Slow Cooker Creamy Ranch Pork Chops and Potatoes image

These pork chops literally fell apart when you cut into them and the extra sauce made a perfect gravy.

6 potatoes (diced into 1-inch cubes)
6 pork chops
2 cans cream of chicken soup ((2 10.5 ounce cans))
1 ranch dressing mix ((1 ounce packet))
1 cup milk
2 teaspoons parsley

Steps:

  • Spray your slow cooker with non-stick cooking spray and put potatoes on the bottom.
  • Place the pork chops on top of the potatoes.
  • Mix together the soup, ranch dressing mix and milk. Pour on top of the pork chops and cook on LOW for 6 hours.
  • Use the extra sauce in the slow cooker as a gravy for the potatoes and the pork chops.
  • Sprinkle with dried parsley.

Awhile back, my sister Elyse shared a tasty ranch pork roast recipe. I tweaked it so I could use what was already in my pantry, and this dish was born. -Kendra Adamson, Layton, Utah

2 pounds red potatoes (about 6 medium), cut into 3/4-inch cubes
1/4 cup water
6 boneless pork loin chops (6 ounces each)
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 cup 2% milk
1 envelope ranch salad dressing mix
Minced fresh parsley, optional

Steps:

  • Place potatoes and water in a large microwave-safe dish. Microwave, covered, on high for 3-5 minutes or until potatoes are almost tender; drain., Transfer potatoes and pork chops to a 4- or 5-qt. slow cooker. In a bowl, mix condensed soup, milk and salad dressing mix; pour over pork chops. Cook, covered, on low 4-5 hours or until pork and potatoes are tender (a thermometer inserted in pork should read at least 145°). If desired, sprinkle with parsley.

  • Place the potatoes in the bottom of a 6 quart slow cooker. Lay the pork chops on top of the potatoes.
  • In a large skillet, melt the butter. Whisk in the flour and cook for a minute or two. Slowly whisk in the broth, followed by the milk. Cook, stirring, until the mixture starts to thicken. Stir in the ranch seasoning and cook for a few more minutes, until the mixture is thick like gravy.
  • Pour the sauce over the pork chops. Cook on low for 6-8 hours, or until the potatoes are tender.
