OVEN ROASTED PARMESAN POTATOES
I have tried a lot of good roasted potato recipes, but I keep coming back to this one. I've never found one I like better! These are crispy on the outside, and soft and creamy on the inside.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan or cast iron skillet with cooking spray; pour in about 1 teaspoon vegetable oil to coat the bottom.
- Mix Parmesan cheese, salt, garlic powder, paprika, and black pepper together in a bowl.
- Blot the cut-side of potatoes with a paper towel to remove any moisture. Place potatoes in a bowl and drizzle with 1 tablespoon vegetable oil; toss until potatoes are lightly coated. Sprinkle potatoes with Parmesan cheese mixture; toss to coat. Arrange potatoes, cut-side down, onto the prepared baking pan.
- Bake in the preheated oven for 15 to 20 minutes. Turn potatoes to cut-side up; continue baking until golden and crispy, about 15 to 20 more minutes. Serve with sour cream.

- Cook potatoes in large pot of boiling water until tender. Drain well. Press through food mill or ricer into same pot or return to pot and mash. Mix in milk and 1 1/2 tablespoons butter.
- Melt remaining 1/2 tablespoon butter in heavy small skillet. Add green onions and sauté until wilted, about 1 minute. Add to potatoes. Add Parmesan and mix gently. Season with salt and freshly ground pepper and serve.

- Preheat your oven to 450 degrees F. Grease a 15x10-inch baking pan (see notes for a half-sheet pan) with butter. Rinse and peel your potatoes. Slice them thinly (1/8 -inch to 1/4-inch thick), using a food processor, mandoline, or the slicer on a box grater.
- Cut off the root and stem ends of your onion and peel it. Cut it into thin rings by starting at one end and slicing downward. Continue slicing the rest of the onion into rings. Separate the rings and set them aside.
- In a small bowl, combine the Parmesan, garlic powder and pepper. Melt your butter in a small pan on the stove or in a small bowl in the microwave.
- To assemble, place some potatoes in a single layer, slightly overlapping, in your baking pan. Sprinkle on a third of your Parmesan mixture evenly. Add some onions on top in a single layer. Repeat with another layer of potatoes, the Parmesan mixture, and onions. For your third layer, add the potatoes, Parmesan mixture, onions, and drizzle your melted butter all over the top.
