This is like creamed spinach, only you add the mushrooms too. So good! This can be made gluten free and dairy free.

1 bunch spinach (or other greens) or 1 bunch swiss chard (or other greens)
2 -4 tablespoons refined coconut oil (or olive oil but NOT EVOO) or 2 -4 tablespoons butter, divided (or olive oil but NOT EVOO)
1 small onion, chopped
2 cups mushrooms, sliced (preferably bellas)
1/4 cup flour or 1/4 cup gluten-free flour
4 ounces cream cheese, room temperature (or tofutti better than cream cheese)
1 cup coconut milk or 1 cup almond milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Steps:

  • Steam the greens (remove from the stem, if applicable, and tear in to bite size pieces) in a steamer until tender. Should only take a few minutes.
  • Meanwhile, melt 2 T of oil in a large skillet (I use a cast iron one) and saute the onions and mushrooms until soft. Remove to a platter.
  • If you need more oil, add up to 2 tablespoons more. Add the flour and stir until thick and slightly browned. Add the cream cheese and stir, breaking up until it is mixed into the flour mixture.
  • Add the coconut milk and seasonings and stir until combined and thick.
  • Add back in the reserved mushrooms and onions and the greens. Stir and warm through.

1 bunch swiss chard
1 teaspoon olive oil
2 cloves garlic (minced)
½ cup heavy cream
¼ teaspoon seasoned salt (or to taste)
¼ teaspoon black pepper

Steps:

  • Wash chard and dab dry. Separate stems from the leaves.
  • Cut stems into ½" slices. Chop leaves into large 1" pieces.
  • Heat olive oil in a large skillet. Add garlic and cook until fragrant, about 30 seconds.
  • Add stems and cook 3-4 minutes or until tender-crisp.
  • Stir in heavy cream, seasoned salt & pepper and simmer until slightly thickened, about 3 minutes.
  • Add leaves and cook until wilted, 2-3 minutes more. Season with salt & pepper to taste.

Baked Eggs With Creamy Greens, Mushrooms, and Cheese Recipe image

Three kinds of leafy greens combine with mushrooms, garlic, leeks, mustard, and spices to form the base for a baked-egg dish that's a bit like an omelette turned inside out. It's an ideal recipe for brunch, or really any meal of the day.

Kosher salt
1 large bunch lacinato kale, tough stems removed, leaves roughly chopped (about 6 ounces; 180g after stemming)
1 large bunch Swiss chard, tough stems removed, leaves roughly chopped (about 7 ounces; 200g after stemming)
5 ounces (140g) baby spinach
3 tablespoons (45g) unsalted butter, divided
8 ounces (225g) button or cremini mushrooms, stems trimmed and caps sliced
Freshly ground black pepper
2 leeks, white and light green parts only, washed well and thinly sliced (about 9 ounces; 250g total)
3 medium cloves garlic, 2 minced or grated and 1 left whole for toast, divided
2 tablespoons (45g) all-purpose flour
1 cup (235ml) half and half
1/2 cup (120ml) milk
3 tablespoons (45ml) dry white wine
1/8 teaspoon freshly grated nutmeg
2 teaspoons (10ml) Dijon mustard
3/4 cup grated Gruyère cheese (2 1/2 ounces; 75g)
4 to 6 large eggs
Pinch of red chili flakes, for garnish
4 to 6 slices toasted and buttered bread, such as from a baguette

Steps:

  • Preheat oven to 375°F (190°C). Bring a large pot of salted water to a boil. Working in batches if necessary, add kale, chard, and spinach to pot and cook for 1 minute. Using a spider or strainer, lift greens from water and transfer to a colander. Immediately run under cold water to stop the cooking. Repeat with remaining greens if necessary. Using your hands, squeeze greens to remove as much excess liquid as possible. Roughly chop greens and set aside. You should have about 10 1/2 ounces (300g) of cooked, squeezed greens.
  • In a large skillet, melt 1 tablespoon (15g) butter over medium-high heat until foaming. Add mushrooms and cook, stirring only occasionally, until well browned, about 6 minutes. Season with salt and pepper, then transfer to a plate.
  • Add remaining 2 tablespoons (30g) butter to skillet and melt over medium-high heat until foaming. Add leeks and cook, stirring often, until softened but not browned. Stir in minced garlic and cook 30 seconds. Sprinkle flour over leeks and cook, stirring, until raw flour smell has cooked off, about 1 minute. Stir in half and half and milk. Bring to a simmer and cook until sauce thickens, 1 to 2 minutes. Stir in wine, nutmeg, mustard, reserved mushrooms, and reserved greens and return to a simmer. Season with salt and pepper. Remove skillet from heat. If mixture is very thick, add a bit more water or milk to thin slightly (this will depend on how much water you squeezed out of the greens). You should have about 4 cups of creamed greens.
  • If baking in the same skillet, sprinkle Gruyère on top of greens. (You can also divide greens into smaller individual skillets or baking dishes.) If using a baking dish, scrape creamy greens into it, smooth into an even layer, and sprinkle Gruyère on top.
  • Using a spoon, make egg-sized indentations in greens, one for each egg. Crack an egg into each well and season with salt. Bake until egg whites are just set and yolks are still runny, 10 to 20 minutes. Check eggs frequently to make sure they don't overcook. Remove from oven and sprinkle a pinch of red chili flakes over each egg.
  • While toast is still warm, gently rub one side of each slice with remaining clove of garlic. Serve, using toast to scoop up greens and eggs.

