CRANBERRY-ORANGE BISCOTTI
Dried cranberries and orange peel partner in a classic twice-baked cookie made for dunking.

Steps:
- Heat oven to 350°F. In large bowl, stir together sugar, oil, orange peel, vanilla and eggs. Stir in remaining ingredients.
- Place dough on lightly floured surface. Knead until smooth. On ungreased cookie sheet, shape half of dough at a time into 10x3-inch rectangle.
- Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool on cookie sheet 15 minutes. Cut rectangle crosswise into 1/2-inch slices. Turn slices cut sides down on cookie sheet.
- Bake about 15 minutes longer, turning once, until crisp and light brown. Immediately remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.

With water, sugar and fresh or frozen cranberries, you can prepare this dish in 30 short minutes. Even better, make it ahead so you can serve it cold, adding yet another welcome contrast to a feast that's largely made up of hot-from-the-oven turkey and casseroles. Master it now and you'll never look at another can of cranberry sauce!

- Place cranberries in a strainer; rinse with cool water. Remove any stems or blemished berries.
- In 3-quart saucepan, heat sugar and water to boiling over medium heat, stirring occasionally. Boil 5 minutes.
- Stir in cranberries. Heat to boiling over medium heat, stirring occasionally. Boil about 5 minutes, stirring occasionally, until cranberries begin to pop. Cover and refrigerate about 3 hours or until chilled.

CRANBERRY BETTY (1958)
A betty is a fruit dessert made with breadcrumbs. This one uses bananas and canned cranberry sauce. Adapted from COOKINDEX recipe card D116.

Steps:
- Preheat oven to 375°F.
- Peel and slice the bananas and sprinkle the lemon juice over them. Set aside.
- Combine sugar, crumbs, cinnamon and nutmeg and mix well. Remove 1/2 cup of mixture and set aside.
- Place alternate layers of crumb mixture and bananas in a 1 1/2 quart casserole or baking dish.
- Top with cranberry sauce, reserved crumb mixture, and lemon zest.
- Dot with butter.
- Bake 25 minutes.

- Preheat your oven to 350°. Spread the cubed bread on a baking sheet and toast in the oven until dry, about 8 minutes. Let the bread cool, then pulse the into coarse crumbs in a food processor or blender.
- Butter a 10" or 12" cast iron skillet. You could also use a baking dish or pie plate. Spread 1/3 of the bread crumbs in the bottom of your skillet or dish in an even layer.
- In a small bowl, combine the sugar with cinnamon, nutmeg, orange zest, fresh sage, and salt. Spread half of the apple slices over the bread crumbs in the baking dish and top with half of the sugar mixture. Drizzle half of the juice over the apples. Cover with another 1/3 of the bread crumbs and the remaining apples, sugar mixture, and juice. Cover with the remaining bread crumbs. Dot the top of the Bettie with thin slices of butter all over.
- Bake at 350F on the center oven wrack for about 1 hour, until the apples are tender and the juices are bubbling. Cover the baking dish with foil during the last 15 minutes to prevent the crumbs from getting too dark. Let cool for 30 minutes before serving. I like to serve with cinnamon whipped cream.
