Number Of Ingredients 20

1-1/4 cups sugar, divided
1/2 cup water
2 cups cranberries
1 teaspoon grated orange zest
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup butter, softened
1/2 cup whole milk
2 large eggs
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
4-1/2 to 5 cups all-purpose flour
Melted butter
CREAM CHEESE FROSTING:
1 cup confectioners' sugar
3 tablespoons cream cheese, softened
1/4 cup butter, softened
1/2 teaspoon vanilla extract
1/2 teaspoon whole milk

Steps:

  • In a large saucepan, bring 3/4 cup sugar and water to a boil. Add cranberries; return to a boil. Cook, uncovered, until cranberries begin to pop, about 6 minutes. Reduce heat; simmer 15 minutes longer or until thickened, stirring occasionally. Stir in orange zest; cover and chill. , In a large bowl, dissolve yeast in warm water. Add the next six ingredients, the remaining sugar and 3 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. Turn the dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Roll into a 15x10-in. rectangle; brush with butter. Spread cranberry filling over dough to within 1 in. of edges. Roll up, jelly roll style, starting at a long side. , Cut into 15 slices; place, cut side down, in a greased 13x9-in. baking pan. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 25-30 minutes or until golden brown. Cool in pan 5 minutes; remove to a wire rack to cool. , In a small bowl, beat cream cheese frosting ingredients until smooth; spread the frosting over the warm rolls.

CANES:
1 c milk
4 c all-purpose flour
1/4 c sugar
1 tsp salt
1 tsp grated lemon zest
1 c butter
1 pkg dry yeast
1/4 c warm water
2 eggs, lightly beaten
FILLING:
1 1/2 c chopped cranberries (fresh or frozen)
1 c sugar
1/2 c raisins
1/3 c chopped nuts (i prefer pecans) finely chopped
1/3 c honey
1 1/2 tsp orange zest
GLAZE:
1 c powdered sugar
1 Tbsp butter, softened
1 Tbsp half and half
1/2 tsp almond flavoring

Steps:

  • 1. DOUGH: Warm the milk to lukewarm.Combine flour, sugar, salt & lemon peel. Cut in butter, blending until it resembles a coarse meal.
  • 2. In a small bowl, dissolve yeast in the warm water. Add to flour mixture, along with milk and eggs. Combine to form dough into a slightly sticky ball. Place dough in a large lightly-oiled bowl. Cover tightly with plastic wrap and refrigerate at least 2 hours or up to 3 days.
  • 3. FILLING: In medium saucepan, combine all ingredients. Bring to full boil on medium heat. Boil 5 minutes, stirring frequently. Mixture will be like a thick jam and will thicken more as it sits. Set aside to cool. This can also be made several days in advance and stored in the refrigerator or freezer.
  • 4. ASSEMBLING: Remove dough from fridge and divide in half. Roll one half into an 18"x15" rectangle. Spread with half of the filling (be sure to use the full halved amount-it will be a thin layer, but should cover the whole rectangle)
  • 5. Beginning on the 18" side, fold one third over the filling,then fold the other third over that layer: like a business letter. Dough will be 6" wide x 15" long.
  • 6. Cut into 1" wide strips with a large, sharp knife - using a rocking motion, not slicing back and forth.(You could also use a large pizza cutter, but you'll want to cut straight)
  • 7. Grab a strip at each end and twist several times while immediately placing on a large parchment-lined baking sheet @ 2" apart. Add a crook to the top as you place it on the sheet, to form a cane. Repeat this process with the remaining dough to make 30 canes total, 15 to a sheet.
  • 8. I like to cover the canes at this point with a clean towel and allow to rise about 1/2 hour before baking, if your dough is still cold.
  • 9. Bake at 400 degrees, about 13-15 minutes. They should be a little golden-colored in places, but not doughy in the centers. Allow to cool on rack about 15 mins. Dip a fork in the glaze and drizzle it over the rolls.
  • 10. GLAZE: Mix powdered sugar with softenend butter. Add flavoring (if desired) and enough half&half to make a drizzling consistency.