This dish is an easy, tasty way to get your veggies and enjoy them too! I created this recipe when I needed a side dish and wanted something more exciting than plain spinach. The mushrooms, garlic, and cheeses add a ton of flavor without a ton of calories.

1 teaspoon olive oil
2 cups baby spinach leaves
2 medium baby bella mushrooms, sliced
½ teaspoon garlic powder
1 pinch red chili pepper flakes
salt and ground black pepper to taste
2 tablespoons grated Parmesan cheese
1 tablespoon reduced-fat cream cheese

Steps:

  • Preheat a large skillet over medium heat. Add oil and heat until shimmering. Add spinach and mushrooms; cook and stir until spinach is almost completely wilted and mushrooms are cooked, 3 to 4 minutes.
  • Add garlic powder, pepper flakes, salt, and pepper; stir to combine. Add Parmesan cheese and cream cheese and stir until completely incorporated.

In an ode to her Black, Mexican and Haitian backgrounds, the chef Rahanna Bisseret Martinez created this recipe, which honors one of the Americas's most important ingredients: corn. Corn grits cooked with unsweetened oat-milk cream act as a base for tender swiss chard leaves, pickled chard stems and mushrooms. Soaked then caramelized in a jalapeño sauce, the mushrooms create layers of varying textures along with the greens. This dish can be served on its own as a hearty one-plate vegan meal, or alongside a main dish or with a crisp and lightly dressed green salad.

1 cup grits, preferably organic (see Tip)
1/4 cup unsweetened oat-milk cream (or coconut, nut or soy cream)
1 tablespoon olive oil
1 tablespoon kosher salt (Diamond Crystal)
1/4 unpeeled yellow onion
1 jalapeño
3 unpeeled garlic cloves
1 teaspoon lemon juice
1 tablespoon olive oil, plus more as needed
1/3 cup chopped cilantro
8 ounces maitake or cremini mushrooms
1 bunch rainbow chard
3 tablespoons neutral oil, such as grapeseed, avocado or canola
Salt and pepper
1 jalapeño
1 cup distilled white vinegar
1 garlic clove
1/4 yellow onion
2 tablespoons granulated sugar or maple syrup

Steps:

  • Make the grits: Cook the grits with water according to the package instructions in a large, heavy-bottomed pot, stirring occasionally and adding more water if needed to ensure no grits stick to the pot. The cook time can range from 30 minutes to 2 hours, depending on the age and quality of the grits. When the grits are tender, remove from the hot burner and pour in the oat cream, oil and salt, stir well, and cover. (If you cooked the grits with salt, then start with 1 teaspoon and add more to taste.) Set aside.
  • Meanwhile, make the sauce: Heat a cast-iron skillet over medium. Once heated, add the onion quarter, jalapeño and garlic cloves. Char and slightly cook the vegetables, turning occasionally. The garlic will likely be done first, after 4 or 6 minutes. Place each item in a bowl when charred and cover with a lid.
  • When the charred vegetables are cool to the touch, remove the outer skin of the onion, the jalapeño stem and the garlic peels. If you are very sensitive to spice, slice the jalapeño in half lengthwise and remove one half's seeds and white veins to make it much milder.
  • In a blender or mini food processor, blend the onion, jalapeño and garlic with the lemon juice, olive oil and cilantro until smooth. Add more olive oil if needed to blend, 1 tablespoon at a time. Clean the mushrooms with a damp towel and break apart or cut at the stem into 2-inch pieces. Place the mushrooms in a bowl and pour the jalapeño sauce on top; let sit for at least 15 minutes.
  • Make the chard: Place the chard shiny side down on a cutting board and slice the stems and ribs away from the green leaves. Stack the leaves in a pile and cut crosswise into thin strips. Transfer to a bowl, toss with 2 tablespoons oil, and season with salt and pepper.
  • Cut the chard stems into 2-inch-long matchsticks. In a medium saucepan, combine 1 cup water with the jalapeño, vinegar, garlic, onion and sugar, and bring to a boil. Remove the pan from the heat, add the chard stems and let sit, uncovered, for at least 10 minutes.
  • Heat a medium cast-iron skillet over medium, add the chard leaves and cook, using tongs to move them around quickly in order to keep their bright green color, 1 to 2 minutes. Transfer to a bowl and set aside.
  • In the same skillet, add the remaining 1 tablespoon oil and swirl to coat the bottom of the pan. Set over medium-high heat. Shake excess sauce off the mushrooms back into the bowl; too much sauce will cause them to steam instead of sear. Add the mushrooms to the hot oil, and cook until tender and caramelized, 2 to 5 minutes per side.
  • To serve, spoon the grits onto a large platter and top with the chard, mushrooms and pickled stems.
