Number Of Ingredients 16

4 boneless skinless chicken breast halves (1-1/2 pounds), cut into 1-inch cubes
1/2 teaspoon salt, divided
1/4 teaspoon pepper
1 tablespoon vegetable oil
1 cup finely chopped onion
1/2 cup finely sliced celery
1/2 cup diced green pepper
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup water
1-1/2 teaspoons paprika
Dash cayenne pepper
1 bay leaf
2 teaspoons cornstarch
1 tablespoon cold water
Hot cooked rice, optional

Steps:

  • Sprinkle chicken with 1/4 teaspoon salt and pepper. In a large skillet over medium heat, brown chicken in oil; remove and set aside. In the same skillet, saute onion, celery, green pepper and garlic until tender. Stir in tomatoes, water, paprika, remaining 1/4 teaspoon salt, cayenne pepper and bay leaf; bring to a boil. Reduce heat; cover and simmer for 10 minutes. , Add chicken. Whisk cornstarch and cold water until smooth; stir into chicken mixture and bring to a boil. Simmer, uncovered, until chicken is tender, 10-15 minutes. Remove bay leaf before serving. If desired, serve with rice.

1 cup sliced celery
1 cup chopped green pepper
1 cup chopped onion
1/4 cup canola oil
2 garlic cloves, minced
1/4 cup all-purpose flour
5 cups chicken broth
6 cups cubed cooked chicken
2 cans (6 ounces each) tomato paste
1/4 cup chopped fresh parsley
4 teaspoons Worcestershire sauce
2 teaspoons lemon juice
1 teaspoon salt
1/2 teaspoon each pepper, sugar and dried thyme
12 to 16 drops hot pepper sauce
Hot cooked rice

Steps:

  • In a large skillet over medium heat, saute the celery, green pepper and onion in oil until tender; Add garlic; cook 1 minute longer. Add flour; cook and stir for 5 minutes or until browned. , Stir in broth. Bring to a boil; cook and stir for 2 minutes. Add remaining ingredients except rice. Return to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through. Serve with rice.

Easiest fried chicken recipe on the planet. Requires no marinating and makes no mess. Coat skinned chicken pieces in your favorite Creole seasoning and fry in peanut oil. Bake in oven a short time to ensure chicken is cooked through.

1 gallon peanut oil, or as needed
1 ½ pounds chicken wings
1 ½ pounds chicken legs
1 tablespoon Creole seasoning (such as Tony Chachere's®), or more to taste

Steps:

  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Preheat the oven to 400 degrees F (200 degrees C).
  • Liberally coat chicken pieces with Creole seasoning.
  • Place 6 to 7 pieces chicken at a time into the hot oil. Cook until skin turns light brown and pieces float, 9 to 12 minutes. Remove from the oven and drain on paper towels before transferring to a baking sheet. Repeat to fry remaining batches.
  • Bake chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 10 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Cool for 15 to 20 minutes before serving.

The recipe for this creamy pan-fried chicken was given to me by my husband's grandmother. I make it at least twice a month-much to the delight of my family!

1 cup all-purpose flour
2 teaspoons salt
1-1/2 teaspoons Creole seasoning
1/2 teaspoon pepper
1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
3 tablespoons vegetable oil
2 cups water

Steps:

  • In a shallow bowl or large resealable plastic bag, combine dry ingredients. Dredge chicken. Heat oil in a large skillet, fry chicken, a few pieces at a time, until brown on all sides. Add water; bring to a boil. Reduce heat; cover and simmer for 4-5 minutes or until juices run clear. Thicken gravy if desired.

8 ounces boneless skinless chicken breasts, cut into strips
3 ounces sliced bell peppers (yellow, orange, green, red)
1 cup canned okra, with juice
4 ounces grape tomatoes, halved (about 20 tomatoes)
2 ounces chopped celery (about 1/2 cup)
1 tablespoon fat-free margarine
3 teaspoons cajun spices or 3 teaspoons creole seasoning
3/4 teaspoon Splenda sugar substitute
1/4 teaspoon thyme
1 tablespoon parsley
cooked brown rice

Steps:

  • Spray skillet with non-stick spray.
  • Add chicken and thyme and cook over medium heat for 5-7 minutes, until browned.
  • Add peppers and celery and stir fry for 5 minutes.
  • Add okra, tomatoes, Cajun seasoning, and Splenda, and mix well. Bring to a boil.
  • Reduce heat, cover, and simmer for 5 minutes.
  • Uncover and cook for 3 more minutes.
  • Add margarine and parsley and mix well. Serve over hot rice.

1 cup chicken stock
2 tablespoons flour
4 tablespoons olive oil
4 boneless skinless chicken breasts, cut into 1 inch cubes
kosher salt
black pepper
1/4 lb ham, cut into 1/2 inch dice
2 onions, diced medium
2 celery ribs, 1/4 inch dice
1 small green bell pepper, 1/4 inch dice
28 ounces canned whole tomatoes, drained and chopped (i prefer the pomi parmalat)
1 bay leaf
1 teaspoon ground thyme
1/2 teaspoon dried marjoram (optional)
hot sauce, to taste (crystal's is better than tabasco for this recipe)

Steps:

  • heat 2 tbsp olive oil. season chicken with salt and pepper. brown chicken and remove
  • 1 tbsp oil to the pan lightly brown ham and onions and remove
  • add remaining tbsp oil, celery, and bell pepper and stir until softened (about 5 min)
  • return ham and onion to pan and add tomato, bay leaf, thyme, marjoram, stock, and 1/2 tsp salt and bring to a boil
  • return chicken to pot and reduce heat to simmer. simmer until chicken is cooked through - if you would like to thicken the sauce (i generally do), add the 2 tbsp flour and bring back up to a boil, stirring for a few minutes.
  • season to taste with hot sauce
