CREAMY SHRIMP AND TOMATO PASTA
Easy enough for a weeknight, but fancy enough for a dinner party, this Creamy Shrimp and Tomato Pasta is creamy and cheesy and so packed full of flavor.

Steps:
- Bring a large pot of water to a boil. Salt generously, then add the spaghetti. Cook until al dente. Before draining, reserve a mug full (at least a cup) of the pasta water.
- In a large skillet, heat 1 tablespoon of the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook another 30 seconds, until fragrant. Add the tomato sauce and the Italian seasoning. Bring to a bubble, then reduce the heat to a simmer. Let the sauce cook and reduce for about 10 minutes.
- Increase the heat slightly, and stir in the cream. Once the sauce is back to a simmer, add the cheese and stir until melted. Taste the sauce and season with salt and pepper, if needed.
- In another skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the shrimp and cook just until pink, 4-5 minutes.
- Add the cooked pasta to the sauce, along with the shrimp. Stir to combine, adding the starchy pasta water as needed to loosen the sauce. Serve, topped with parsley if desired.

CREAMY TOMATO AND SHRIMP PASTA WITH PEAS

- in a large chef's pan heat 2 tbsp of oil. Add all ingredients except parmesan, shrimp and pasta and cook on medium heat. In another skillet cook shrimp half way with the remaining olive oil. Add shrimp and parmesan to the creamy tomato mixture. simmer for 5 more minutes or until shrimp is fully cooked. Add the cook pasta and stir all ingredients together. Scoop into pasta bowls and top with basil and serve.

- In a 12 inch frying pan over medium high heat combine oil and garlic.
- When hot (sizzle) add shrimp and cook, stirring constantly until opaque in center-no more than 6 minutes.
- Lift out shrimp and set aside.
- Add to pan onion, tomatoes, pepper, broth, booze, and cream.
- Boil on high heat, uncovered, until reduced to about 1 1/2 cups, around 10 minutes.
- Add shrimp and stir until hot.
- Meanwhile cook pasta in water until done-around 8 minutes.
- Drain well.
- Add to cooked sauce and toss lightly.
- Offer shaved cheese and basil at the table.

Steps:
- Cook pasta in boiling, salted water until al dente.
- About a minute before the pasta is finished, add the frozen peas to the boiling water.
- Drain pasta and peas.
- Meanwhile, cook chopped onion in olive oil over medium heat until tender.
- Add diced tomatoes, basil, cream, salt and the pepper flakes.
- Stir and heat, but do not boil.
- Serve sauce over pasta.

- Put some salted water to boil and cook the pasta according to the packet instruction.
- Slice the onion and brown in a saucepan with olive oil and hot pepper. Then add chopped tomato and stir fry on a medium heat for a couple of minutes. Add sliced ham and mix. Pour the drained peas, cook for one minute and turn off the heat. Add the cream and the parmesan cheese.
- When the pasta is cooked, before draining, keep a cup of cooking water.
- Add the pasta to the pan, stirring over a medium heat until everything is tossing well (helping with some cooking water in case of need).

- In a large non stick skillet, heat 2 tablespoons olive oil. Pat shrimp dry, season with salt and pepper and add to pan. Cook for 1-2 minutes over medium heat on each side or until pink. Take out of pan and set aside, reserving some of the pasta water to add to sauce.
- Add garlic and onion to same pan over medium heat. Cook for about 5 minutes or until onions soft and fragrant. Add diced tomatoes to pan and cook together for 5-7 minutes. Add cup of frozen peas to sauce and gently stir to combine. Add shrimp, cooked and drained pasta to tomatoes along with a little pasta water if needed (if tomatoes cook too long they may become dry, the pasta water will fix this). Lower heat and add Boursin cheese to pan and gently toss to combine until sauce is creamy. Taste for salt and pepper. Serve with red pepper flakes and freshly grated Parmesan cheese.
