Creamy Avocado, Coconut, Lime Ginger Pops! image

Check out this creamy treat that's good for you! A healthy way to satisfy your sweet tooth but not to sweet and cools ya off! If you want to make an adult version go ahead and add the coconut rum for yummier eats! ;)

Number Of Ingredients 10

1 cup thai unsweetened coconut milk (Can well shaken before opening)
1/2 cup fresh lime juice
1 tablespoon lime zest
1 cup mashed fresh avocado (1 1/2 avocados)
1 teaspoon minced fresh ginger
4 tablespoons maple syrup
1/2 teaspoon coconut extract
1/2 teaspoon minced cilantro (optional) or 1/2 teaspoon lime basil (optional)
1/8 teaspoon himalayan salt
1/4 cup coconut rum (optional)

Steps:

  • Blend all ingredients till smooth and creamy.
  • Taste and add more syrup if desired.
  • Pour onto pop containers and place tops on.
  • Freeze at least 4 hours.
  • Enjoy as is or dip into melted chocolate with a touch of butter for a even more decadent treat!
  • After dipping may need to refreeze to harden.

1 1/2 ounces light rum (Malibu is good, extra coconut flavor!)
3/4 ounce coconut syrup (like the stuff you put into coffee drinks)
1/2 ounce fresh squeezed lime juice
1 ounce light cream
lime wedge

Steps:

  • Add all ingredients together, except the lime wedge, to a cocktail shaker filled with ice cubes.
  • Shake vigorously until blended.
  • Or Whizz up in a blender.
  • Strain mixture into a cocktail glass.
  • Squeeze lime wedge into the drink and toss it in.

  • In a medium saucepan, off heat, mix together sugar, salt and cornstarch. Gradually whisk in coconutmilk, mixing until ingredients are dissolved. Whisk in egg yolks.
  • Cook over medium heat, whisking constantly until you see it barely begin to bubble. Reduce heat to low and continue to whisk and cook for 1 minute, until thickened a little. Remove from heat. Stir in vanilla.
  • In a food processor or blender, puree the avocado and lime juice together. Pour the coconut mixture into processor or blender and puree until completely combined and smooth. Taste and add sweetener if needed.
  • Divide mixture among popsicle molds. Chill in refrigerator for one hour and then insert the popsicle sticks, then place in freezer for at least 4 hours, until frozen solid.
