DUTCH BABY WITH CRANBERRY-ORANGE COMPOTE

Yield 4 pancakes plus 2 cups compote

1 pound fresh cranberries
1 cup honey
1/2 teaspoon vanilla extract
2 oranges, peeled and cut into segments
Pinch salt
4 large eggs, room temperature
3/4 cup whole milk, room temperature
1 cup all-purpose flour, sifted
2 tablespoons vegetable shortening, melted
1 tablespoon sugar
1/4 teaspoon salt
4 tablespoons unsalted butter
Powdered sugar, for dusting

Steps:

  • For the compote: In a heavy saucepot, add half of the cranberries and the honey. Cook over medium-low heat until the cranberries have broken down, 5 to 7 minutes. Stir in the vanilla and the remaining cranberries; cook for another 2 minutes. Off the heat, fold in the orange segments. Let cool. Serve at room temperature.
  • For the Dutch baby: Preheat the oven to 450 degrees F.
  • In a mixing bowl, combine the eggs, milk, flour, shortening, sugar and salt. Whisk until the ingredients are thoroughly combined and the batter is smooth and creamy.
  • Place an 8-inch cast-iron skillet in the oven for 8 minutes to get hot. Carefully remove the skillet from the oven and add 1 tablespoon of the butter, swirling to coat the pan evenly. Pour one-quarter of the batter into the hot pan and return to the oven. Bake until golden brown, 15 to 20 minutes. Serve with a 1/4 cup of the compote, and dust with powdered sugar. Repeat with the remaining butter and batter.

  • For the clementine orange syrup: Combine the sugar and 1/4 cup water in a small saucepan. Bring to a boil, stirring until the sugar has dissolved. Combine the clementine juice and cornstarch in a bowl. Pour into sugar syrup. Return to a boil, then lower heat and simmer gently until thick, about 6 to 8 minutes. Remove from heat and stir in butter until it melts. Transfer syrup to a bowl or pouring container and set aside. To make ahead, allow to cool to room temperature, then cover and refrigerate until needed. Will keep in the fridge for a week or so. To serve, allow to come to room temperature or re-warm slightly in the microwave.
  • For the caramelized cranberries: Heat your skillet over medium heat on the stove top. Melt the butter and then add the water, brown sugar, lemon juice and cranberries, stirring well to combine. Cook over medium heat, stirring regularly, until cranberries are softened and some have broken down, but not all of them. You want a bit of sauce, but still some whole cranberries. Remove cranberries to a bowl and set aside. If making ahead, allow to cool to room temperature, then cover and refrigerate until needed. Will keep several days in the fridge. To serve, allow to come to room temperature, or re-warm slightly in the microwave.
  • For the Dutch Baby batter: Melt 2 Tbsp. in the microwave and then pour into a blender or food processor. Add the eggs, milk, flour, sugar, vanilla extract, and salt. Blend batter until smooth.

  • To a blender add flour, milk, orange juice, eggs, maple syrup, vanilla, orange zest and salt. Blend for 10 seconds, scrape down the sides, and then blend for another 10 seconds. Until the batter is smooth and liquidity.
  • Let the batter rest for 5 minutes, or until the oven is done pre-heating. This gives the flour time to absorb the liquid.
  • Once oven to brought to temperature. Remove skillet from the oven and place on stove top. Add butter to the pan and swirl it around to coat the bottom and sides of the pan. Then add the cranberries. (some of them will pop, that’s fine)
