CLASSIC SOUTHERN PECAN PIE
Easy recipe for classic Southern pecan pie

Steps:
- Preheat oven to 350°F
- In a mixing bowl combine granulated sugar, brown sugar, salt, corn syrup, vanilla extract, melted butter, eggs and flour together with a whisk or spatula.
- Add the pecans to the bottom of a store bought pie shell.
- Line a sheet pan with foil and place the pie plate on the sheet pan. This will help with spills and it's easier to handle transferring the pie in and out of the oven.
- Pour the filling mixture over the pecans.
- Place the pie into the oven and then cover with a piece of aluminum foil.
- Bake for 30 minutes covered. Remove the foil and bake an additional 20 minutes or until set.
- Remove from the oven and cool completely before serving. A pecan pie can be made ahead of time and refrigerated. Allow to come to room temperature before serving.

- Preheat oven to 400 degrees F (205 degrees C).
- Beat eggs slightly in medium bowl. Beat in sugar, and then blend in syrup, butter or margarine, vanilla, salt, and pecans. Pour filling into unbaked pie shell.
- Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking 35 to 40 minutes; the pie will be brown and slightly puffed.

You can decide how finely you want your pecans chopped to change up the presentation and amount of crunch in every bite. We usually go with very roughly chopped nuts for a great texture that complements the gooey filling perfectly, but finely chopped pecans make for a cohesive texture you might enjoy too! - Unfold 1 piecrust, and roll to press out fold lines. Fit into a 9-inch pie plate according to package directions; fold edges under, and crimp.
- Whisk together eggs and next 6 ingredients in a saucepan over low heat until well blended. Pour into piecrust; sprinkle with pecans.
- Bake at 350° on lower rack 30 minutes or until pie is set.

- Preheat oven to 325°. In a large saucepan, combine butter, sugar and corn syrup. Cook over medium-low heat until sugar is dissolved; cool slightly. In a large bowl, whisk eggs, bourbon, vanilla and salt; slowly whisk in sugar mixture. Stir in pecans; pour into crust., Place on a baking sheet. - 1. Preheat oven to 350 degrees. In a medium sauce pan, bring sugar and corn syrup to a slow boil and cook until sugar is dissolved, about 3 minutes. Turn heat off and add butter and stir until melted. Let mixture cool slightly.
- 2. In a large bowl, beat eggs with a fork until blended. Add cooked mixture to eggs and add vanilla. Mix well. Stir in pecans then pour ingredients into unbaked pie shell.
- 3. Bake in a 350 degree oven for 45 minutes or until pie crust is lightly browned. Take small piece of aluminum foil and wrap the edges of the pie crust to prevent it from getting too dark. (be careful as pie is still runny and is hot). Put back in oven and cook until pie is set or until a knife inserted into center of the pie comes out clean, about 20 more minutes.

- Preheat the oven to 375 degrees F. Unroll the piecrust and place in a 9-inch pie plate. Fold the overhang under and crimp the edge with a fork or your fingers. Bake the crust until light golden brown, about 10 minutes. Cool completely on a rack. (Leave the oven on.)
- Whisk the corn syrup, brown sugar, salt, butter and vanilla in a medium bowl. Lightly beat the eggs in a small bowl, then whisk into the corn syrup mixture.
- Finely chop 1/2 cup pecans and spread evenly over the piecrust. Roughly chop another
- 1/2 cup pecans and mix into the corn syrup mixture, then pour the filling into the crust. Arrange the remaining 1 cup pecans on top in a decorative pattern.
- Bake the pie until a knife inserted into the center comes out clean, 40 to 50 minutes. Cool completely on a rack. Serve with whipped cream, if desired.
