CREAMY CHANTERELLE MUSHROOMS WITH BACON
When you can find fresh chanterelles, this recipe is a must. Chanterelle mushrooms are sauteed with bacon and onion, then combined with sour cream and finished with freshly chopped parsley. Serve over toast or grilled ciabatta for a luxurious starter or light main.

Steps:
- Heat a skillet over medium-high heat and cook bacon until crisp, about 3 minutes. Add onions and cook until soft and translucent, about 5 minutes. Add chanterelle mushrooms, cover pan, and cook until mushrooms are soft, about 15 minutes.
- Stir together sour cream and flour. Add sour cream mixture to mushrooms and season with salt and pepper. Mix to combine and cook until cream is hot, about 1 minute. Stir in chopped parsley right at the end.

I got this recipe from Chef Jason Alley while taking a class on Southern Cooking on a cruise. I have made this at home several times and always LOVE it, posting it here not only to share but also so I don't lose the recipe again!

Steps:
- Heat the butter in a saute pan over medium hest until it begins to froth.
- Add onions and chanterelles, and cook untill the onion is translucent.
- Deglaze the pan with the wine and reduce by half.
- Add cream.
- Reduce cream by half, add corn and cook 8-10 minutes.
- Season ith salt and pepper, garnish with chives to serve.

- Heat a few tbsp of oil in a 8 inch or so saute pan until it is lightly smoking . Add the chanterelles and cook on high heat without seasoning until they are lightly golden on the edges. When they have some color, add the shallot and cook for a minute, then add the corn, salt and sugar. Add the wine and cook until evaporated.
- After the stock is reduced add the cream, reduce until lightly thickened, adjust the seasoning until it tastes good to you. Finish with the herbs, and serve.
