CREAMY EGG SALAD WITH CAPERS

- In a large bowl combine chopped hard boiled egg, mayo, mustard, celery, capers, salt and pepper. Gently stir until thoroughly combined. Serve on toasted bread of choice (bagels, rye, flatbread crackers are all my favorite) along with sliced tomato, sliced red onion and capers sprinkled on top.

Steps:
- Cut hard-boiled eggs in half, removing egg yolks from egg whites.
- Combine egg yolks, mayonnaise, cream cheese, parsley, chives, dill, mustard, paprika, and salt in a food processor. Blend until creamy and mixed well together, adding more mayonnaise if consistency is too thick.
- Coarsely chop egg whites and place in a medium bowl, add egg-herb mixture, and mix with a spoon.

- In a medium bowl, mash the egg yolks with the back of a spoon or fork until smooth. Mix in the mustard, then the oil and lemon juice. Add more oil if your mixture isn't creamy or smooth enough for you (remember, this is going to be the binding substance taking the place of mustard). Once you have the desired consistency, stir in the dill, salt, pepper, and garlic. Adjust seasonings to taste.
