CREAMY SALMON PASTA SALAD
Fresh salmon and fresh veggies, that you probably have in your fridge, make up this easy salad. Fresh salmon takes approximately the same amount of time to cook as the pasta but go with canned if that's what you have on hand. Growing up by the sea, I've eaten a fair amount of salmon and pasta salad; this is a combination of many recipes that I've tried.

Steps:
- Melt butter in a medium pot over high heat. Add wine to the pot and allow half to cook off, 2 to 3 minutes.
- Cover the bottom of the pot with onion slices. Score the skin side of the salmon to prevent curling. Lay salmon on the onion slices, skin side up. Reduce heat to low and cook until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), 10 to 12 minutes. Remove salmon from the pot and let cool.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
- Meanwhile, place mayonnaise, white wine vinegar, celery salt, paprika, and pepper in a medium bowl. Stir well. Remove 1/2 of the dressing and refrigerate until serving.
- Drain macaroni and add to the bowl of dressing; turn to coat. Add celery, carrot, red pepper, peas, and green onions. Turn to coat. Remove skin from the salmon and cut into rough chunks. Add to the macaroni and stir gently. Chill for at least 2 hours.
- Add remaining dressing to the salad and toss. Taste and adjust salt, if necessary.

CREAMY SALMON MAC AND CHEESE
Take an ooey gooey smokey baked mac and cheese, and add some tender flaked salmon for a delicious meal; you could add your favorite steamed green veggie in there, or serve alongside a big green salad (because balance)! This is heavy on the gooey cheese and very rich - a little goes a long way! Change up the cheese if you want to try different flavors or combinations. Flavor will depend on the cheese you used, and how much seasoning you like!

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick cooking spray and set aside.
- Place salmon in a 2-quart baking dish and sprinkle with salt and pepper.
- Cook salmon in the oven for 10 to 11 minutes. Salmon will only be partially cooked; it will continue cooking later. Leave the oven on.
- While salmon cooks, bring a large pot of salted water to a boil. Add macaroni noodles and cook to al dente, 10 to 11 minutes. Drain and set aside.
- While noodles cook, place a large pan on the stove over medium-high heat and add butter, stirring occasionally as it melts. If the butter is browning, reduce heat. You want the butter just to melt, but not to start browning.
- Whisk flour into the melted butter. If it gets a little lumpy, just keep whisking until you have a smooth and creamy roux base. Cook the flour mixture for at least 1 minute, whisking regularly, and adjusting the heat if needed.
- Begin whisking milk and half-and-half into the roux, start with about half of the liquid. Whisk until well incorporated and smooth, then continue whisking in remaining milk and half-and-half until everything is well blended into the roux. Increase heat until mixture begins to bubble and thickens, then reduce heat and stir in the cheeses (reserve about 1/2 cup of grated cheese for the top). Whisk until smooth, thick, and creamy. Season with garlic powder, salt, and pepper.
- Stir the drained macaroni noodles into the cheese sauce; break the par-cooked salmon up into large chunks and add that to the pan as well. Stir gently to evenly distribute the salmon and coat all of the noodles in the sauce. Transfer to the prepared baking dish. Sprinkle with reserved grated cheese.
- Bake in the preheated oven until hot and bubbly, 25 to 30 minutes.

- Cook pasta in liberally salted water per manufacturer's instructions for al dente preparation.
- Drain pasta then rinse in cold water.
- Drain again then immediately add pasta to a large mixing bowl.
- Don't let it set and dry out, you want the pasta to still be on the moist side for the next step.
- Add parsley, garlic, salt, pepper and Dijon mustard to pasta and stir until well combined.
- Let pasta "marinate" in the seasonings for 15-20 minutes uncovered at room temperature.
- Doing this allows the pasta to soak up the flavors of the parsley, seasonings and mustard before adding the mayonnaise.
- Whip together mayonnaise and vinegar and set aside.
- Add onion, celery and mayonnaise mixture to pasta and stir until all ingredients are thoroughly combined.
- Cover and refrigerate 1-4 hours before serving.
- Before serving, mix well then add more salt to taste or mayo if desired.

- In a large stock pot boil pasta in water.
- After 7 minutes add the green beans, asparagus and broccoli.
- Drain and plunge into ice water to stop the cooking process.
- Drain well.

I have looked all over for a great macaroni salad; this one is it! It's easy and is a huge hit at every function I take it to. The sauce for this is a great creamy sauce. I like my salads to have a lot of creamy dressing, so I always make an extra half batch of the wet mix and add it as necessary to get the salad more wet because the pasta soaks up the sauce.

- Prepare dressing by whisking together the nine ingredients, and then chilling in the fridge until just before serving.
- Fill a large pot with water, adding a tablespoon of table salt for each gallon of water. Over medium-high heat, bring water to a boil and add pasta. Rinse and drain with cold water when cooked.

- You can either steam or roast the salmon, depending if you want to turn the oven on or not. To roast, heat the oven to 200C/180C fan/gas 6, place on a baking tray, drizzle with oil and roast for 12 mins until opaque and the flesh starts to flake when pressed. To steam, place the fillets skin-side down in a steamer, and steam over a pan of simmering water for 8-10 mins until cooked.
- While the salmon is cooking, boil the pasta for 10 mins until al dente, then drain, reserving 100ml of the pasta water.
- Heat the oil on a medium heat in a wide frying pan and fry the shallot for 6 mins until softened, but not turning golden. Add the garlic and fry for a minute more until fragrant. Add the wine, bubble for a few minutes until reduced by half, then add the cream and season well. Bring to a very gentle simmer.
- Flake the cooked salmon into big chunky pieces, leaving the skin behind. Add to the sauce with the cooked pasta. Add the lemon zest, a squeeze of the juice and most of the dill. Add a splash of the pasta water to the sauce to coat the pasta if you need to. Toss gently to keep the salmon in big pieces. Check the seasoning, if using double cream you may need a squeeze more lemon juice. Grind over some black pepper and scatter over the remaining dill. Serve with a green salad.
