CLASSIC PATTY MELT
A quick, easy, and basic recipe for patty melts. I used Jewish rye bread but any bread will work as long as it's rye. I double the cheese but feel free to use 1 slice per patty melt.

Steps:
- Season ground beef with salt and pepper and divide into 3 equal-sized balls. Shape each ball as close as possible to the shape of the bread. Make an indentation in the center of each patty with your thumb.
- Melt butter in a skillet over medium heat and cook onion until soft and translucent, 5 to 8 minutes. Remove from the skillet and divide into 3 equal portions. Place beef patties into the same skillet and cook until desired doneness, 3 to 5 minutes per side.
- Meanwhile, spread 1 teaspoons mayonnaise on one side of each slice of bread.
- Place bread mayonnaise side-down in the skillet. Top with 1 slice of cheese, 1 beef patty, 1/3 of the onions, a second slice of cheese, and another slice of bread, mayonnaise side up. Cook bread until golden brown and cheese has started to melt, 3 to 4 minutes. Flip each sandwich over and cook an additional 3 to 4 minutes.

JAMAICAN ME CRAZY BEEF PATTIES
This dough is a very unique recipe I created from a Turkish recipe of mine called poagca (po-a cha) Adjust the filling to your likeness, and put as much as you like inside. I included a beef filling recipe but it's also great with chicken & potatoe curry mix too. You can also omit the tumeric from the dough, and use this recipe and stuff with feta, scallions, and parsley YUM!

Steps:
- For the filling.
- In a large pan cook beef and onions till brown, add spices, breadcrumbs and water.
- Continue to cook for 3-5 minutes, the breadcrumbs will absorb the water( you may need to add more water) Adjust to your likeness.
- Let cool until dough is ready.
- For the starter-mix the yeast, flour and water (first 3 ingrediants)in a medium size bowl, cover with plastic wrap and let rest in a warm place for 1 hour.
- For the dough.
- sift the flour, tumeric and salt in a large bowl, with a pastry blender add the butter or crisco till it become like small pea size.
- now add the eggs to the starter and wisk them together.
- Add the yeast and egg mixture to the flour.
- Stir until it froms a ball and then knead for a few minutes.At this stage the dough doesnt look the nicest but it will turn out!
- Divide the dough in 20 peices.Roll into balls and place on a tray, let rest for 30 minutes ( or you can refridgerate till later use).
- Pre-heat oven to 350 degrees.
- Line a few baking trays with parchment paper.
- on a lightly floured surface roll out the balls of dough in a oval shape about 8-10 in long.
- Add filling to one half fold over and seal edges with a fork, continue until you have 8 patties on each cookie sheet.
- Bake at 350 degrees for 20-25 minutes or until edges are golden.

CRAZY BURGER
Steps:
- For the Southern slaw: Add the cabbage, jalapeno, mayonnaise, white vinegar and sugar to a large bowl and toss to combine. Season with salt and pepper. Set aside until ready to serve.
- For the burger: Place a large saute pan over medium heat. Once the pan is hot, add the olive oil followed by the onions and saute until just starting to brown, about 3 minutes. Add the agave and balsamic vinegar and toss to combine. Cook for about 10 minutes or until they reach your desired caramelized color. Set aside until ready to serve.
- Divide the beef into 8 even sections and form into patties. Sprinkle the patties on both sides with salt and pepper. Heat a large nonstick skillet over medium-high heat and add 2 ounces canola oil. Let get hot, then add the patties and cook 5 minutes per side or until they reach your desired doneness, frying in batches and adding oil as needed. Remove the patties from the skillet and top each with a slice of American cheese.
- Fry the eggs over-easy in the same skillet over medium-high heat, about 4 minutes.
- Place some mayonnaise on the bun bottoms and tops. Add 2 cheese-topped patties, a fried egg, onions and slaw to each, and finish with the bun tops. Serve.

- Boil 35-45 minutes or until tender. Strain and rinse cooked turnips.

These crab cakes are baked, not fried which make them healthier. Kids love to help make this recipe. Serve it on hamburger buns with a slice of American cheese, lettuce and some Crabby Patty (tartar) Sauce! I named these special for my grandson. Does not include four hours chill time.

- Spray baking sheet with cooking spray. In a medium bowl, mix first 8 ingredients. Gently fold in the crab meat (if using canned, you can use the lid by pressing into the can to squeeze out the liquid to get it well drained). Season with salt and pepper.
- Chill at least 4 hours in the fridge.
- Preheat the oven to 400°F.
- Make four patties and coat in bread crumbs. Place on baking sheet sprayed with non-stick cooking spray (or use parchment paper.
- Bake 10 minutes, turn, and bake an additional 10 minutes.
- ASSEMBLY: Heat the buns in the microwave for about 15 seconds. Place a slice of cheese on the bottom of each bun. Top with a small piece of lettuce, then a crabby patty. Squeeze a splash of fresh lemon juice over patties. Spread some tartar sauce on the tops of the buns and place over sandwiches.

CRAZY GOOD COD PATTIES
These cod patties are great served on a butter toasted bun. Yum, topped with a slice of melted cheese. Would be great with a slice of tomato too!

- 1. Start by poaching the cod fillets in a frying pan with about an inch of water. Bring the water to a little simmer, add the lemon slice, cracked pepper corns, and cod fillets. Cook until the cod has whitened all the way through. About 5 minutes, depending on the thickness of the fillets.
- 2. Carefully remove the fish from the water and set aside to cool. When cooled, flake the fish apart. Pour the water from the pan, and over medium heat melt the butter.
- 3. To the melted butter, add the celery, onions, and garlic. Cook until the vegetables have softened. Then place in a large bowl.
- 4. While the vegetables are cooking mix mayonnaise, mustard, eggs, salt, pepper, and Old Bay Seasoning together. Add this mixture to to the cooked vegetables, and add the cracker crumbs, mix to combine.
- 5. Carefully mix in the flaked cod, try to keep flakes as whole as possible. Divide into 4 balls, and shape into patties. Place on plate covered with wax paper, and cover the patties with a sheet of wax paper. These patties are very moist. Refrigerate for a least an hour.
- 6. When ready to cook, in a fry pan over medium / high heat, add the oil. When the oil is shimmering, carefully add the patties, and cook until golden brown on each side. About 5 minutes a side.
- 7. We enjoyed these served on buttered and toasted buns, and a slice of melted cheese added at the end of cooking time. Very flavorful and very delicious! Enjoy!
- 8. FYI Leftover patties reheat great! I put mine in the convection oven, set to 400* Placed them on a baking sheet lined with parchment paper, warmed them up for 8 minutes. The last minute, topped with cheese! They were still moist and delicious!
