Spread this on a ham or turkey sandwich and you'll never use mayo again! Also good as a glaze on any kind of pork.

Ingredients

1 (8 ounce) package cranberries
2 cups apple cider (or enough to just cover the cranberries)
1/2 teaspoon nutmeg
1 teaspoon clove
1 dash mace
2 cinnamon sticks (remove after cooking)
1 tablespoon balsamic vinegar
1 teaspoon spicey prepared mustard
1 cup brown sugar (or to taste, it depends on how tart your cranberries are)
2 tablespoons cornstarch
1/2 cup water

Steps:

Just barely cover cranberries with apple cider. Add spices, balsamic vinegar, and mustard.
Cover and bring to a simmer.
Cook until cranberries pop out of their skins.Push all the mixture in the pan (except the cinnamon sticks) through a colander to remove the skins.
Place back in pan and add the sugar. Stir until the sugar dissolves.
Stir the cornstarch into the water to dissolve and then add it to the mixture in the pan. Cook until thick and clear. Cool. Can be used as a glaze or as a sandwich spread.

I found this on the inside label of a can of cranberry sauce. I just had it for lunch on a turkey sandwich. Wow - it was delicious. You can also use this to baste any type of poultry.

1/2 cup jellied cranberry sauce (the kind that comes out looking like the can)
1 1/2 tablespoons stone ground dijon mustard
1 tablespoon brown sugar

Steps:

Mix cranberry sauce, mustard and brown sugar in a small bowl.
Whisk together until smooth.

1 package (8 ounces) cream cheese, softened
2 tablespoons orange juice concentrate
1 tablespoon sugar
4 teaspoons grated orange zest
1/8 teaspoon ground cinnamon
1/4 cup finely chopped dried cranberries
1/4 cup finely chopped pecans
Assorted crackers

Steps:

In a small bowl, beat the cream cheese, orange juice concentrate, sugar, zest and cinnamon until blended. Fold in cranberries and pecans. Cover and refrigerate for at least 1 hour. Serve with crackers.

Ingredients

18 ounces solid white tuna packed in water, drained
1/3 cup dried sweetened cranberries
1 celery rib, finely chopped
1/2 cup mayonnaise
1 hard-cooked egg white, finely chopped
12 slices whole wheat bread

Steps:

Combine first 5 ingredients in a bowl and stir until tuna is broken up and ingredients are evenly distributed.
Lightly season with salt and pepper and stir again.
Add additional amounts of ingredients as desired.
Spread salad on bread.
