1 cup self raising flour
1 teaspoon onion salt
1 teaspoon chicken salt
2 teaspoons lemon pepper
1 teaspoon white pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1/2 teaspoon dried herbs
2 kg chicken wings
olive oil flavored cooking spray

Steps:

  • Preheat oven to 220°C.
  • Line 2 baking trays with baking paper.
  • Prepare the chicken wings by taking off the tip and cutting them in half at the joint (this does not have to be done, but I always do my wings this way).
  • Combine all the dry ingredients in a large plastic bag.
  • Spray the wings with oil.
  • Add about a third of them to the flour mixture and shake until well coated.
  • Place on prepared baking trays.
  • Repeat with remaining ingredients.
  • Spray chicken with oil again.
  • Bake for 25-35 minutes or until crisp and cooked through.
  • Serve with fries or salad.

My wife ran an daycare in our home. This is ome of the kid meals they gave us to help with meal planning. The servings are kid size, but it should be easy to ramp it up to adult portions if needed.

1 cup vegetable juice
1/4 teaspoon hot sauce
2 ounces cheddar cheese, finely shredded
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon oregano leaves
1/2 teaspoon ground cumin
1 teaspoon garlic powder
2 1/2 lbs skinless chicken thighs
1 1/2 ounces corn flakes, crushed

Steps:

  • In a shallow non-aluminum pan combine vegetable juice and hot sauce.
  • Add chicken and let marinade in refrigerator for 3 hours turning frequently.
  • Drain chicken and discard marinade.
  • Preheat oven to 375 deg. F.
  • Spray a large cookie sheet with non stick cooking spray.
  • In a large zip bag combine remaining ingredients.
  • Add the chicken and shake to coat.
  • Remove from bag and place on cookie sheet.
  • Sprinkle and remaining crumbs on chicken.
  • Bake one hour until tender.

I love fried chicken, but I don't need the calories, so I came up with this one. I use chicken breasts but it would be could with any cut of chicken. (I don't like the dark meat on a chicken) It's great with ranch dressing as a dipping sauce.

2 lbs boneless skinless chicken breasts
2 cups buttermilk
1 1/2 cups dried breadcrumbs
1 1/2 teaspoons garlic powder
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cut chicken breasts into about 3 pieces and put into a ziplock bag, add the buttermilk and marinade overnight, or for at least 2 hours.
  • Preheat oven to 325°F and spray a baking sheet with Pam cooking spray.
  • Put all the dry ingredients into a ziplock bag and shake to combine.
  • Remove chicken from the ziplock bag and shake off any excess buttermilk and add to the breadcrumb mix, add 3 pieces at a time and shake to coat the chicken.
  • Remove and place on baking sheet.
  • Repeat till all pieces are coated.
  • Spray chicken with Pam cooking spray and bake for about 20 minutes.

2 tablespoons reduced-calories extra-light vegetable oil spread, melted
2 tablespoons skim milk
1 tablespoon chopped dried chives
1/2 teaspoon salt
2 cups corn flakes (1 cup crushed)
1 teaspoon taco seasoning mix
1 tablespoon dried parsley (or 3 Tbsp of fresh)
6 boneless skinless chicken breast halves

Steps:

  • Preheat oven to 425.
  • Spray 9X13 baking dish with vegetable oil cooking spray.
  • In a shallow bowl, combine melted vegetable oil spread, milk, chives and salt.
  • In a seperate bowl, combine corn flake crumbs, taco seasoning and parsley.
  • Dip chicken breasts, one at a time, into liquid mixture then roll in corn flake crumbs.
  • Place in baking dish.
  • Spray lightly with vegetable oil cooking spray.
  • Bake 20-25 minutes or until chicken is no longer pink inside.
