This easy dessert is always a hit in my house. It is especially good for entertaining; your guests think you slaved away baking when all you did was throw a few simple ingredients into the slow cooker! My favorite fruit mixture is peach/berry but any fruit your family loves will work. Serve hot with a scoop of vanilla ice cream.

cooking spray
2 cups frozen peach slices
2 cups mixed frozen berries
2 tablespoons cornstarch
1 teaspoon vanilla extract
½ cup brown sugar
½ teaspoon ground cinnamon
½ teaspoon nutmeg
1 (18.25 ounce) package white cake mix
½ cup melted butter

Steps:

  • Lightly spray the slow cooker with cooking spray. Mix peaches and berries together in the slow cooker; sprinkle with cornstarch and toss to coat.
  • Stir vanilla into berry mixture; add brown sugar, cinnamon, and nutmeg. Pour cake mix over berry mixture and drizzle with melted butter.
  • Cook in the slow cooker set to High until bubbling, 3 to 3 1/2 hours.

I found this recipe in a Fix-It-And-Forget-It crock pot cookbook. It is extremely forgiving and versatile...not to mention delicious! You'll be amazed at the cobbler-like texture that you can get with boxed cake mix, butter and a crock-pot. I personally prefer yellow cake mix + cherry pie filling + walnuts (as recipe indicates).

1 (18 ounce) package yellow cake mix
1/2 cup butter (one stick)
1 (21 ounce) can cherry pie filling (I usually use two)
1/3 cup walnuts (more or less, as you like)

Steps:

  • Melt your butter in a microwave-safe container.
  • Stir in the cake mix until well combined and crumbly.
  • Dump your pie filling into the crock-pot.
  • Evenly spread your cake mixture over top.
  • Sprinkle with nuts (or you can mix your nuts in with the cake).
  • This can be altered to fit your family's taste (try pecans instead of walnuts, or peach pie filling instead of cherry). Multiple combinations and possibilities.
  • Cook on HIGH 2 hours or LOW 4 hours. Serve warm, with whipped cream or ice cream.

The cobbler takes its name from the biscuit dough crust on top - it is rough looking or 'cobbled'. The Dictionary of Americanisms traces the first instance of the word cobbler (as it applies to a pie dish) in print to 1859: "Cobbler...a sort of pie, baked in a pot lined with dough of great thickness, upon which fruit is placed." This is a C21st version of the cobbler, adapted from Betty Crocker's 'Slow Cooker Cookbook'. A delicious cobbler which you can make in minutes and have ready just when you need it without heating up the kitchen, or having to check it in the oven when you're preparing or enjoying your main course. Using your crock pot for desserts is a fabulous way to simplify meal preparation, particularly when you have guests. This recipe can easily be varied to make other cobblers: using berries, peaches or apples, or by combining perhaps raspberries and strawberries or apples and peaches.

1 cup flour
1/4 cup sugar, I use brown sugar but any sugar should be fine
1/4 cup unsalted butter, melted
1/2 cup milk, low-fat is fine
1 1/2 teaspoons baking powder
1/2 teaspoon almond extract
1/4 teaspoon salt
1 -2 teaspoon cherry flavored liqueur (optional)
1 cup slivered almonds, toasted (optional)

Steps:

  • Lightly grease the inside of a 31/2-quart(31/2 litre) crock pot, or spray it with cooking spray.
  • Place the pie filling into the crock pot.
  • Beat the remaining ingredients until the consistency of the batter is smooth.
  • If adding liqueur and/or slivered almonds, add these to the batter now. If the batter is a little too moist after adding the liqueur, adjust the consistency with an extra sprinkling of flour.
  • Spread the batter over the pie filling.
  • Cover and cook on high for 11/2 to 2 hours, or until a skewer pierced into the centre of the cobbler comes out clean.
  • Serve with cream, custard or ice cream.