1 teaspoon white sugar
2 ½ teaspoons rapid-rise yeast
2 eggs, room temperature
⅓ cup unsalted butter, melted and cooled
2 ½ cups all-purpose flour
1 ½ cups whole wheat flour
½ cup white sugar
1 teaspoon salt
2 ½ cups finely chopped cranberries
¾ cup firmly packed brown sugar
3 tablespoons orange juice
1 tablespoon orange zest
1 tablespoon cornstarch
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg
¼ teaspoon salt
1 cup confectioners' sugar
3 tablespoons heavy cream, or more as needed
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Mix warm milk, sugar, and yeast together in a small bowl until dissolved. Set aside and allow yeast to proof until foamy.
  • Whisk eggs and cooled melted butter together in a bowl and set aside.
  • Whisk 2 cups all-purpose flour, whole wheat flour, sugar, and salt together in a large bowl. Pour yeast mixture into flour mixture and stir gently to combine. Mix in egg mixture and continue to stir until a sticky dough forms.
  • Turn out onto a lightly floured surface and knead in remaining 1/2 cup all-purpose flour a little at a time until dough is no longer sticky. Continue kneading until dough is smooth and elastic, 8 to 10 minutes, using additional flour if necessary. Place dough into a greased bowl and turn to coat. Cover and place in a warm, draft-free area. Allow dough to rise until doubled in size, 1 to 2 hours.
  • Meanwhile, combine cranberries, brown sugar, orange juice, orange zest, cornstarch, vanilla extract, cinnamon, cloves, nutmeg, and salt in a saucepan. Cook over medium heat, stirring constantly, until mixture begins to bubble and thicken slightly, about 5 minutes. Remove from heat and allow filling to cool to room temperature.
  • Line a 9x13-inch baking pan and a 6-inch cake pan with parchment paper and lightly grease both pans.
  • Turn risen dough out onto a lightly floured surface. Roll out into a rectangle approximately 21x14 inches. Place cranberry filling on the dough leaving a 1/2-inch border on all sides. Roll dough up starting at a long side. Pinch ends to seal dough and lay seam-side down on a cutting board. Use a very sharp or serrated knife to cut into 15 rolls, each about 1 1/4-inch thick. Place rolls cut-side up in the prepared pans, 12 in the baking pan and 3 in the cake pan.
  • Loosely cover pans and allow rolls to rise until doubled in size, 30 to 45 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until buns are golden brown on top, 22 to 27 minutes. Allow to cool in the pans for several minutes before transferring to a serving plate.
  • Whisk confectioners' sugar, heavy cream, vanilla extract, and salt together in a bowl until smooth. Add more cream to thin or more sugar to thicken, if needed. Pour glaze over slightly warm rolls before serving.

1 cup milk, warmed
1 tablespoon instant yeast
1 tablespoon white sugar
½ cup freshly squeezed orange juice
1 egg
3 tablespoons unsalted butter, softened to room temperature
1 teaspoon freshly grated orange zest
3 ¼ cups all-purpose flour
1 teaspoon salt
⅓ cup dried cranberries
1 cup white sugar
2 tablespoons grated orange zest, or more to taste
1 teaspoon ground cardamom
¼ cup unsalted butter, softened to room temperature
½ (8 ounce) package cream cheese, softened to room temperature
½ cup unsalted butter, softened to room temperature
1 cup powdered sugar
2 tablespoons orange juice
1 teaspoon freshly grated orange zest

Steps:

  • Place warm milk in the bowl of stand mixer fitted with the dough hook. Add yeast and 1 tablespoon sugar. Let sit until foamy, about 5 minutes. Add orange juice, egg, butter, and orange zest to the bowl. Mix for 1 minute on low speed.
  • Add 3 cups flour and salt. Start mixing on low speed for 1 minute, then increase speed to medium for 2 minutes. Add dried cranberries. Mix in remaining 1/4 cup flour if needed; dough will be sticky.
  • Transfer dough to a greased bowl, cover, and allow to rise for 1 1/2 hours.
  • While dough is rising, prepare the filling. Pour sugar into a medium bowl. Add orange zest and cardamom; work into the sugar with your fingers. Add softened butter and mix thoroughly. Set aside.

  • Bake in the preheated oven until golden, about 25 minutes.
  • Meanwhile, make the orange icing. Whip cream cheese and butter in a medium bowl with an electric mixer. Add powdered sugar and mix for 1 minute. Add orange juice and zest. Continue mixing until icing is smooth and spreadable. Place in the refrigerator until rolls are ready.
  • Remove rolls from the oven and cover immediately with icing.

4 eggs
½ cup water
4 cups fresh or thawed frozen cranberries

Steps:

  • Preheat oven to 350 degrees F. Spray 2 (15x10x1-inch) baking pans with baking spray. Line with parchment paper; spray with additional baking spray. Set aside. Sprinkle 2 clean kitchen towels with 1/4 cup each confectioners' sugar; set aside.
  • Beat cake mix, eggs and water in large bowl with electric mixer on low speed 30 seconds or until well blended. Beat on medium speed 2 minutes. Pour evenly into prepared pans.
  • Bake 12 to 15 minutes or until wooden pick inserted in centers comes out clean. Run knife or small spatula around rims of pans to loosen cakes. 3/4 teaspoon cream of tartar
1/4 teaspoon salt

FILLING:
2-1/3 cups fresh or frozen cranberries
1 cup sugar
6 tablespoons water, divided
1/3 cup chopped candied orange peel, optional

2 tablespoons cornstarch

Steps:

