A great make-ahead mashed potato recipe for holiday or weeknight dinners! These potatoes taste freshly prepared, but without any fuss or extra dishes at serving time.

6 cups water
2 pounds (4 cups) peeled potatoes, cut into 1-inch pieces
1/2 teaspoon salt
1 cup milk
1/3 cup sour cream
1 tablespoon dry ranch salad dressing mix
1/8 teaspoon salt
2 tablespoons Land O Lakes® Butter

Steps:

  • Combine water, potatoes and 1/2 teaspoon salt in 4-quart saucepan. Cook over high heat until water comes to a boil. Reduce heat to low. Cover; cook 10-12 minutes or until potatoes are fork tender. Drain.
  • Mash potatoes with potato masher or electric mixer, gradually adding 2/3 cup milk. Stir in sour cream and dressing mix.
  • Spread potatoes evenly into 1 1/2-quart casserole. Pour remaining milk over potatoes. Do not mix. Dot with butter. Cover; refrigerate 4 hours or overnight.
  • Heat oven to 400°F.
  • Bake uncovered 20 minutes; stir. Continue baking 20-30 minutes or until heated through.

4 medium baking potatoes, peeled and cut into chunks (about 2 pounds)
3/4 cup milk
1 (1 ounce) envelope ranch dressing mix
1/2 cup sour cream
1/4 cup milk
2 tablespoons butter

Steps:

  • In 3-quart saucepan, cover potatoes with water.
  • and bring to a boil.
  • Reduce heat to low and simmer 20 minutes or until potatoes are fork tender, drain.
  • Combine 3/4 cup milk and ranch dressing mix.
  • Mash the potatoes gradually adding the milk mix.
  • Stir in the sour cream and spoon the potatoes into a 1 1/2 quart baking dish.
  • Pour 1/4 cup milk over the potatoes, dot with butter, cover and refrigerate for 4 hours or overnight.
  • To serve, bake the potatoes (uncovered) at 400°F.
  • for 20 minutes.
  • Stir and bake another 25-30 minutes or until heated through.

10 medium russet potatoes, peeled and halved
1/2 cup butter, cut into cubes
1 (8 ounce) package cream cheese, cut into cubes and softened
1 cup sour cream
1 (1 ounce) hidden valley dry ranch dressing mix (start with 1/2 package adding in more to taste)
milk (optional and as needed for extra creaminess, or use whipping cream) (optional)

Steps:

  • Cook the potatoes in boiling water until fork-tender; drain and place in a large bowl.
  • To hot potatoes add in cubed butter, cream cheese, sour cream and 1/2 package dry dressing mix; at low speed using an electric mixer beat until until the potatoes are semi chunky (low speed only to start as the potatoes are hot).
  • Continue beating at HIGH speed until the potatoes are smooth and very fluffy.
  • At this point do a taste-test if you desire a more stronger ranch flavor then add in more dry dressing mix until desired flavor is achieved, you may also add in milk or whipping cream for a more creamy taste (start with a small amount and add in more).
  • TO MAKE AHEAD; spread the potato mixture into a greased 13 x 9-inch pan and refrigerate up to 1 day, remove from fridge about 1 hour before baking, then set oven to 350°F and bake uncovered for 30 minutes or until hot.

¾ cup water
2 tablespoons butter or margarine
1 package (1 oz) ranch salad dressing and seasoning mix (milk recipe)
1 cup sour cream
1 box (7.2 oz) Betty Crocker® homestyle creamy butter mashed potatoes
4 slices bacon, cooked, crumbled
2 tablespoons thinly sliced green onions

Steps:

  • 1.) In 3-quart saucepan, heat milk, water and butter to boiling. Stir in ranch dressing mix and sour cream; beat until smooth. Stir in 3 slices of the bacon and both pouches of potatoes just until moistened; let stand 1 minute. Stir with fork until smooth.
  • 2.) Spoon potatoes into serving dish. Top with remaining crumbled bacon and the green onions.
  • * Make potatoes your way! Toss in your favorite shredded cheese.

3 pounds russet (Idaho) potatoes, scrubbed but unpeeled
1 ½ cups half and half, plus extra if necessary
Salt, to taste
6 tablespoons butter, softened

Steps:

  • Place potatoes in a large pan with water to cover. Bring to a boil. Reduce heat and simmer, covered, until tender when pierced with a thin-bladed knife, 20 to 30 minutes.
  • Heat half and half in microwave.
  • Process unpeeled potatoes through a food mill into a medium bowl. (Or, using a potholder, peel and drop them into a bowl. Puree using a potato masher or standing mixer fitted with the paddle attachment.) Stir in half and half and a sprinkling of salt (or beat, if using mixer) until smooth and fluffy. (Can be cooled and refrigerated in an airtight container up to 2 days.)
  • Thirty minutes before serving, microwave until warm. Transfer to a heatproof bowl set over a pan of simmering water. Stir in butter to melt. Cover with plastic wrap. Keep warm until serving time.

What a time saver when you are having a big dinner. They can even be done 2 days before. You will make these again and again! 40 minutes prep time is also boiling time for the potatoes.

1/4 cup onion, chopped fine
