A sentimental favorite. My mother and I made it when I was 7 and it's been a part of our holiday tradition ever since. A fun recipe to make with the kids. A slow cooker will keep it warm while serving.

3 ½ quarts water
1 (12 ounce) package cranberries
2 cups white sugar
2 oranges, juiced
2 lemons, juiced
12 whole cloves
2 cinnamon sticks

Steps:

  • In a large pot, combine water and cranberries. Bring to a boil, reduce heat, and simmer for 30 minutes. Add sugar, orange juice, lemon juice, cloves and cinnamon sticks. Cover, and steep for 1 hour.

1 (2-inch) piece fresh gingerroot
1/2 cup water
1/2 cup sugar
10 Tazo Passion teabags
5 cups water
4 orange wheels
3 ounces cranberry juice

Steps:

  • Peel gingerroot and cut into thin slices. Boil water, sugar and gingerroot until the sugar dissolves. Let cool. Brew the 10 teabags in 5 cups water and let it cool. For each serving, place 2 orange wheels, 1-ounce ginger syrup, 4 ounces brewed tea and 3 ounces cranberry juice in an ice-filled mixing glass. Shake and strain into ice-filled wine glass or tumbler. Garnish with additional orange wheels.

1/2 cup ginger, fresh,thinly sliced
1/2 cup cranberries, fresh,rinsed
1 pinch nutmeg
1/2 cup cranberry juice
2 mint sprigs

Steps:

  • In a medium sized bowl, pour boiling water over ginger and cranberries.
  • Cover and let stand 20 minutes.
  • Strain, add nutmeg and cranberry juice and stir.
  • Serve warm or chilled over ice cubes.
  • Garnish with mint.

6 slices gingerroot, thin
6 whole cloves
2 cinnamon sticks (3 inch)
4 cups water
1/4 cup honey
4 tea bags
4 cups apple juice

Steps:

  • In a large saucepan, combine the cranberries, ginger, cloves, cinnamon and water.
  • Bring to a boil, reduce heat.
  • Simmer 5 minutes or until cranberries pop.
  • Remove from heat and stir in the honey.
  • Add the tea bags and let stand 5 minutes, stirring once.
  • Strain through 2 layers of wet cheesecloth.
  • Return to saucepan and add the apple juice.
  • Reheat and serve hot.
  • (keep the extra tea in the fridge and microwave it by the cup if you wish).

1/4 cup canola oil, plus more for pan
1 cup rolled oats
1 cup all-purpose flour (spooned and leveled), plus more for pan
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cardamom
3/4 cup plain low-fat yogurt
2 large eggs
1 cup cranberries, fresh or frozen (not thawed)
1/4 cup crystallized ginger, coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Lightly oil and flour an 8 1/2-by-4 1/2-inch loaf pan. Spread oats on a rimmed baking sheet and toast until golden brown and fragrant, about 10 minutes. Transfer to a food processor and pulse until finely ground. Place in a large bowl; stir in flour, sugar, baking powder, baking soda, salt, and cardamom.
  • In a separate bowl, stir together yogurt, oil, and eggs; whisk until combined. Make a well in the center of the dry ingredients and pour in the liquid ingredients; stir until just combined. Fold in cranberries and ginger.
  • Spoon mixture into the prepared pan and smooth top with a rubber spatula. Bake until a toothpick inserted in center of the loaf comes out just clean, about 50 minutes. Check the loaf after 30 minutes and tent with aluminum foil if browning too quickly. Cool 10 minutes in the pan, and then run a metal spatula around edges and invert loaf onto a rack. Turn right side up to cool completely before slicing.

Darjeeling Cranberry, Ginger and Orange Tea Loaf (Fat-Free) image

A delectable and easy Tea Loaf with aromatic and fruity flavours! The beauty of these British and Irish style Tea Loaves or Brack, is that they are nearly always fat-free, making them a tasty snack to have with an afternoon cuppa, and without the guilt! I have added ginger for a subtle kick, and I have discovered that if you soak your fruit in Darjeeling tea, it lends a wonderful flavour to the fruit, you can use any tea of your choice however. Remember to start this Tea Loaf off the night before you wish to bake it, as the fruit steeps in the tea overnight, making them plump and moist. This Tea Loaf freezes well (in slices) and it will stay fresh for a week in an airtight tin. NB: A note on ingredient conversions to US cups; The conversion rate to US cups is very dependant on what type of sugar and flour you use - there is a different rate for white flour and wholemeal flour, as there is for caster (superfine) sugar and granulated sugar. We use weights for measurements, and US cups rely on volume!

8 ounces sultanas
2 ounces currants
2 ounces raisins
2 ounces semi dried cranberries
2 ounces stem ginger in syrup, drained and chopped finely or 2 ounces glace ginger, chopped finely
1 largeorange, zest or 1 tablespoon dried orange peel
3 ounces brown sugar
1/4 pint hot darjeeling tea or 1/4 pint hot brewed tea, of your choice
1 egg, size 3, medium
1 teaspoon ground ginger
8 ounces self raising flour

Steps:

  • NIGHT BEFORE BAKING:.
  • Place all of the dried fruit, including the orange zest and ginger, with the sugar into a large mixing bowl, and pour over the hot tea, give it a good stir - cover with a clean tea towel and leave to steep overnight.
  • BAKING THE TEA LOAF:.
  • Pre-heat oven to 160C/325F/Gas Mark 3 and grease and line a 2 lb (1 kg) loaf tin.
  • Add the beaten egg to the fruit mixture and mix well, then add the ground ginger.
  • Gradually add the flour and stir the mixture well, ensuring there are no lumps of flour remaining.
  • Pour the mixture into the prepared loaf tin and bake for 1 and 1/2 to 1 and 3/4 hours, or until the loaf is firm and a skewer comes out clean when testing.
  • If the loaf appears to be browning too quickly, place on the bottom shelf and cover with a sheet of baking paper.
  • Allow the loaf to cool slightly, and gently remove to a wire cooling rack.
  • Store in an airtight tin for up to 1 week, or freeze slices of the tea loaf with greaseproof paper in between each slice.
  • This is wonderful when buttered or toasted!
  • NB: You must use HOT tea!
