ARUGULA AND TOMATO SALAD



Arugula and Tomato Salad image

8 campari or other cocktail tomatoes, quartered
1 pint yellow and/or orange cherry tomatoes, halved
1 teaspoon aged balsamic vinegar, plus more for drizzling
Kosher salt and freshly ground black pepper
5 ounces baby arugula (about 8 cups)
1 teaspoon extra-virgin olive oil, plus more for drizzling
Shaved parmesan cheese, for topping

Steps:

  • Toss the tomatoes with the balsamic vinegar, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Set aside until juicy, about 5 minutes. Toss the arugula with the olive oil, a pinch of salt and a few grinds of pepper in a large bowl.
  • Spread the arugula on a platter. Spoon the tomatoes and their juices on top, then drizzle with more olive oil and vinegar. Top with parmesan.

Air Fryer Turkey Cutlets image

Breaded turkey cutlets in an air fryer breaded and Italian seasoned that is easy to customize and works great for a variety of recipes whether you're serving them for Thanksgiving dinner instead of a whole turkey, over pasta, or sliced over a salad.

1 lb turkey cutlets, (5-6 thin cutlets)
2 eggs
1/2 cup Italian seasoned breadcrumbs
1/4 cup grated parmesan cheese
garlic salt
black pepper

Steps:

  • Sprinkle the turkey cutlets with garlic salt (or regular salt) and pepper on both sides.
  • Take 2 low bowls or plates and add the beaten eggs to one dish and add the bread crumbs and parmesan to another dish. Mix the bread crumbs and parmesan together.
  • Dip the turkey cutlets into the eggs on both sides and then dip them into the bread crumbs mixture on both sides.
  • Lay the uncooked breaded turkey cutlets into the cold air fryer. Our air fryer (a 5.8 Qt Cosori) held 4 chicken cutlets and we had to cook them in two batches.
  • Air fry the cutlets on 400 F for about 5-7 minutes, or until they're crispy and the internal temperature of the turkey is 165 F. The turkey cooks fast and you don't need to flip it over . during cooking.
  • Serve as a whole cutlet or slice it to serve over pasta with marinara sauce or on a salad.

TURKEY CUTLETS WITH PLUM SALAD



Turkey Cutlets With Plum Salad image

1 1/2 pounds turkey cutlets
Pinch of cayenne pepper
1 1/4 teaspoons ground coriander
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
3 firm plums, cut into 1-inch wedges
2 teaspoons fresh lemon juice
8 cups baby arugula

Steps:

  • Preheat a grill to medium high. One at a time, place the cutlets between 2 sheets of plastic wrap and pound with a meat mallet or heavy skillet until 1/4 inch thick. Transfer the cutlets to a bowl and toss with the cayenne, 1 teaspoon coriander, 1 teaspoon salt, 1/4 teaspoon black pepper and 1 tablespoon olive oil. Set aside.
  • Toss the plums with the remaining 1/4 teaspoon coriander, a pinch of salt and 1 tablespoon olive oil. Grill the plums, turning once, until just starting to soften, 3 to 4 minutes. Set aside.
  • Grill the turkey until cooked through, about 2 minutes per side.
  • Finely chop a few of the grilled plum wedges; put in a large bowl. Stir in the lemon juice, the remaining 3 tablespoons olive oil and 1/4 teaspoon each salt and black pepper. Add the arugula and toss. Top the turkey with the salad and the remaining grilled plums.

3 cups fine fresh bread crumbs (from 6 slices firm white sandwich bread)
6 tablespoons olive oil
3 tablespoons fresh lemon juice
1 teaspoon black pepper
1 teaspoon salt
2 medium tomatoes (1/8 lb total), cut into 1/2-inch-thick wedges
1 small red onion, halved lengthwise, then thinly sliced crosswise (1/2 cup)
4 veal cutlets (1 1/4 lb total)
2 oz finely grated Parmigiano-Reggiano (1 cup)
2 large eggs
6 tablespoons vegetable oil
10 oz arugula (5 cups), leaves torn if large
1 cup loosely packed fresh basil leaves, torn into bite-size pieces

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Spread bread crumbs in a shallow baking pan and toast 8 to 10 minutes. Reduce oven temperature to 200°F.
  • Whisk together oil, juice, pepper, and 1/2 teaspoon salt in a large bowl until combined, then stir in tomatoes and onion.
  • Gently pound cutlets to 1/8-inch thickness between 2 sheets of plastic wrap with flat side of a meat pounder or with a rolling pin. Sprinkle veal all over with remaining 1/2 teaspoon salt and season with pepper.
  • Stir together bread crumbs and cheese in a large shallow bowl. Lightly beat eggs in another large shallow bowl. Dip veal, 1 piece at a time, in egg, letting excess drip off, then dredge in bread crumbs, coating completely, and arrange in 1 layer on a sheet of wax paper.
  • Heat 3 tablespoons vegetable oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then fry 2 cutlets, turning over once, until golden brown and just cooked through, about 6 minutes total. Transfer to paper towels to drain briefly, then transfer to baking pan and keep warm in oven. Add remaining 3 tablespoons oil to skillet and fry remaining cutlets.
  • Add arugula and basil to tomato mixture and toss, then season with salt and pepper. 3Serve veal topped with salad.

CUTLETS
3/4 cup corn flake crumbs (made from 1 1/2 cups corn flakes crushed in the blender or food processor)
1 teaspoon oregano
1/4 teaspoon pepper
salt to taste
2 tablespoons oat milk mixed with 1/4 cup olive oil
1/2 cup oat flour
4 turkeys cutlets about 4 ounces each (pounded if not thin enough)
3 tablespoons olive oil for baking
SALAD
2 medium ripe tomatoes chopped
1/4 red onion
1/3 cup My Favorite Dressing
4 cups chopped arugola
salt
few grindings of fresh pepper

Steps:

  • Preheat oven to 425 degrees. Combine tomatoes, onion, and My Favorite Dressing. Set aside. Line a baking sheet with aluminum foil and preheat in oven. Combine cornflake crumbs with seasoning in a large shallow bowl. Combine oat milk and olive oil, blending well in a shallow bowl or plate. Put flour in a zip-top plastic bag. Put turkey cutlets in bag with flour, and shake to coat. Remove one at a time from bag, shaking off extra flour. Turn cutlet in olive oil/oat milk mixture, then roll in corn-flake crumbs, using your fingers to press the crumbs in. Put on a plate. Once you've breaded all the cutlets, remove preheated baking sheet from oven, add the 3 Tbsp. olive oil, and tilt to coat completely. Place cutlets on baking sheet. Cook for 15 minutes, flip and cook 10 minutes more. Mix arugula with tomatoes and onions. Sprinkle with salt. Put cutlets on plates, top with salad and a few grindings of fresh pepper. Serve with Herbed Jerusalem Artichokes or New Potatoes with Parsley or brown rice. Definitely double if you want leftovers.
