2 steel-cut oats
2/3 dried cranberries, chopped
1/2 maple syrup
1 cinnamon
1/2 salt
3 slivered almonds, toasted

Steps:

  • Combine all of the ingredients except for the almonds, in a 5- to 6-quart slow cooker. Cook on low for 4-6 hours, depending on desired creaminess. Stir well to combine and then sprinkle with almonds.

Nonstick cooking spray
1 cup steel-cut oats
1 cup wild rice
1/2 cup pearled barley or farro
1 teaspoon kosher salt
1/2 teaspoon freshly grated nutmeg
Two 4-inch strips orange peel
1 cinnamon stick
3/4 cup dried cranberries
3/4 cup pure maple syrup
3/4 cup pecans, toasted and roughly chopped
Low-fat eggnog, for serving, optional

Steps:

  • Coat the inside of a 6-quart slow cooker insert with nonstick cooking spray. Add 12 cups cold water, the oats, rice, barley, salt, nutmeg, orange peel and cinnamon stick, and stir to combine. Cover and cook on low heat until the grains are tender but still have a bite, about 8 hours.
  • Thin out the porridge with hot water if desired. Ladle 1 cup of the porridge into twelve warm bowls and sprinkle each with 1 tablespoon cranberries, 1 tablespoon maple syrup and 1 tablespoon pecans. Top with some eggnog if using and serve warm.

For variation, you can mix things up and try raisins or dried cherries in the place of the cranberries. Walnuts or pecans could be swapped for the almonds too. Be sure to use steel-cut oats for this recipe as regular oatmeal will not hold up to this length of cooking. If you like your oatmeal very creamy, you can cook it up to 8 hours. Leftovers hold up well in the refrigerator. When reheating, you may need to stir in a little water or milk to reach a desired consistency.

Another delicious breakfast from Quaker Oats. This one is my favorite yet! It's so much better than storebought oatmeal mixes, and if you use soy milk it's dairy-free! I've also tried using part soy milk and part water to make it a little lighter and using brown sugar in place of the maple syrup, and it still turned out great!

3 1/2 cups milk or 3 1/2 cups soymilk
1/4 teaspoon salt (optional)
2 cups oats (quick or old fashioned, uncooked)
1/2 cup dried cranberries (such as Craisins)
1/3 cup maple syrup
1/4 cup toasted wheat germ

Steps:

  • In medium saucepan, bring milk and salt to a gentle boil (Watch carefully).
  • Stir in oats, cranberries, and maple syrup.
  • Return to a boil; reduce heat to medium.
  • Cook 1 minute for quick oats, 5 minutes for old fashioned oats or until most of milk is absorbed, stirring occasionally.
  • Let stand until desired consistency.
  • Stir in wheat germ.
  • Spoon oatmeal into four cereal bowls.
  • Drizzle with additional syrup, if desired.
  • Serve with milk or yogurt, if desired.
  • MICROWAVE DIRECTIONS: In 3-quart microwaveable bowl, combine all ingredients except wheat germ.
  • Microwave on HIGH 6 to 7 minutes for quick oats and 9 to 10 minutes for old fashioned oats or until most of liquid is absorbed.
  • Let stand until desired consistency.
  • Stir in wheat germ.
