Provided by Ina Garten

Categories     dessert

Time 2h

Yield 5 to 6 servings

Number Of Ingredients 6

1 extra-large egg
4 extra-large egg yolks
1/2 cup sugar, plus 1 tablespoon for each serving
3 cups heavy cream
1 teaspoon pure vanilla extract
1 tablespoon orange liqueur (recommended: Grand Marnier)

Steps:

  • Preheat the oven to 300 degrees F.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the egg, egg yolks, and 1/2 cup of the sugar together on low speed until just combined. Meanwhile, scald the cream in a small saucepan until it's very hot to the touch but not boiled. With the mixer on low speed, slowly add the cream to the eggs. Add the vanilla and orange liqueur and pour into 6 to 8-ounce ramekins until almost full.
  • Place the ramekins in a baking pan and carefully pour boiling water into the pan to come halfway up the sides of the ramekins. Bake for 35 to 40 minutes, until the custards are set when gently shaken. Remove the custards from the water bath, cool to room temperature, and refrigerate until firm.
  • To serve, spread 1 tablespoon of sugar evenly on the top of each ramekin and heat with a kitchen blowtorch until the sugar carmelizes evenly. Allow to sit at room temperature for a minute until the caramelized sugar hardens.

Time 55m

Yield 6 waffles

Number Of Ingredients 13

1 lb cream cheese
1 cup powdered sugar
2 teaspoons vanilla extract
1 large pinch kosher salt
2 cups all-purpose flour
1 tablespoon baking soda
1/2 teaspoon kosher salt
1/4 cup light brown sugar
3 large eggs (separated)
2 cups buttermilk
1/2 cup melted unsalted butter
1 teaspoon vanilla extract
2 1/2 cups turbinado sugar (raw)

Steps:

  • For the cream cheese filling:.
  • Using a stand or hand mixer, or a whisk, blend all ingredients until smooth.
  • Place the filling in a piping bag or scrape it into a small bowl. Set the filling aside.
  • For the batter:.
  • Whisk together the flour, baking soda and salt and set aside.
  • In a large bowl, whisk together the brown sugar and egg yolks. Add the buttermilk, melted butter and vanilla and set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, whisk the egg whites until medium-stiff peaks form. You can also do this by hand.
  • Whisk the dry ingredients into the wet until smooth, then fold in the egg whites.
  • To make the waffles:.
  • Preheat a waffle iron to the medium heat setting.
  • Generously spray both sides of the iron with non-stick spray.
  • Sprinkle 3 to 4 tablespoons of raw sugar onto the bottom of the iron, then spoon a scant cup of batter evenly on top of the sugar.
  • If using a piping bag, pipe a swirl of the cream cheese filling on top of the batter.
  • If not using a piping bag, drop 4 generous tablespoons of filling randomly over the batter.
  • Sprinkle a tablespoon of raw sugar on top of the waffle and close the iron. Cook for 2 to 3 minutes until the top is golden brown and releases from the iron when opened.
  • Spray the top of the iron with non-stick spray and sprinkle the top of the waffle with another generous tablespoon of raw sugar. Close the lid and cook for 1 minute more or until the sugar has melted and formed a crust.
  • Remove the waffle from the iron and place on a cooling rack. Wipe down the iron and repeat with the remaining batter.
  • Serve with lightly sweetened whipped cream.

HOMEMADE CRèME BRûLéE RECIPE BY TASTY

Homemade Crème Brûlée Recipe by Tasty image

Here's what you need: heavy cream, vanilla extract, egg yolks, sugar, ramekins

Provided by Tucker Iida

Categories     Desserts

Yield 6 servings

Number Of Ingredients 5

4 cups heavy cream
2 teaspoons vanilla extract
6 egg yolks
1 cup sugar, half in mixture, half for crust
6 oz ramekins, 7 ounces (225 grams)

Steps:

  • Heat heavy cream and vanilla extract in a sauce pan until hot, but not boiling.
  • In a medium bowl, whisk egg yolks and half of sugar until well mixed. Pour in the hot cream gradually, mixing continually.
  • Pour hot water into a large roasting pan. Place six ramekins into the pan (the water should come roughly halfway up the sides of the ramekins).
  • Pour the egg mixture into the ramekins and bake at 325˚F (165˚C) for 45 - 50 minutes. The crème brûlée should be set, but still a little jiggly in the middle.
  • Remove the ramekins from the roasting pan, allow to cool to room temperature, cover with plastic wrap and refrigerate for at least two hours and up to three days.
  • Remove the crème brûlée from the refrigerator for at least 30 minutes before browning the sugar on top. Spread a tablespoon of sugar on top of each crème brûlée.
  • Using a torch, melt the sugar to for a crispy top. If you don't have a torch, you can broil the crème brûlée to melt the sugar. Keep an eye on it, to make sure you don't over cook it. Allow the crème brûlée to sit for at least five minutes before serving.
  • Enjoy!

IRISH CREAM CREME BRULEE

Irish Cream Creme Brulee image

This is a great twist on an excellent dessert! We first had this at the English restaurant at Epcot, and this is the recipe I came up with the recreate it.

Provided by Grace Gutberlet

Categories     World Cuisine Recipes     European     French

Time 6h25m

Yield 6

Number Of Ingredients 6

2 cups heavy cream
⅓ cup white sugar
6 egg yolks
1 teaspoon vanilla extract
3 tablespoons Irish cream liqueur
superfine sugar as needed

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Place 6 ramekins on a towel set in a roasting pan at least 3 inches deep.
  • Stir together cream and sugar in a saucepan over medium heat, and cook until very hot, stirring until the sugar dissolves. Whisk together egg yolks, vanilla, and Irish cream until combined. Slowly add 1/3 of the hot cream, whisking it in 2 tablespoons at a time until incorporated. Once you have incorporated 1/3 of the cream, you can stir in the remaining hot cream without fear of the mixture curdling.
  • Pour custard into the ramekins, then fill roasting pan with boiling hot water to come halfway up the sides of the ramekins. Bake in preheated oven until set, 50 to 60 minutes.
  • Once the custard has set, place ramekins on a wire rack, and allow to cool to room temperature, about 1 hour. Cover, and refrigerate until cold, about 4 hours. Custards may remain refrigerated until ready to serve.
  • Unwrap the custards, and sprinkle about 1 teaspoon of superfine sugar onto each. Gently shake the custards so the sugar coats the entire top surface, then tip the custards to a 45 degree angle and shake off excess sugar.
  • Using a small hand torch, melt the sugar by making short passes over top of the custards with the flame not quite touching. Continue melting the sugar until it turns deep brown. Once the sugar has melted and turned to caramel, the cold custard underneath will harden the sugar into a crispy crust. Serve immediately. Alternatively, the sugar-dusted custards may be browned underneath the broiler in the oven.
