEN SOUP
This is very simple soup, traditional Sunday lunch starter in Croatian families. It must be cooked on very low fire for 3 to 4 hours. My recommendation is to use old chicken - the one which is too hard to grill or fry. You can also do it with turkey.
