Creamy Spinach & Tomato Linguine image

Creamy Spinach & Tomato Linguine is a fantastic weeknight meal that you can throw together in a cinch, but looks like you spent hours in the kitchen! The wonderful flavors marry so well together. Tastes great with a slice of your favorite bread!

1 9-oz pkg. refrigerated fresh linguine
3 tbsp. cream cheese (softened)
1/4 c. pesto
Fresh grated lemon rind of 2 medium lemons
1 tbsp. fresh lemon juice
1/2 tsp. salt
1/4 tsp. pepper
4 c. baby spinach leaves
1 pint cherry tomatoes (halved)
2 tbsp. grated Parmegiano-Reggiano cheese

Steps:

  • Cook pasta according to package directions, omitting salt & oil. Drain pasta in a colander over bowl, leaving 1 c. cooking liquid in pan. Return to stove on medium heat.
  • In a small bowl, mix together cream cheese, pesto, lemon juice, lemon rind, salt, and pepper. Add pasta and cream cheese mixture to pan; cook 1 minute, stirring constantly.
  • Stir in spinach; cook two minutes until spinach wilts.
  • Add tomatoes. Remove pan from heat. Sprinkle evenly with cheese. Serve immediately.

Linguini With Creamy Spinach image

This makes a wonderful meatless main dish or a side dish. I adopted this recipe from Recipezaar in August 2006. I've since made this for my family and they loved it; however, I did made one minor change to the recipe. The original recipe did not call for garlic, but I felt it would have been bland without it. --NOTE-- Frozen spinach can be used. Just thaw, rinse and squeeze water from spinach very well before adding to the skillet of butter.

1 (10 ounce) fresh spinach, prewashed and drained
2 tablespoons butter
3 green onions, chopped
2 garlic cloves, minced
3/4 lb dried linguine
5 ounces cream cheese, cut into cubes
2 tablespoons chopped fresh parsley
3/4 teaspoon salt
1/4 cup grated parmesan cheese
1/2 teaspoon fresh ground black pepper

Steps:

  • Remove any tough stems from the fresh spinach.
  • In large frying pan, melt butter over low heat.
  • Add green onions and garlic and cook for 1-2 minutes.
  • Add spinach and salt and stir until wilted.
  • Simmer until liquid evaporates from spinach, about 5 minutes.
  • In large pot of boiling water, cook linguini according to package directions.
  • Reserve 1 cup of pasta water.
  • Drain linguini and toss with 3/4 cup of pasta water, spinach mixture, cream cheese, parsley, and ground pepper.
  • If sauce seems too thick, add the rest of the reserved pasta water, otherwise you can throw out the remaining 1/4 cup pasta water.
  • Salt to taste.

This can be served with shrimp if you want to dress it up a little, but my husband and I love it as is. Simple, incredibly fast and delicious. It tastes like restaurant quality at home!

8 ounces linguine
10 ounces Baby Spinach
1 tablespoon butter
2 minced garlic cloves
3/4 cup heavy cream
2 tablespoons tarragon
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup parmigiano-reggiano cheese

Steps:

  • Cook linguine as per package.
  • Just before pasta is finished, stir in spinach.
  • Drain.
  • Melt butter in saucepan and stir in cream, tarragon, salt and pepper.
  • Bring to a boil.
  • Add pasta and spinach; toss with cheese.
  • Sprinkle additional cheese on top and serve.

1/2 lb. whole grain linguine, uncooked
2 Tbsp. olive oil
1 head cauliflower, cut into small florets (about 4-1/2 cups)
1 small onion, chopped
2 cloves garlic, chopped
1/2 tsp. crushed red pepper
2 pkg. (6 oz. each) baby spinach leaves
1 can (15.5 oz.) great Northern beans, drained
3/4 cup vegetable broth
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
1/3 cup coarsely chopped walnuts, toasted
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta in Dutch oven or large deep skillet as directed on package, omitting salt. Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add cauliflower and onions; cook 15 min. or until onions are caramelized, stirring occasionally. Add garlic and crushed pepper; cook 1 min., stirring frequently. Add spinach; cover. Cook 5 min. Stir in beans; cook, covered, 2 min. or until spinach is wilted and beans are heated through.
  • Drain pasta; cover to keep warm. Cook broth and Neufchatel in Dutch oven 1 min. or until Neufchatel is completely melted and sauce is well blended, stirring frequently. Remove from heat.
  • Add pasta; toss to coat. Stir in cauliflower mixture. Serve topped with nuts and Parmesan.

Creamy mushroom & spinach pasta image

Toss together tagliatelle, mushrooms and spinach in a parmesan and crème fraîche sauce to make a quick and low calorie dinner that takes just 25 minutes

2 tbsp olive oil
1 small onion, finely chopped
150g baby mushrooms, halved
150g tagliatelle
2 garlic cloves, crushed
200g low-fat crème fraîche
15g parmesan or vegetarian alternative, grated
120g baby spinach
½ tsp chilli flakes (optional)

Steps:

  • Heat the oil in a medium saucepan over a medium heat and fry the onion and mushrooms for 10 mins, or until softened and browned slightly. Meanwhile, cook the pasta following pack instructions.
  • Add the garlic to the pan with the mushrooms and cook for 2 mins more. Tip in the crème fraîche and parmesan, stir to combine, then add the baby spinach. Set aside.
  • Remove the pasta from the heat and drain, reserving 25ml of the water. Toss the pasta in the creamy mushroom sauce, put back on the heat and cook over a low heat until the spinach wilts, about 5 mins. Pour in enough of the reserved water to loosen slightly. Season with black pepper and finish with a sprinkle of chilli flakes, if you like.