Ok, this isn't exactly the toss it in and forget it crock pot recipe, but it does make sure you have hot cobbler for dessert. It really isn't difficult to make, it just take a little more preparation than your average crock pot dish. I think you'll be happy with the results though. The flavor is really special. Serve with vanilla ice cream or whipped cream.

1 1/2 cups flour
1 tablespoon sugar
2 teaspoons baking powder
1 tablespoon shortening
2 tablespoons orange marmalade
4 tablespoons water
4 ounces cream cheese, softened
1 cup pineapple tidbits, fresh (or very well drained canned)
1/3 cup coconut
2 cups gala apples, diced small
2 tablespoons sugar
2 cups apple cider
1/2 cup sugar
3 tablespoons flour

Steps:

  • Dough:.
  • Stir together the flour, sugar and baking powder in a medium bowl.
  • Cut in the shortening until the mixture is crumbly.
  • Stir in the marmalade. Add the water 1 tbsp at a time. More or less water may be needed depending on the texture of the marmalade.
  • Cover with a damp paper towel and set aside to rest while you make the filling and sauce.
  • Filling:.
  • Make sure the cream cheese is very soft, I microwaved mine for 15 seconds.
  • Stir all the filling ingredients together in another medium bowl.
  • Sauce:.
  • Pour the apple cider in a four cup measuring cup.
  • Sprinkle the flour into the crackpot. Pour 1/2 cup of the cider over the flour and stir to dissolve the flour.
  • Add the sugar to the measuring cup and stir to dissolve the sugar.
  • Assembly:.
  • Cut the dough into 4 equal pieces. Roll out to about 1/4 inch thick. Put 1/4 of the filling mixture into the center of the dough and fold over to make a half circle. Pinch the edges to seal.
  • Place in the crock pot leaving room for the rest of the pastries.
  • Repeat with the other 3 pieces of dough and the rest of the filling.
  • Pour the cider/sugar mixture over the pastries.
  • Put the lid on the crock pot and cook for 4 hours.
  • The dough will puff up a little and break open to make it look like a cobbler.

I wanted to create a tropical dessert using 5 of the 21 contest ingredients. This dessert is light and tasty, and the juices from the fruit add a tangy sweetness that does not require sugar. Toasted coconut and almonds add a bit of extra texture. This dessert has 3 main ingredient combos - a fruit mixture, a flour mixture and a topping mixture. Great ending to a picnic or bar-b-que with friends. Enjoy!

2 (8 ounce) cans pineapple tidbits, with juice
2 cups chopped apples, any variety, peeled, cored and coarsely chopped (about 2 medium)
1 (12 ounce) jar orange marmalade
1 tablespoon coconut extract
1/2 cup apple cider
1/3 cup almond flour or 1/3 cup meal
2/3 cup all-purpose flour or 2/3 cup whole wheat pastry flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon orange peel
1/2 cup butter, cold, cut into pats, set aside
1 cup steel cut oatmeal
3/4 cup toasted coconut
3/4 cup toasted sliced almonds
1/4 cup organic unbleached cane sugar (optional)

Steps:

  • Lightly spray a 6-quart crockpot with cooking spray; set aside.
  • In a large bowl, combine pineapple, apples, marmalade, coconut extract and apple cider. Stir to blend well. Pour mixture into prepared crockpot.
  • Combine flours, baking powder, cinnamon and orange peel in another bowl.
  • Whisk dry ingredients together to blend well. Spread flour mixture over top of the fruit mixture in the crockpot.
  • Spread cut butter pats over top of flour mixture, to evenly cover area.
  • Combine oatmeal, toasted coconut, almonds and sugar (if used) in a bowl. Mix ingredients together until blended. Sprinkle evenly over top of flour/butter layer.
  • Cover with lid and cook on LOW setting for 4-6 hours. DO NOT lift the lid for the first 3 hours of cooking.
  • Serve warm. Add ice cream, flavored frozen yogurt, or fruit flavored sorbet for an extra twist on this tropical delight.
