Steps:
- In a large bowl combine confectioners sugar with coconut and condensed milk.
- Shape the mixture into 1-inch balls and place onto a pan lined with wax paper. Place in refrigerator until firm.
- In a microwave-safe glass bowl, melt the chocolate chips with shortening, removing to stir once or twice until smooth.
- Dip each ball into the chocolate allowing the excess chocolate to drip off. Place the chocolate balls onto the waxed paper; let stand until set. Store in refrigerator.

- In a medium saucepan over medium heat, combine the eggs sugar and dates. Bring to a boil, stirring occasionally, and boil for 5 minutes. Remove from heat and stir in the butter and vanilla. Mix in crispy rice cereal. Butter hands and roll the mixture into walnut sized balls. Roll the balls in coconut. Serve.

I love making these no- bake date and nut treats in the summer because they only require about 5 min of cooking! Make sure the date mixture doesnt boil rapidly or it will curdle the egg!

- 1. Melt butter in lg pot over med heat. Add sugar, dates, egg and salt and cook, stirring occasionally, until sugar is dissolved, about 5 min. Off heat, stir in vanilla, rice krispies and pecans until incorporated. Let cool 15 min.
- 2. Place coconut in shallow dish, Shape cooled mixture into 1 in balls, roll in coconut, transfer to parchment lined rimmed baking sheet, and refrigerate until firm, about 15 min. Serve. (Balls can be stored in airtight container at room temp for up to 3 days)

- Mix everything together, refrigerate for a half hour or longer and then form into balls. Return to fridge and let chill at least an hour (longer would be best). Note: To make it easier to roll in chocolate, freeze for a minimum of 4 hours or overnight. Melt the following together in a double -boiler: one package chocolate chips, one square sweet chocolate. Keep on low so that chocolate remains soft. Drop balls into chocolate mixture one at a time using a fork to roll them so that the chocolate will cover. Let set on parchment paper in fridge.
