This recipe for light orange beef and broccoli is so simple and has just 250 calories per serving! SO flavorful, light, and yummy!

juice of 1 orange
1 tablespoon fresh orange zest
2 tablespoons low sodium soy sauce
1/4 cup beef broth
1/3 cup orange marmalade
2 tablespoons cornstarch
1 teaspoon oil
1 lb. flank steak, very thinly sliced
2 cloves garlic, minced
1 head broccoli, washed and cut into bite-sized pieces

Steps:

  • Mix the first 6 ingredients, whisking until the cornstarch is dissolved. Boil the broccoli for just a few minutes, until tender crisp. The broccoli will cook a little more once you add it in with the sauce, so make sure not to boil it for too long.
  • Heat the oil in a skillet over high heat. Add the steak and garlic, draining off extra fat after a few minutes. Flip the pieces until each piece is cooked through and the meat is browned.
  • Add the sauce to the pan and stir for 1 minute until the sauce starts to thicken. Remove from heat and stir in broccoli. Serve over rice and garnish with orange zest and/or scallions.

With fresh broccoli, ginger, red bell peppers and plenty of fresh citrus, this healthy beef stir-fry is sure to become a favorite. And it's ready in 30 minutes, making it the perfect healthy weeknight dinner. Serve with brown rice.

3 oranges
3 tablespoons reduced-sodium soy sauce
1 tablespoon Chinese rice wine, or dry sherry
1 tablespoon cornstarch
½ teaspoon sugar
3 teaspoons peanut oil, or canola oil, divided
1 pound beef sirloin, trimmed and sliced against the grain into 1/8-inch-thick slices
2 tablespoons minced garlic
2 tablespoons minced fresh ginger
6-8 small dried red chiles
2 pounds broccoli, cut into small florets (6 cups)
⅓ cup water
1 red bell pepper, seeded and sliced
½ cup sliced scallion greens

Steps:

  • With a small sharp knife or vegetable peeler, carefully pare wide strips of zest from one of the oranges. Cut zest into 1-inch strips and set aside. Squeeze juice from all the oranges into a small bowl (for about 3/4 cup). Add soy sauce, rice wine (or sherry), cornstarch and sugar and stir to combine; set aside.
  • Heat 1 teaspoon oil in a wok or large skillet over high heat until almost smoking. Add beef and stir-fry just until no longer pink on the outside, about 1 minute. Transfer to a plate lined with paper towels and set aside.
  • Add the remaining 2 teaspoons oil to the pan and heat until very hot. Add garlic, ginger, chiles and the reserved orange zest; stir-fry until fragrant, about 30 seconds. Add broccoli and water. Cover and steam, stirring occasionally, until the water has evaporated and the broccoli sizzles, about 3 minutes. Add bell pepper and stir-fry for 1 minute more.
  • Stir the reserved orange sauce and pour it into the wok. Bring to a boil, stirring; cook until the sauce has thickened slightly, 1 to 2 minutes. Add scallion greens and the reserved beef and toss to coat with sauce; heat through.

A delicious crispy and sweet, yet mildly spiced beef stir-fry recipe. Great served with steamed rice and broccoli.

1 ½ pounds beef top sirloin, thinly sliced
⅓ cup white sugar
⅓ cup rice wine vinegar
2 tablespoons frozen orange juice concentrate
1 teaspoon salt
1 tablespoon soy sauce
1 cup long grain rice
2 cups water
¼ cup cornstarch
2 teaspoons orange zest
3 tablespoons grated fresh ginger
1 ½ tablespoons minced garlic
8 broccoli florets, lightly steamed or blanched
2 cups oil for frying

Steps:

  • Lay beef strips out in a single layer on a baking sheet lined with paper towels. Allow to dry in the refrigerator for 30 minutes. In a small bowl, mix together the sugar, rice vinegar, orange juice concentrate, salt and soy sauce. Set aside.
  • Meanwhile, combine rice and water in a medium saucepan. Bring to a boil, then reduce heat to medium-low and simmer for 20 minutes, or until rice is tender. Add more water at the end if necessary.
  • Heat oil in a wok over medium-high heat. Toss dried beef in cornstarch to coat. Fry in the hot oil in small batches until crispy and golden brown; set aside. Drain all of the oil from the wok except about 1 tablespoon.
  • Add orange zest, ginger and garlic to the remaining oil, and cook briefly until fragrant. Add the soy sauce mixture to the wok, bring to a boil, and cook until thick and syrupy, about 5 minutes. Add beef, and heat through, stirring to coat. Serve immediately over steamed rice, and garnish with broccoli.

3 tablespoons dry sherry or 3 tablespoons chicken broth
1/2 cup orange juice
2 tablespoons soy sauce
1 tablespoon grated fresh ginger
2 teaspoons cornstarch
1 teaspoon toasted sesame oil
1/2 teaspoon crushed red pepper flakes
3/4 lb beef sirloin, trimmed of all visible fat,cut in 1/4 inch strips
2 teaspoons olive oil
1 bunch broccoli, cut into florets
1 bunch scallion, cut into 1/4 inch thick diagonal slices
3 cloves garlic, minced
2 cups cooked basmati rice

Steps:

  • In a medium bowl, combine the broth, sherry or broth, orange juice, soy sauce, ginger, cornstarch, sesame oil and red pepper flakes.
  • Add the beef, tossing to coat.
  • Let stand for 10 minutes.
  • Heat 1 tsp.

  • Add the beef to the skillet; reserve the marinade.
  • Cook the beef, stirring, for 3 minutes, or until browned.
  • Remove to a plate.

  • Boils and thickens slightly.
  • Return the beef to the pan and cook, stirring, for 2 minutes, or until heated through.
  • Serve over the rice.

1 1/4 lb beef chuck roast
1/2 c canola oil
1/4 c cornstarch
1/4 c orange marmalade
1 Tbsp chopped garlic
2 Tbsp white vinegar
1 Tbsp peeled chopped ginger
2 Tbsp soy sauce
1/2 c orange juice, fresh
1/4 head broccoli, cut into florets, stems sliced into 1/4-inch rounds

Steps:

  • 1. Cook white rice by package directions. Thinly slice the chuck roast across the grain about 1/4-inch thick. Cut slices into 3-inch-long strips.
  • 2. Heat oil in a large skillet or wok over high heat. Toss the beef in cornstarch and shake off excess. Fry the beef in two batches in hot oil, turning once, until crispy golden, about 2 minutes per side. Remove from pan and set aside on paper towels. carefully drain the oil from skillet or wok.
  • 3. In a medium bowl, whisk together the marmalade, garlic, vinegar, ginger, soy sauce, and orange juice till well combined. Add to skillet or wok and cook two minutes. Add broccoli and cook 3 to 5 minutes, until broccoli is slightly tender and sauce is thick. stir in beef and sreve with rice.

4 teaspoons soy sauce
2 teaspoons minced fresh gingerroot

2 cups fresh broccoli florets
1 small sweet red pepper, cut into strips
2/3 cup picante sauce
1/2 teaspoon sugar, optional
1 tablespoon cornstarch
1/3 cup orange juice
3 green onions with tops, cut diagonally into 1-inch pieces
Sliced almonds, optional
Hot cooked rice

Steps:

  • Toss meat with soy sauce, ginger and orange zest; set aside for 10 minutes. , Heat oil in a wok or large skillet on high. Stir-fry mixture just until meat is no longer pink; remove. Add broccoli, pepper, picante sauce and sugar to skillet. Cover; reduce heat to simmer. Cook until vegetables are crisp-tender, about 3 minutes. , Combine cornstarch and orange juice until smooth; add to skillet along with meat and onions. Cook and stir 1 minute or until sauce is thickened. Sprinkle with almonds if desired. Serve with rice.