  • Preheat oven to 350°. Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Meanwhile, line a greased 15x10x1-in. baking pan with waxed paper; grease the paper and set aside., Add vanilla, cream of tartar and salt to egg whites; beat on medium speed until soft peaks form. Gradually beat in sugar, 2 tablespoons at a time, on high until stiff glossy peaks form and sugar is dissolved. Fold in flour, about 1/4 cup at a time., Carefully spread into prepared pan. 2 (1/4-oz) packages active dry yeast (5 teaspoons)
1/2 cup granulated sugar
5 cups all-purpose flour plus additional for dusting
1 1/2 teaspoons salt
1 cup warm milk
2 large eggs at room temperature
1 stick (1/2 cup) unsalted butter, softened
For filling
1/4 cup water
1 1/3 cups granulated sugar
2 cups fresh or thawed frozen cranberries (9 oz)
1 stick (1/2 cup) unsalted butter, very soft
1/4 cup packed light brown sugar
1 teaspoon cinnamon
1 cup walnuts (optional), chopped
For glaze
1 1/4 cups confectioners sugar
2 tablespoons milk

a standing electric mixer fitted with dough hook; 2 (9- by 2-inch) round cake pans

Steps:

  • Make dough:
  • Stir together warm water, yeast, and a pinch of the sugar in a small bowl and let stand until foamy, 5 to 10 minutes. (If mixture doesn't foam, discard and start over.)
  • Put 5 cups flour, salt, and remaining sugar in bowl of electric mixer and mix with dough hook at low speed until combined. Whisk together milk and eggs in a small bowl, then add to dry ingredients along with yeast, beating at low speed until flour is incorporated. Beat at medium speed until a very soft dough forms, about 2 minutes. Add butter and continue beating at medium speed until dough is smooth, soft, and elastic, about 4 minutes (it will be quite sticky).
  • Rinse a large bowl with hot water. Add dough to wet bowl and cover bowl tightly with plastic wrap. Let dough rise in a warm place until doubled in bulk, 45 minutes to 1 hour.
  • Prepare filling:
  • Bring water and 1 cup granulated sugar to a boil, stirring until sugar is dissolved. Add cranberries and simmer just until they begin to burst, about 2 minutes. Pour through a large sieve into a bowl and cool berries, reserving syrup for another use (such as a flavoring for seltzer).
  • Form and bake buns:
  • Turn out dough onto a well-floured surface and dust with flour, then roll out into a 16-inch square.
  • Brush off excess flour, then spread evenly with butter with a small metal offset spatula.
  • Stir together brown sugar, cinnamon, and remaining 1/3 cup granulated sugar and sprinkle evenly over dough. Dot dough evenly with drained cranberries, then sprinkle with nuts if using.
  • Beginning with side nearest you, roll up dough, firmly but not tightly, into a log, then pinch seam to seal. Trim 1 inch off each end with a large knife and discard, then cut log crosswise into 12 slices.
  • Arrange slices, cut sides up, in buttered cake pans (place 1 slice in center of each pan, then evenly space 5 more around it). Cover with plastic wrap and let rise in a warm place until doubled in bulk, about 1 hour.
  • Preheat oven to 350°F while buns are rising.
  • Bake buns in lower third of oven until puffed and golden, 30 to 35 minutes, then cool in pan on a rack 10 minutes.
  • Make glaze:
  • Stir together confectioners sugar and milk with a fork until smooth. Drizzle over buns while still hot.
  • Serve buns warm or at room temperature.

¾ cup cake flour (not self-rising)
1 cup superfine sugar, divided
¼ teaspoon salt
9 large egg whites
1 ½ teaspoons vanilla extract
¾ teaspoon cream of tartar
2 tablespoons superfine sugar
¼ cup confectioners' sugar, or as needed
1 cup white sugar
2 ⅓ cups fresh cranberries
6 tablespoons water
2 tablespoons cornstarch

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Lightly coat a 10x15-inch baking pan with nonstick spray. Line the bottom of the pan with waxed paper, then spray the paper.
  • Sift cake flour, 1/2 cup superfine sugar, and salt into a bowl. Sift the mixture two more times.
  • Beat egg whites in a glass, metal, or ceramic bowl until foamy. Gradually add vanilla and cream of tartar, continuing to beat until soft peaks form. Gradually beat in remaining 1/2 cup plus 2 tablespoons superfine sugar. Gradually sift flour mixture over egg white mixture, folding it in until just combined. Spread batter evenly in the prepared pan.
  • Bake in the preheated oven until top of cake is lightly browned and springs back when lightly pressed, about 20 minutes.
  • Remove cake and set on a wire rack. Loosen sides with a spatula, then generously sift confectioners' sugar over top. Cover cake with a clean kitchen towel and invert onto a second wire rack. Remove the pan and peel off the waxed paper. Starting at the short end, roll up the cake and towel together. Place, seam-side down, on a rack and let cool completely, about 1 hour.
  • Simmer cranberries, sugar, and water in a pan over medium-low heat for 5 minutes. Strain well and return to the pan.
  • Whisk in cornstarch; simmer until thick, about 2 minutes. Cover and chill until cake has fully cooled.
