Easy Creamy Porcupine Meatballs image

Most people make these in tomato soup. I had started making it one day before I realized I didn't have any tomato soup - so I tried it with Campbells Cream of Celery soup... it was wonderful! You can also use Cream of Mushroom soup. Makes it creamy and yummy. I won't go back to tomato sauce... I also stir in a can of green beans at the end of cooking...it's like meatballs AND green bean casserole. Yum.

1 lb ground beef
1/2 cup Minute Rice
1/4 cup water
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/2 teaspoon salt
2 (10 3/4 ounce) cans Campbell's condensed cream of celery soup
1 cup milk

Steps:

  • In a large pot, heat Cream of Celery soup and milk on medium heat.
  • Mix ground beef, rice, water, onion powder, salt and pepper until combined.
  • Form into 1 inch balls
  • Drop into soup.
  • Cover and simmer on medium low for about 45 minutes.

1/2 cup uncooked long grain rice
1/2 cup water
1/3 cup chopped onion
1 teaspoon salt
1/2 teaspoon celery salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder
1 pound ground beef
2 tablespoons canola oil
1 can (15 ounces) tomato sauce
1 cup water
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce

Steps:

  • In a bowl, combine the first seven ingredients. Add beef and mix well. Shape into 1-1/2-in. balls. In a large skillet, brown meatballs in oil; drain. Combine tomato sauce, water, brown sugar and Worcestershire sauce; pour over meatballs. Reduce heat; cover and simmer for 1 hour.

This afternoon I was trying to decide what to make for dinner, and suddenly I found myself craving good old porcupine meatballs. But I couldn't make plain meatballs, no sir! Here's the recipe I made up, and it came out wonderfully well. An adult update of one of our childhood favorites. Very tasty!

2 lbs lean ground beef (or 1 pound beef and 1 pound ground turkey)
1 cup uncooked rice (converted rice suggested)
1/2 cup finely chopped onions or 1/4 cup dried onion flakes
2 eggs, beaten
2 tablespoons Worcestershire sauce
2 teaspoons Dijon mustard
2 teaspoons salt, divided
1/2 teaspoon garlic powder
1 (10 3/4 ounce) can condensed cream of mushroom soup
3/4 cup water
1/2 cup vodka (or an additional 1/2 cup water)
1/8 teaspoon white pepper
1/4 teaspoon ground caraway powder (see note below)

Steps:

  • Combine the beef, rice, onion, egg, Worcestershire sauce, mustard, 1 1/2 teaspoon salt, and garlic powder in mixing bowl.
  • Form into 1 1/2-inch balls and place in a lightly-buttered 2 1/2-quart casserole.
  • Combine soup, water, vodka, remaining 1/2 teaspoon salt, white pepper, and ground caraway in a saucepan; bring to a boil.
  • Pour sauce over meat balls, cover, and bake at 350 degrees F for 1 hour.
  • Makes 6 servings.
  • Note: To make caraway powder, use a mortar and pestle to crush caraway seed into powder. Also, don't use a pearl or other thick rice for this, or it won't cook well inside the meatballs - converted rice (not "instant") is what I use.

1 egg
1/2 cup water
1 (2 ounce) envelope Lipton Onion Soup Mix
1 lb ground beef
1/2 cup rice
1 (46 ounce) can tomato juice
1 teaspoon sugar

Steps:

  • Beat egg slightly with water and 2 tablespoons of soup mix.
  • Mix lightly with ground beef and 1/4 cup of the rice.
  • Shape into balls.
  • Roll remaining 1/4 cup of rice pressing tightly into meat.
  • Heat tomato juice to boiling and stir in remaining onion soup mix and sugar; reduce heat to simmer.
  • Place meat balls in saucepan of tomato juice and cover.
  • Simmer, stirring occasionally, 50 minutes or until rice puffs out around meat.

Great recipe as a main dish with pasta or mashed potatoes, green beens and peach cobbler; or simply make small insert toothpicks as appetizers with sauce on the side. This is good with other ground meats as well. Chicken, pork or lamb.

1 lb lean ground beef or other meat
1/2 c uncooked rice, not instant
2 Tbsp bell green pepper, chopped
1 Tbsp onion, chopped
1/4 tsp black pepper
1 tsp seasoned salt
10 oz can tomato soup
1 c evaporated milk or water
2 Tbsp butter, melted

Steps:

  • 1. Combine beef, rice,green pepper,onion,pepper and salt together thoroughly. Shape into the size balls you want to serve. Place in a heavy skillet;,sprayed with non stick canola oil. Brown well on all sides. Combine in a bowl the soup, milk and butter and pour over meatballs. Cook over high heat until steaming, then turn to low heat and simmer for about 25 minutes.
  • 2. Note: You will want to make a bigger batch of these , they go fast and are excellent the next day and they freeze well after made.

My mom gave me this recipe years ago. It's not your typical porcupine balls made with tomato sauce. Meatballs made out of ground chuck have onions and rice in them and cream of celery soup poured over the meatballs and baked in the oven. I like these with mashed potatoes and a side of green beans. Good ole comfort food!

  • Mix ground beef with onions, salt, pepper, worcestershire sauce and rice and form into balls. Place balls in a baking dish.
