2 cups white sugar
3 eggs
¾ cup grated Parmesan cheese
2 ½ tablespoons softened butter
1 ½ cups grated coconut
1 cup cornmeal
2 tablespoons all-purpose flour
1 tablespoon baking powder
1 pinch salt

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a 9-inch cake pan.
  • Combine milk, sugar, eggs, Parmesan cheese, and butter in a blender; blend until smooth, about 5 minutes. Add coconut, cornmeal, and flour; blend until creamy. Add baking powder and salt and blend until smooth. Pour into the prepared cake pan.
  • Bake in the preheated oven until top is golden brown and edges pull away from the sides of the pan, about 30 minutes.

Hoe Cakes were the first simple forms of corn bread in the South. Simple corn meal mixed with water and salt and then baked. Originally, Native Americans cooked these on hot rocks in an open fire. They were commonly referred to as Ash Cakes. Later, settlers from Europe adopted the recipe, cooking the cakes on the blades of their hoes in the fireplace. Slaves baked theirs on a plank or the cotton hoe on hot embers. This is where they get the name "Hoe Cake". Serve Hoe Cakes as bread or as a side item with dinner or as breakfast with butter and syrup.

2 cups yellow cornmeal
1 teaspoon salt
2 cups boiling water (may need a little extra)
bacon fat (or use butter or vegatable oil for frying)

Steps:

  • Put water on to boil. In a large cowl combine the cornmeal and salt. When the water boils, measure it in a metal or tempered-glass measuring cup and measure 2 full cups water. Pour the boiling water over the cornmeal and stir. The cornmeal will swell up, absorbing the water and making a very thick mash. Heat a very well oiled large skillet over medium high heat, re-oiling the pan after each batch. Scoop out about ¼ cup of hot mash and shape into a patty. Fry the cakes in hot oily skillet until brown & crispy on both sides.

  • Preheat oven to 340 degrees F (170 degrees C). Grease and flour a 10-inch round cake pan.
  • Blend cornmeal, sugar, milk, coconut milk, flour, eggs, and vegetable oil in a blender until smooth; add baking powder and blend to integrate. Pour the cornmeal mixture into the prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 40 minutes.

2 cups all-purpose flour, plus more for baking pan
1 cup granulated sugar
3 tablespoons honey
3 large eggs, room temperature
1/2 cup sour cream
1 1/4 cups yellow cornmeal
2 teaspoons baking powder
Pinch of table salt
1 tablespoon water
1/2 pint heavy whipping cream
2 cups blackberries

Steps:

  • Preheat oven to 375 degrees. Brush a 9-by-9-inch baking pan with butter. Sprinkle with flour; shake to coat. Tap out excess; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter, 3/4 cup sugar, and honey until fluffy, about 3 minutes. Add eggs one at a time. Beat until incorporated; do not overbeat. Add sour cream; mix to combine. Whisk together flour, cornmeal, baking powder, and salt. Add dry ingredients to batter; mix to combine. Scrape sides of bowl with a spatula; mix again.
  • Spread batter in prepared pan. Brush with water; sprinkle with remaining sugar. Bake until cake springs back when gently pressed in the center, about 30 minutes. Cool slightly on a wire rack. Whip cream. Cut cake into squares; split. Fill with cream and berries.

1/3 cup (80 ml) milk
1 large egg
2 tablespoons sugar
3 tablespoons coarse yellow cornmeal
2 teaspoons unbleached all-purpose flour
Pinch of sea salt
1 large apple, peeled, cored, and cut into thin slices

Steps:

  • 1. Preheat the oven to 450°F (230°C). Pour the melted butter into a 10-inch (25 cm) tart pan and swirl it around so it evenly covers the bottom.
  • 2. Heat the milk in a small saucepan over low heat until it is hot but not boiling. Keep it hot over very low heat.
  • 3. In a large bowl, whisk the egg with the sugar. Then whisk in the cornmeal, flour, and salt. Whisking vigorously, slowly add the hot milk, stirring until combined.
  • 4. Strew the apple slices over the surface of the tart pan. Whisk the cornmeal mixture again and pour it over the apples, shaking the tart pan if necessary, so that the batter evenly covers the surface. The apples slices will stick well above the batter. Bake in the center of the oven until the cake is deep golden on the edges and a lighter golden in the center, 15 to 20 minutes.
  • 5. When the corn cake is cooked, remove it from the oven and serve immediately, with salad alongside.
