4 boneless pork loin chops (5 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup fresh or frozen cranberries, thawed
1/3 cup water
1/3 cup sweet chili sauce
1 green onion, finely chopped

Steps:

  • Sprinkle pork chops with salt and pepper. Heat a large skillet over medium heat. Add pork chops; cook 4-6 minutes on each side or until a thermometer reads 145°. Remove from pan; keep warm., In same skillet, add cranberries, water and chili sauce. Bring to a boil; cook, uncovered, 4-6 minutes or until berries pop, stirring occasionally. Serve with pork chops; sprinkle with onion.

6 boneless pork loin chops (5 ounces each)
1/4 teaspoon coarsely ground pepper
1/3 cup jellied cranberry sauce
4-1/2 teaspoons stone-ground mustard
3 tablespoons dried cranberries
2 tablespoons raspberry vinegar

Steps:

  • Sprinkle pork chops with pepper. Brown chops on both sides over medium-high heat in a large skillet coated with cooking spray. Combine cranberry sauce and mustard; spoon over chops. Reduce heat; cover and cook for 4-6 minutes or until a thermometer reads 145°. , Remove chops and let stand for 5 minutes. Add cranberries and vinegar to skillet, stirring to loosen browned bits from pan. Bring to a boil; cook until liquid is reduced to about 1/2 cup. Serve with chops.

6 pork chops
2 cups fresh or frozen cranberries
¾ cup white sugar
1 teaspoon salt
¼ teaspoon ground black pepper
water as needed

Steps:

  • In a skillet, brown chops slowly in oil; drain.
  • Add cranberries, sugar, salt and pepper to chops with 1/2 cup water to start. Bring to boil; reduce heat. Simmer, covered, for about 45 minutes or until tender but not dry. Add water if necessary to keep chops from drying out.

1 1/2 cups sugar
1 3/4 cups water, divided
1 (12 ounce) package fresh cranberries or 1 (12 ounce) package frozen cranberries
1/2 cup barbecue sauce
8 pork chops (1/2 to 3/4 inch thick)
salt and pepper, to taste
2 tablespoons vegetable oil
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • In a saucepan, combine sugar and 1 1/2 cups water.
  • Cook and stir over medium heat until the sugar is dissolved.
  • Bring to a boil; boil, uncovered, for 5 minutes.
  • Add cranberries; cook 5 minutes longer or until the berries pop.
  • Skim off foam if necessary.
  • Stir in barbecue sauce and remaining water.
  • Mix well; set aside.
  • Season pork chops with salt and pepper.
  • In a large skillet over medium heat, brown chops on both sides in oil; drain.
  • Pour the cranberry sauce over chops.
  • Cover and simmer for 35-40 minutes or until meat juices run clear.
  • Remove chops and keep warm.
  • Combine cornstarch and cold water until smooth; add to skillet.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Spoon over pork chops.
  • Variation:.
  • One 16-ounce can of whole-berry cranberry sauce may be substituted for the sugar, cranberries and 1 1/2 cups water. Combine cranberry sauce with the barbecue sauce and 1/4 cup water; use as directed in recipe.

4 pork loin chops with bone (1 1/4 lb)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
2 shallots or 1/2 onion, diced
2 garlic cloves, finely chopped
1/3 cup reduced-sodium chicken broth
1/3 cup dried cranberries
1/4 cup apple jelly
3 tablespoons cider vinegar
1 teaspoon fresh rosemary, chopped or 1/2 teaspoon dried rosemary

Steps:

  • Sprinkle pork chops with half salt and pepper. In a large skillet, heat half the oil at medium-high heat. Add pork chops and brown for about 4 minutes (flip them one time). Set aside in a plate.
  • Deglaze the skillet. Heat remaining oil at medium heat. Add shallots, garlic and remaining salt and pepper, stirring from time to time, for about 2 minutes or until shallots have softened. Add remaining ingredients and cook, while stirring, for about 4 minutes or until jelly has melted and cranberries are tender.
  • Put the pork chops back in the skillet with their juices and flip them to coat well. Reduce heat, cover and let simmer 8 to 10 minutes or until slightly pink inside. Set aside in a warm place. Simmer the sauce for about 1 minute or until thicken. Serve the pork chops with the sauce on it.
