6 cups small cauliflower florets (about 1 head)
4 slices OSCAR MAYER Bacon, cut into 1/2-inch pieces
3 cloves garlic, sliced
2 cups cavatappi, uncooked
1 cup fat-free reduced-sodium chicken broth
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 Tbsp. chopped fresh sage, divided
1/2 cup KRAFT Shredded Parmesan Cheese

Steps:

  • Heat oven to 450ºF.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Combine cauliflower, bacon and garlic; spread onto prepared baking sheet. Bake 18 to 22 min. or until cauliflower is tender and bacon is crisp, stirring after 12 min.
  • Meanwhile, cook pasta in large saucepan as directed on package, omitting salt.
  • Drain pasta; cover to keep warm. Cook broth and cream cheese in same saucepan on medium heat 3 to 5 min. or until cream cheese is completely melted and sauce is well blended, stirring frequently. Stir in 2 tsp. sage.
  • Add pasta to sauce; stir until evenly coated. Add cauliflower mixture and Parmesan; cook 2 to 3 min. or until heated through. Spoon into serving bowl; sprinkle with remaining sage.

The first time I made this rich side dish for a big family meal, it was an instant hit. When everyone had eaten their fill, there was a lively discussion on who would be the lucky one to take home the leftovers.

1 medium head cauliflower (about 1-1/2 pounds), broken into florets
2 garlic cloves, minced
6 tablespoons butter, cubed
2 tablespoons all-purpose flour
1-1/2 cups 2% milk
4 bacon strips, cooked and crumbled
1/4 teaspoon salt
1/8 teaspoon pepper
Dash cayenne pepper
1 cup shredded Swiss cheese

Steps:

  • In a large saucepan, bring cauliflower and 1 in. of water to a boil. Reduce heat; cover and cook for 6-7 minutes or until crisp-tender. Drain well; set aside. , In another saucepan, saute garlic in butter for 1 minute. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat; stir in the cauliflower, bacon, salt, pepper and cayenne. Pour into a greased 1-1/2-qt. baking dish. Sprinkle with cheese. , Bake, uncovered, at 400° for 15-20 minutes or until cheese is melted.

6 cups uncooked cavatappi or spiral pasta
3 garlic cloves, minced
1/3 cup butter
1/4 cup all-purpose flour
1 tablespoon hot pepper sauce
4 cups 2% milk
6 cups shredded sharp cheddar cheese
1 cup cubed Velveeta
3 green onions, chopped
TOPPINGS:
1/2 cup panko bread crumbs
3 thick-sliced bacon strips, cooked and coarsley crumbled
1 tablespoon butter, melted
1 green onion, chopped
Coarsely ground pepper, optional

Steps:

  • Cook cavatappi according to package directions., Meanwhile, saute garlic in butter in a Dutch oven. Stir in flour and pepper sauce until blended; gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes., Stir in cheeses until melted; add green onions. Drain cavatappi; stir into cheese mixture., Transfer to a greased 13x9-in. baking dish. Combine the bread crumbs, bacon and melted butter; sprinkle over top., Bake, uncovered, at 350° until bubbly, 20-25 minutes. Sprinkle with green onion and, if desired, pepper.
